Keep the early motor for the block (possibly resleeve later on?) and for the better crank
Put the early crank in the 07 - fully counterweighted.
When you hear that first pop when trying to loosen the head bolts, stop. Hit the head of the bolt with a hammer a couple of times hard. Now the bolt should back out with out breaking.
Breaking head bolts brings back memories, but it was funnier when you fell over each time. Cheers to your life choice! Hey, if you're making a cam, don't you start with a blank and grind down as little as you can to get the lift needed? So max lift is the blank's original surface and the base circle is smaller and smaller as you grind for more lift if i'm right. A "smaller" cam would have more material left on the base circle. Are you sure the early cam is the one you can't grind "bigger"? Have no experience, just thinking out loud.
Cutting the cams by reducing the base circle increases the lift because "zero" is now lower. At least that's how I understood it when we cut the cams on my r1. More lift on stock cam usually helps pick up some extra flow on OHC engines where camshaft(s) swap is not budget friendly.
