    Carter, I just closed escrow on a home back in my hometown with a flat 1/2 acre lot and room for a garden and chickens. I can’t wait to adding a veggie garden! I’ve never had chickens and I can hardly wait! My canning is going to new levels! Every one of your videos is a real inspiration. Thank you bunches!!❤

    Hi Carter,
    When I Crack eggs I use a small bowl first, that way if I get a bad egg I don't mix it in with the other ones. Had that happen to me before. Also I rinse my eggshells then let them dry for a few days, then crush them so there fine then put them in the garden. Love you, you have a very soothing voice that keeps me watching your channel. Been watching for some time now, keep going! Best wishes.

      Thanks so much, Poppy. I'm glad you're here. I usually crack into a small bowl too, but it just didn't happen this day. Fortunately, I got lucky with my eggs. You are so right about the risk though.

      We also rinse, dry and feed the crushed shells back to our chickens for extra calcium but you cannot use store bought egg shells because the dried shells will smell of ammonia.

    Yes! I’m 15 seconds into the video and I’m right with you! I’ve got my first veggie garden in 20 years and I cannot wait for the long succession of harvests to begin. Corn, beans, carrots, 6 kinds of tomatoes, sweet potatoes, strawberries, and all of the herbs. ❤️❤️❤️

    I enjoy all your videos. I will be 67 in November and still enjoy canning. I soon plan to try canning your soup recipes. I freeze dried 6 dozen eggs a couple days ago. I have 38 hens and they are still laying good. You are a great teacher. I have shared your channel with friends and family. May God richly bless your family!

      Thank you so much, ArkansasSquaw! I will do a new kitchen tour as soon as the new fridge comes in. It seems to be a moving target! Shocker of all shockers, David--who has an opinion on everything--completely stayed out of the kitchen remodel decisions...well, at least until the end when he tried to rearrange the bar stools!

    The extra rack for freeze drier trays is genius - I have such a challenge maintaining an empty space for my in-process trays.

    I liked to see the variety. It resembles more of what I do in my kitchen. Boneless pork shoulder was a good price at Costco, so I made 9 jars of bbq pork and 3 jars of potatoes this week. I figured why not? I already had the pressure canner out and was already in the rhythm. You’re the only other person I know who cans food, so I’m just happy to see what your process is, even if it is not new. Mostly commenting for the algorithm 😊. Great to see you, Carter.

    I’ll echo the sentiment from so many others; great video! I usually have 3 or 4 plates spinning simultaneously in my kitchen as well. I am seriously considering the freeze dryer. I grow so many herbs and have about 35 layers and of course so many vegetables…I just think it would be an added safeguard in our house to move in that direction.
    Thank you again for providing so much information as well as your encouragement with gardening and preserving…I don’t have a single friend who has a vegetable garden,so you are a breath of fresh air for me ☺️

      Thanks so much, truegapeach! I haven't been through a harvest season with my freeze dryer yet, but I am hoping it will carry a good bit of the load for me this year. With 35 laying hens, you could keep it full between harvests. Speaking of friends who don't vegetable garden...I was at a neighborhood party last night. It seems that now there is "field trip" planned to come see my garden Wednesday morning. Go figure.

      @@growandpreserve That’s wonderful! I think more people are doing what they can to improve their diets/health and a garden is certainly an excellent option. I share my eggs with family and friends (and we don’t process our older girls) and we get 18-24 eggs a day. By the time we deliver to anyone needing eggs I’m not overwhelmed with extra eggs. I just want to put some aside without using my chest freezer space. I will definitely watch your comments for reviews on the freeze dryer.

    I stopped prefreezing my eggs. Now I put my empty trays in the machine when I start it for the 15 minute cool down. I blend my eggs by pulsing them, no foam. About 18 eggs per tray and pour the eggs directly into my trays while in the freezer dryer. By the time I have each tray filled, not Filled, those trays are good and COLD and I didn’t have to transfer from freezer to freeze dryer. No issues so far and I do them a lot. My hens are great layers!

    To prevent a grainy egg mix when rehydrating the freeze dried eggs use hot to boiling water because of the fat (vitamin d2) is what causes the grainy feel, same for other dairy products when rehydrating freeze dried.

      Hey, Donna! I do not have my beans in yet! I have a couple spots that will take some bush beans, so I need to get on that this week. I think you are better with the flowers than I am. I did manage to get more int he garden this year than last, but we'll see if I can keep them alive! So glad you're getting some good rain.

      @@growandpreserve do you ever soak your beans before planting? Just and hour cuts days off germinate. Okra several hours.
      We received 1.34 inches of rain last night.
      Looks beautiful now but by 10 am it will be a sauna. ha ha Oh weather in the south.

    Those freeze dried eggs work well for dry mixes (properly sealed) for things like homemade brownie mix, cornbread, etc. love my freeze dryer! Love your videos!

    Carter, thank you for all you do. As much as I would like, I cant do a freeze dryer right now, but I am applying your techniques to what I have available to me at the moment. Dehydrating can be just as affective as freeze drying but may take longer....we must access our experiences and apply them to our individual lifestyles where it makes sense. I dont want to be dumb....

    I loved your video! You showed several techniques which was great! I have a couple bags of tomatoes in the freezer now I know how I’m going to preserve it. Just found it when I was rearranging freezers. I got a new freezer and was trying to eliminate that refrigerator. It’s good but there’s so little in it we figure clean it out and shut it off.     Great video I have those days as well. today I went peach picking and strawberries picking with my kids and grandkids then I came home cleaned, and cut up the strawberries and put them in the freezer. Then I canned 21 jars of peaches, made 4 loaves of bread, 1 batch of bagels and oatmeal for the week.

    When I saw the sausage drop..it made me chuckle because I can't tell you how many times while browning ground beef or sausage (3 lbs at a time for various meals) some always manages to drop out of the pot!

    Looking good. Mix a bit of salt into those eggs. Keeps them from separating. I do not mix eggs in loads as they can explode. You don't want egg in other foods. Talk soon! Spent my week canning chicken baking breads!

      Salt! I didn't know about the salt. I will do that next time. I have seen them explode on people! It was a bit intimidating. Trying to channel what would Connie do...I did put them on the bottom 3 racks, although that probably still wouldn't have been enough protection if they had exploded. All eggs next time!

    So nice to see you Carter. Really enjoy all your videos. I agree on putting lemon juice in with your canned tomatoes I myself just feel it is safer. The sausage you were browning reminded me I have to get another batch of zuppa toscana canned up. I do 24 pints and it goes quick. So nice for a quick lunch. I buy whip cream and then freeze it in large size cubes so when I open a jar of the zuppa I just put 1 or 2 frozen cream pucks in and it is just perfect. I put the kale in at the bottom of all ingredients and find the kale comes out just perfect. The freeze dried eggs look amazing. I can't wait for the video on what you are going to surprise us with a great recipe using the eggs. Cheers

      I get it. The freeze dryer is still more novelty to me than uber preservation tool. I'm hoping/expecting that to change this Summer as I use it to take some of the load off the heavy preserving months. Stay tuned. I'll let you know what I think.

    Carter, Ever take a whole ripe tomato and putting it in boiling water for a few seconds (dont remember as I was young helping mom), the skin would fall off then we cut in half and put them in jars and then the water bath (again dont remember how long but seems it was around one hour)

      Sure! Mine go in soups, stews, casseroles, mexican dishes, spaghetti sauce, lasagna, chili, pasta dishes that are more about the veggies than spaghetti sauce. Sometimes I drain them to use them as a pizza topping. I always add a jar or two when making a pot roast. They do amazing things for the flavor. I'm sure that as soon as I stop typing and hit "reply" I'll think of more. Hope that gets you started coming up with your own ideas though!

      Hmmm. Wish I'd thought to do this several weeks ago. I've been restocking the empty spaces with the meats, soups, stews, meals and freezer stock I've been canning over the Winter. My veggie, fruit and condiment sections have shrunk, but Winter canning has filled many of the voids. By the end of harvest season, that'll be reversed. Let me give some thought to how I might be able to do it without undoing all of the restocking I've been doing.

      Having the extra shelves is great, Rose! My particular freezer is no longer made. It was quite something to find shelves for it! However, here is the amazing resource I found, encompass.com/parts-accessories/Appliance Hopefully you will be able to find shelves that work with your current freezer. One note is to look at the diagrams to check the names of parts. I ordered the "shelves" the first time but yeas sent the door shelves. Turns out I should have ordered the "racks". Confusing, but customer service was great.

    Hi, Carter. I’ve been canning for a couple years now. The simple stuff. However, fear has been keeping me back. I would love to can meals and meats but I live in the tropics. I’m terrified that the humidity, light and heat will ruin my canned food and get me sick. Does anyone else in the comments can in a tropical climate?

      Hey, Josie! I know we have at least a couple folks from Australia. Hopefully they'll chime in. What do you see is the difference between keeping "the simple stuff" safe and keeping meals and meats safe? Heat, humidity and light are all external to the jar, so I wouldn't expect different storability. Heat and light will degrade the contents of any jar faster. You can cut the light by covering the jars or keeping in a dark room or closet. The National Center for Home Preservation (USA) says to not store jars above 95F. Do you have a possible storage area in your home that doesn't get that hot? Humidity is hard on so many things. It will eventually degrade your lids, but it won't do so any faster on meats and meals than it will on the other things you can.

    I just love your content. New Subscriber. I've a chance to get chicken leg quarters at 89 cents a pound. Any great ways to can these? Raw pack or Hot? Keep up the great work. Doing a deep dive into all your videos. Your inspiring. P.S. Do you ever do wild game? Especially Venison.

      Welcome, Gr8tLakes! Good to have you here. You can certainly can raw pack bone in legs and thighs...I would separate the quarters into thighs and legs so they'll fit better in the jars. For the way I use my home canned goods, I would probably bake the chicken, then hot pack the meat and make stock with the bones...then can that. Either approach works just fine. I don't do any wild game at the moment because there are no hunters in my life. My dad used to hunt, and I love venison, but I just don't have access to any these days.

      @growandpreserve such quick response. Ty Ma'am. When you say baking do you mean until done or half way? Secondly should I remove from the bones after baking? Your a excellent teacher. So excited to learn from your videos. Here in Michigan hunting is big. We get a few deer every year. With things the way they are it would be nice to can it up for if SHTF type stuff.       @@Gr8tLakesHuntnFish I would bake it until done, then pull off the bone and can in chicken broth. Then use those bones to make more broth for next time.     Thank you for this video. As a person who is interested in canning but does not know how your sessions would be much more helpful if you treated this as a classroom instead of a show. Questions such as how long do you simmer the tomatoes before placing them into jars. Why do you need to use Lemmon juice ? How
    Much vinegar did you use in the canning water, why did you use it? I think that you could edit in the science as you are progressing through the steps in order to teach those watching to actually learn the steps . Thank you for your videos.

      Hmmm. I haven't really compared the two. To me, if you can the sausage without adding water or other liquid, it has the same texture as if you had just made it fresh. I use it all the time with friends and family, and no one has ever noticed a difference.

    Thanks for the video. These days you do not see much water bath canning. I do not think I have watched a video of yours that was not informative and useful. I think the first video I watched of yours was the one where you sent your daughter some canned taco meat to college.

      Thank you, Chevy! We'll get to lots of water bath canning with the garden produce this Summer. It is a gigantic pot! That was my first canner. No idea what I was thinking!
