*Almost* Shepherd's Pie | Meal in a Jar | Cottage Stew

    Gordon's Shepherd's Pie recipe: • Classic Shepherd's Pie...
    Cottage Stew (Canning Recipe)
    Makes 7-8 pints
    3lbs Ground Beef (use Ground Lamb for Shepherd's Stew)
    1 1/2 cups very finely diced carrots
    1/2 cup diced carrots (no more than 1/4" in diameter)
    1/2 cup very finely diced celery
    3 cups peeled diced low-starch potatoes
    2 cups finely diced onions
    3-4 cloves minced garlic
    1T Salt
    2 tsp Pepper
    1.5T finely diced fresh Rosemary (or 1T dried Rosemary)
    2 tsp fresh or dried Thyme
    4-5 heaping Tablespoons tomato paste (about 3/4 of a 6 oz can)
    4T Worcestershire Sauce
    1 cup dry red wine (or 1 additional cup of broth)
    2 cups unsalted beef broth (if using salted, adjust seasoning to taste)
    Peel, dice and soak potatoes in ice water. Drain, and replace with fresh water as necessary to remove starch.
    Brown ground beef, chopping as you go. If using unsalted beef broth, go ahead and add 2 tsp of salt and 1 tsp pepper to season the beef. (If using salted broth, wait until the end to taste for seasoning.) Remove ground beef and set aside. Remove all but a couple tablespoons of beef fat from the pot.
    Sauté onions, garlic, celery, carrots on medium low heat until translucent. Add remaining salt and pepper. Increase heat to medium high to start caramelizing veggies. Add tomato paste and let cook for about 30 seconds. Add drained potatoes. Add drained beef back into the pot. Mix into veggies.
    Add red wine. Bring to a light boil while deglazing the bottom and sides of the pan. As the wine has reduced by half, add Worcestershire Sauce and Beef Broth. Return to low boil and let simmer about 15 minutes, until sauce starts to thicken just a bit.
    While stew simmers, prepare canner and jars. Both should be hot prior to filling.
    Once everything is ready, fill jars to a generous 1" headspace. Process in a pressure canner for 75 minutes at the appropriate pressure for your altitude. (See linked chart below)
    Once processing is done, canner has completely cooled and all pressure has released, remove the jars to a protected surface and allow to sit undisturbed for 12-24 hours.

    Thank you Carter! You took this “non-cook” 54 yr old working mom who was petrified of pressure canners to being a brave new cook & meal-in-a-jar canner! I used the presto digital canner for a week and then decided to go ahead and get an all American in case power goes out…

      @@LoveMyCoffee10 my first instant pot scared me too. The pressure thing is not something I grew up using. But after a few years I learned to trust the safety measures and now it’s another tool in my kitchen. It was a stepping stone to deciding to try pressure canning with an actual canner. Nobody in my real life pressure cans so I’m very grateful to the CZcams community for the information, step by step details along with safety precautions, and of course Carter’s delicious recipes! Definitely trying this one when I get a break from work!

      @@LoveMyCoffee10 Watch a lot of you tube videos and start out doing simple things to build up your confidence. Even old canners, won't explode and kill you or blow off the kitchen roof. They had safety measures built in - relief valves. Yes the old stove top canners, you had to devote 75 ot 90 minutes of time to and watch the pressure gauge to make sure it stayed at a steady pounds per square inch. But that is very manageable. The more you use your caner the more confident you will feel.

    Sorry haven't been around. Let me explain some English food to you. Shepherd's pie is lamb because Shepherd's look after sheep. Cottage pie is beef. This is how we remember it. What you made in the jar is actually something we call Savoury Mince not a stew. It is a meal in itself but we will often have extra vegetables on the side, normally something green.
    Restaurants will tend to use red wine in this recipe, where pub restaurants will use a stout or beer.
    I will also say that something we also do with this if we are cooking it at home is if we make a bigger batch, is on one day have it like you made it. Then the next day add a can of chopped tomatoes and alittle extra stock to make it into a soup. The tomatoes bring out more flavour, make the meal go further. We dip crusty bread into it.

    I have made this twice now and it is delicious! I’m a flight attendant and pack a lunch cooler for 3 day trips. I cannot tell you how much good food has gone bad while flying. Hotels with no room refrigerator or ones that do not get cold enough or worse, freeze everything. Taking canned meals in a jar is a game changer. I heat dinner up in a portable soft oven while I get my shower and it’s ready, healthy & delicious when I get out. Keep the good content coming. 🤣😘

    Well! I have been canning cottage pie and shepherds pie for decades, but never have added wine to it. Generally, I layer it, just as if making it in oven dish.     We have never added peas to our cottage pie, but we did add corn. I have never had it with carrots or celery either. You have made me want to make it this way though. In fact I think I will make it this way this winter just to try it out. It looks delicious. Thank you for sharing this with us

    Hi Carter, i often make cottage pie. It's a wonderful comfort dish. A big bowl for supper is just what the doctor ordered. Never thought of canning it, and yes, you cannot incorporate mash 😅 But this looks fabulous!

    Love this, and I love Gordan Ramsey. This is a great idea, Carter. We are raising Lamb and soon will have some meat in the freezer. I will try and make this with Lamb. Super excited.
    I also wanted to update you on my cumin seeds; you wanted to know how it is ground up. I have ground it up several times, and it is excellent. I love it! So, if you are ever in a pinch and need ground Cumin but don't have but Cumin Seeds, grinding it up works wonderfully. 😀 Have a terrific Day!

    So excited to see that you’re doing a shepherds pie recipe as I adore shepherds pie. Being from England I grew up eating this often and I must say I cook it with wine also. I really would be most interested to hear how you adapt certain recipes such as this one for canning to ensure safety and any precautions you consider. I know It is ill-advised to can leftovers because of the multiple factors that have to fall within specified parameters, which is why we are told to strictly follow canning recipes and not change the ratios of the vegetables etc. adding wine for example changes the ph. Being new to this I have lots of questions. 🧐🤔😁 Love your videos.

    You are correct, the flavor of the celery and carrots cooked in the pan with that little bit of fat brings on a certain smell and flavor that's fabulous. I use that method when making Pasta E Fagioli and then add the tomato paste and let it cook for a couple of minutes it brings on a beefy goodness.

    I am restocking my canned goods right now and going to try this one for sure. I would put this in an oval dish with some puff pastry as a lid. Egg wash so it looks real pretty. Golden smells to die for comfort food ! Doesn't get any better than that. Thank you Carter

    Evening Carter. You are such an inspiration. I did the dry canning potatoes; what a saving grace for the potato! Can sweet potatoes be done as well. We had a nice sweet potato crop this year. 15 lbs of stew meat are waiting to be transformed into your ready meal base. Such a great idea. Where did you purchase your lime green colander?       Hey, Judy! A few folks here have tried sweet potatoes, but the ones who have reported back said the end product is not good. I was able to store last year's sweet potatoes for 11 months. In August, I sliced and roasted the last of them, then flash froze and vacuum packed. That's the best way I've been able to find to preserve sweet potatoes. The green colander was bought at TJMaxx 10 or 12 years ago. Thanks for being here, Judy!

    Hi there Carter (what a cool name BTW) my name is Matt from Australia 🇦🇺 and I’ve been watching your videos for a few months now and you have inspired me to buy a pressure cooker. I bought the best one that I could afford, a Hawkins ‘Big Boy’ 22 litre. Probably not as good as the All American one that you use, but decent enough I think, and four dozen ‘2 Cup’ Ball Mason jars.
    I haven’t used it at this point on account of that I’m a bit time poor atm, but I’m really looking forward to doing some canning and will be following your advice.

The only thing I have ever canned is strawberry jam, but I’ve just ordered a proper water bath canner, and have asked my family for an AA910 for Christmas. I’ve also been slowly adding to my jar collection in readiness. It’s not very easy to find these things here, I have to order online.
    Would you mind doing a video (or a pinned post, if that is easier) of recipe books you recommend please. I have the Complete guide to home canning by USDA, The Ball complete guide to home preserving, The all new Ball book of canning and The complete guide to canning by Diane Devereaux. I also ordered Not your mama’s canning book by Rebecca Lindamood but it’s currently out of stock. I ask this as these hasn’t been a recipe that you’ve made that I haven’t like the look of!

      Hey, Judy! I think that with a side salad and a chunk of bread, a pint and a half would be good. My husband and I split a pint with a really big kale salad, and both of us ran out of stew too soon. 😉

    I LOVED this. I'm a complete baby newbie to canning. I have no tools or supplies yet. 😅 I'm excited to get into it. I do have a question or 2... what's the difference between water bath canning and pressure caning?... I know it's 2 different styles of canning but is one better than the other? Or why choose 1 over the other? Does that make any sense? 😂 thank you ps.... I also would love more "meal in a jar " recipes and instructions. Plz 😊😊

      Welcome, Tamilou! I'm happy to have you here. Water bath canning is primarily used for high acid foods (or acidified foods), such as fruits and pickles, jams and jellies, salsas, etc. Pressure canning is used for low acid foods like meats, beans, veggies, soups, etc. If you have a large stockpot, you can use that as a water bath canner for small batches. You can also use most any pressure canner as a water bath canner, as long as it is tall enough to cover your jars with a couple inches of water at a rolling boil. If you are looking at pressure canner, be sure that the one you buy says it is a pressure canner, NOT a pressure cooker.     I made this and found out that we don't like thyme!! I gave a couple of pints to a neighbor to see if maybe they like it. I haven't heard back from them. I'm trying to avoid throwing it away. I will make this again, but without the thyme. lol My husband bought me a Presto electric canner after watching your video. I love it so much , I've been hunting for items to can. lol

      Welcome, Lucretia! I find the hand chopping works better in videos because my chopper can be quite loud. Absolutely feel free to use a chopper or a food processor. Whatever makes it easiest for you is the right way to go.

    I’ve made a lot of Shepherds pie as well as cottage pie for a monastery where I cooked for 7 years. I’m wondering if you kept the potatoes separate from the vegetables and meat. And add the potatoes to the jar last so it looks more like a cottage pie.

      You could do that, as long as you par-cook the potatoes. Otherwise you have a solid chunk of starch.

    Near the beginning, you were pouring the canned mixture into ramekins. But then you didn't show what you did after. Did you top them with mashed potatoes then bake them further? Or did you just heat them? I'm curious.

    So I used lamb. I tried to get every bit of fat out of this. It’s in the canner now but I think it’s going to fail because of the fat. 😭😭😭 Update: All seven jars sealed! Must’ve been the great instructor. Thank you Carter. 🥰

      Sure. You could stop just before you put it in jars. Put the pot in the fridge. The next day you could reheat, load the jars and can. You could even chop the onions, carrots and celery the day before you start.

      Welcome, Jean! I am not an expert on water bath canning low acid foods, but the Amish community here in the US does. So I don’t steer you wrong, search Google for Amish water bath canning chart. You will want to use meat times for this recipe. Hope that helps!

      Definitely, just drain the fat well, so you don't end up with a greasy sauce.

      Primarily because I want the veggies to really become part of the meat/sauce. It's what makes this such a great dish. You'll notice I put the potatoes in late because I do not want them to dissolve into the dish.

      Less expensive is fine. Just get a Malbec or a Merlot, but it can be cheap.

      I have had that happen to me on occasion while using earbuds. I typically use only one side at a time (left ear/right ear) so I get twice the listening time. Occasionally, I’ll come across a video that I’ll need to switch earbuds on because the sound will only come out of one earbud 🤷🏻‍♀️. Not sure of your situation, but thought I’d share in case your situation is similar.

      Do you mean the oil and vinegar bottles in the cabinet next to the stove? I have a love/hate relationship with them. They work well for oils, but they have not been a winner for vinegars because the vinegars form mothers, and it gets to be a clogged up mess. The green glass bottles I use for oils are no longer available on Amazon. These are the clear ones I use for vinegars: amzn.to/47QZfje
