When sets him off the most is when people’s lives are in danger and serving rancid food can kill someone. So yeah, I get him being that angry. He takes pride in being a chef. So I think to see others not take pride and do what they should do.... well we can all see how much it infuriates him
i personally don't need to be a chef to get pissed about kitchens with pigeons, seemingly shit covering the walls, lobster corpses, desserts with blood toppings and seemingly, packed cthulhu's ass meat

Used to work at a local McDonald's many many moons ago. Maintenance and stock. First thing every morning I pulled one of the grease extractors and thoroughly cleaned it. Can't remember exactly how many there were but once all done after several days, I started again and did each one in turn. They were spotless or as clean as they could be while cleaning each one in turn each day. That on top of everything else. Cleaning fridges and rotating stock. Etc.

I have had croutons for over a year, and they were still good, not stale at all, with that being said I can't even imagine how damn long they've had those croutons in the kitchen
It probably means something got spilled on them at some point lol, because it's like impossible for dry crackers/croutons to grow mold on their own
Most of these owners don't deserve the restaurants they have.
