Harry McElhone was a Scotsman that learned to bartend in Paris, London and New York. He is credited with creating numerous classic cocktails but one lesser known creation of his is the Cameron's Kick. Not much is known about the naming and history of the drink. It was first published in his cocktail recipe book, ABC of Mixing Drinks, in 1922 and later in Harry Craddock's The Savoy Cocktail Book. McElhone opened Harry's Bar in Paris a year after publishing his cocktail book.
The most interesting part of this cocktail is the split spirit base of Scotch whisky and Irish whiskey. Whilst splitting the base spirit to add complexity is a common technique in a modern bartender's repertoire, it was rare in the drink's era.
Many people will use the standard sour template (2 oz spirit, 3/4 oz citrus, 3/4 oz sweetener) for this drink but I've stuck with the original specs from Harry McElhone's book. The smaller measures of lemon juice and orgeat let the whiskey's character shine through more.
    INGREDIENTS
    - 30 ml Scotch whisky
    - 30 ml Irish whiskey
    - 15 ml lemon juice
    - 15 ml orgeat
    SCOTCH WHISKY VS IRISH WHISKEY
    Scotch Whisky
    - made in Scotland
    - originally made from malted barley
    - distilleries started introducing other grains in the late 18th century
    - aged for 3 or more years
    - bottled at 40% abv or higher
    - malt whisky must be made from 100% malted barley and be pot distilled
    - grain whiskey must be made with malted barley but often includes other cereal grains
    - grain whiskey is often distilled in a continuous column still
    Irish Whiskey
    - made in Ireland
    - aged for 3 or more years
    - often triple-distilled from unmalted barley that is blended with grain whiskey

Absolutely love that you spent time talking about the spirits themselves and how they impact the cocktail. Scotch and Irish whiskey can be so temperamental to mix with, so breaking that down for folks can make experimenting more fun and more informative. Great vid Steve!

Steve I cannot wait to try this gorgeous cocktail with a split base of a single malt Scotch and an Irish whiskey. I like a bold cocktail so I like this version with the whisky at the forefront! I also want to try this beauty with Lagavulin 16 to see what this is like with a peated scotch - love it so much! Bruichladdich is wonderful - Classic Laddie - and Jamison's is fine! I agree that Red Breast would also be so delicious! I am excited to make and try this riff!! What a treat! I hope you are feeling better and better! Much care, Christine! 🙂

Great drink; I just made it but used Johnnie Walker Double Black blended for the Scotch, Kilbeggan for the Irish whisky and my homemade orgeat syrup. The smokiness of the Scotch is mellowed by the orgeat; not picking up the Irish whiskey very much; and the juice gives it a nice sour bite. Thanks Steve, and cheers!

We have an issue in Norway where we can't serve more than 40ml in a drink (with some exceptions, but no more than 40ml of any single alcohol). This means either our glasses aren't filled or the mixer components are increased to compensate. I think the rest of the bartending world would be surprised to find so many drinks here feel so weak but it brings a new challenge to mixing.

    Hi Steve,
I'd like to ask what citrus (lemon or lime juice) does for the taste of your cocktail, like the addition of an acid to a spirit..? Does it make the spirit less harsh or it just adds a citrus flavor to it..? Or to anyone else who might know, I'd appreciate the feedback..

    • @StevetheBartender_
      @StevetheBartender_  Před měsícem

It changes the drink in a big way.. it does both. It adds citrus flavour, softens the spirit by lowering the abv (dilution with the juice itself and water from shaking it) and shaking adds aeration too (for texture).
The citrus component needs to be balanced by sugar too otherwise it would be too acidic to drink.
