    You are giving me great ideas! First, the salad bar is genius! Second, you are canning bacon, which I must add to my “ToDo” list. Third, even though I have not yet viewed your canning chicken video yet, I noticed that you cut up the chicken thighs before canning. I can my chicken thighs whole, but I really like the idea of cutting them up first. I could go on and on …. Love your videos. I expect prices to continue to rise and expecting some good ice storms this coming winter and living atop a mountain, I won’t be going to the grocery store … preserving has become a must for many of us.

      Thanks so much, Jane! I have a feeling you're going to be all set by Winter! Before we decided to move to Tennessee, we considered mountain top life in NC. David's biggest concern was how we would get to the store in the Winter. Hello?? How long have you been married to me?! I don't think it dawned on him until then just how well prepared we were!

    Just last week ,I bought a corned beef, I riasted it with brown sugar brown mustard on top, wroped in foil on 300 fir 4 hours. It cost 17.00. Ant it wasnt very big

    Hello, I’m Darlene from Arcadia, LA. I have been trying to do your challenge this month. I didn’t get the pictures but I did a bit of the pantry challenge. I started off with canning 7 quarts of dried pinto beans. I have dehydrated some of my parsley, I got 6 quarts and 1 pint of bone broth that took two days. I put up 5 pints of jalapeños hot pepper sauce. My daughter n law and I did 13 dozen of hot tamales. I’m not sure if that counts in the challenge but it is adding to the freezer. That’s my frost week of the challenge.

    I am definitely going to try those crackers. I’m going to make kombucha-again. Pretty upset at how many kombucha bottles I have thrown away.

    Carter everything looked so good. Love the 5 seed crackers. I'm giving that a try. Yesterday made a big pot of navy beans with ham bone from freezer. Just served with cornbread. Extra for friend who broke her femur. Made chili for lunch using canned chili fixing then added cooked bison minced meat. That was good. But today was 83 degrees in North Texas. Had fried shrimp served over lettuce salad with carrots, celery, dried cranberries and pecans. With a big pitcher of iced tea. 80 plus for tomorrow. I need some meal plans. Nothing wrong with your plating skills. It was in the bowl. That is what counts. Never heard of soaking pecans then roasting? What is the benefit? Does that remove the oils to make it last longer?       It all sounds delicious, Donna! You know that dried cranberries and pecans will get my attention. ;-) 83 degrees! Holy smokes. Sandwiches and salads sound like a plan to me. Soaking the pecans helps remove many of the lectins. Soaking and then roasting takes the taste to a new level. Try it if you're up for it, and let me know what you think.     Oh BTW! I buy the boxed organic craisins from Target. Same size as small regular raisin boxes. I usually just split the box between my husband and myself for a salad. Just enough for a little sweet taste.

      Great! I'll try to do better showing some keto meals in Week 3. I've just wrapped up week 2, and he was "celebrating" being over Covid. He says he's back to Keto next week!😉

    I have never cooked with curry paste! It’s looks so easy! My husband loves curry, so I’m definitely going to try that recipe with some of my canned chicken as well! Do you use/make your own mayonnaise? That is next on our list of condiments to start making at home! Not sure I can pry the Blue Plate jar out of my husband’s hands!! 😂. Thank you for sharing all your creations! ❤

      Curry is very easy! Thai Kitchen makes a very good one that is much easier to find than the one I use. Just toast it up a bit in the oil and start throwing things in! I have made mayo, but not recently. I hope you'll come back to share if you can convert your husband! Always happy to see you here, Marty!

      It must be dog code or something...Never do as told when others may witness it! I bought some printable labels on Amazon. I would link them for you, but I'm not thrilled with them. If I had it to do over, I would get stickier labels (these are "removable", even when I don't want them to be) with a water-resistant coating. Even though I don't need to put the labels under water, often my hands are wet, and it can leave a mark. Love having you here, Heather!

    Diffidently will try doing pecans, that is new! How long will they keep on the shelf?

      The pecans aren't preserved, but they are super tasty. I like to soak raw pecans for about 7 hours in filtered water and lots of salt. After 7 hours, drain and give a quick rinse. Spread in a single layer on a sheet pan and put in the oven at 175F for about 12 hours. They are crispy and a little bit salty, and I swear they taste like they've had butter added, but they haven't.

    Hello !! Found you about 6 months ago and you are GREAT !! Went with your suggestions for the grow lights and the electric pressure canner. I know I'm late to the party for lettuce in January, but will start this week. Have canned lots of meats and the potatoes even though we are keto, I do like a small portion occasionally.
    Tomorrow will try the seed crackers and definitely the bread. I noticed the original bread recipe does not call for yeast, baking soda. nor cream of tartar, It does have baking powder. Please help !

      @@leslielovely6473 It looks like she has changed the recipe online. Not sure why, but I do have the original in pdf form. Email me if you would like it. It turns out better when I shape it as a round loaf in the oven, but it's much easier in the bread maker. I use the quick bread setting.

      Of course. I generally put about 1.5T in each half gallon jar. Anything between 1-2T is fine. I put them in the oven at 170F for about 12 hours. It’s not easy to mess them up, so there’s plenty of flexibility. Happy to have you here, Neppie!

    Another question, do you add onions to any of the meat before canning?

      I don't, primarily because I often share the "juices" with the dog. They would certainly be great though. If you slice them small/thin, they will essentially disintegrate into the liquid, so if you want to still have visible onion, use larger slices, cut top to tail. Hope that helps!
