    Love the tip to leave the stem on for a handle while grating the zucchini. Why didn't I ever think of that?!!

    Can't wait to try this! Dumb question, but wouldn't adding salt to the shredded zucchini help with getting the water out as opposed to salting it later?

    Add salt to your grated zucchini. Let sit for 20 minutes. Then squeeze moisture out. I think it will be easier and you will get more liquid.

      I was wondering why he didn't add a little salt. It draws out way more water, and most of the salt is removed with the water. You do need to adjust the salt in the recipe to account for what remains, but so long as you don't add too much at the start, it works great.

    I just made these with my grandchildren. The 4 year old picky eater ate 4 and wanted more! Quick and easy recipe. I made it paleo by using cassava flour.

      Really???? I have never tried Cassava flour. I’m gonna get some today! And yes, this guy doesn’t season. I would also NEVER make this recipe without ONION! Garlic and onion is the base for all my cooking. I’d also use a mild to moderate seasoning blend in this too. The addition of carrot is great nutrition, and the slight sweetness of the carrot would really balance out the taste. So, I’ll try this version of the recipe first, with the cassava flour.

    Whisking is personal preference, how I whisk depends on what I am whisking. But in the grand scheme, it isn't an issue. I love your idea of leaving stem end on while shredding. Chef's kiss to you!

    Try and omit the flour and add 12-15 crushed ritz crackers. It makes a huge difference. YUM!

    These zucchini fritters are the best I make them all the time. The only thing I do different is put some baking powder in and make them rise higher

    Here's my comments on your whisking... 2:33 See how you are holding the whisk perpendicular to the bowl? Try holding the whisk at an angle like you're holding your spoon 4:00. Yes, you might have to tip the bowl, but remember, you want to lift that whisk up and out of the egg so it captures air as it falls back into the bowl. You might want to try a balloon whisk... it has a much bigger circumference that will better match your bowl. Sending lots of love 💖 from sunny 🌞 Arizona 🌵😷

      I keep a big container in my freezer to collect left overs for soup instead of putting that spoonful of corn or peas, ect. in the bin. This zucchini water would be a great addition! If I was using a plastic collection bag, I might freeze the water first in an ice cube tray and put the zucchini cubes in the bag to prevent leakage and easier defrosting. 💖🌞🌵😷

    I notice that everbody in the cook videos uses a bowl and a whisk, I find the easiest way is to put the eggs in a tea/coffee cup and use a fork to mix the eggs

    I made this tonight and my meat eating hubby loved them.
    He's been eating healthier and these were perfect!!!
    I added some dill and lite cream cheese to the sour cream to pull it all together and both he and I say this is a keeper recipe.
    Highly recommend!!!

    A few additions are always helpful (or not 🤪) I see what she means about your whisking technique. I hold the whisk differently and I hold the bowl to accompany the whisk (watch French Chef Jacques Pepin, and other seasoned chefs how they do it) you might find it more user friendly. I would have added a teaspoon or so of baking powder to your mix - gives it that 'puff factor'. If you're going to use grated parm, I'd go easier on the salt. When squeezing out the water from your zucchini, in addition to hand pressure at the bottom, I twist and keep twisting and squeezing the towel at the top and massage and squeeze the 'zucchini ball' until there's a smaller and smaller zucchini ball. I like your tip for keeping the stem end for a handle whilst grating. They looked really crunchy and tender in the middle. The sour cream is almost a must. Thank you

    Ur whisking is nothing wrong its fine.With me now i have a mixer that can do the grating and the whisking coz i have arthrites in my fingers so i make things easier for myself.Ur zuccines look delicious😊

    Sprinkle the salt used in receipe over zucchini let set 10 min using strainer. Juice will come out of zucchini 🙂👍 add pepper, (no more salt) add flour, some garlic powder & finish receipe.😋.

    I have noted down your quantities, since that is so important. I make these with a grated potatoe (raw), kind of what we call "Kartoffelpuffer". I have a question: why don't you add the salt to the grated zucchine since that removes the liquid easier and better than just squeezing? I assume there is a reason behind your method, though.

    Since you are adding flour…you needn’t squeeze out the water…just add a little more flour…and hang onto the zucchini water which holds a lot of the vegetable’s vitamins.

    Looks yummy. What is this frying pan you are using? It has a honeycomb pattern. Is there a reason for that? I would like to know more as I am looking for a good non stick frying pan.

      Hi- I pretty much ONLY use Hexclad pans now. They are fantastic. They take a little getting used to in the beginning because they heat up faster than the usual non-stick pans, but once you get used to them you will never go back to traditional non-stick again :)

      Hi Liz,
      Don't know if you're still looking for a mayo recipe but here is how we make it in France:
      1 egg yolk + 1 tsp of French Dijon mustard + salt & pepper (a pinch each). Whisk to mix it all and then add some neutral oil (sunflower, grapeseed...Some people use olive oil especially in the south of France but for me it gives too much of a strong taste) Add the oil little at a time while whisking vigorously. As soon as the oil is well incorporated, add a bit more oil and whisk some more. Repeat the operation until your mayo thickens to your liking. You can also use an electric whisker (it's much quicker & the mayo is a little thicker).
      It's better if your egg is at room temperature and if you only add roughly 1tbsp of oil at a time. If you've put too much by mistake & your mayo turns all liquid, don't panic keep whisking until it thickens again.
      You can also jazz up your mayo with some lemon juice & fresh herbs

    Nice recipe, however, I eat low carb foods and wondered if I sub almond or coconut (or other) flour for the all purpose flour you use would that still or would it somehow mess up the fritters? Sour cream makes a great dipping sauce.
