Carrot Cake 🥕

- Ingredients
- 230ml grapeseed oil
- 100g greek yogurt
- 4 eggs
- 1 tbsp vanilla paste
- Zest of 1 orange
- 270g self raising flour
- 350g brown sugar
- Pinch of salt
- 2 tbsp ground cinnamon
- ¼ nutmeg finely grated
- 270g grated carrots
- 150g walnuts
- 100g soft butter
- 300g icing sugar
- 120g cream cheese
Method
1. Preheat the oven to 180°C then grease and line 2 x 20cm cake tins
2. In a large mixing bowl, whisk together the oil, yogurt, eggs, vanilla and orange zest.
3. In a separate mixing bowl, add the flour, sugar, salt, cinnamon and nutmeg and mix.
4. Add the dry ingredients to the wet ingredients and mix until just combined.
5. Mix in the grated carrots and walnuts.
6. Pour the mixture into the tins and bake for 25 minutes, or until a skewer comes out clean.
7. Remove from oven and leave on a wire rack to cool for at least an hour before you ice.
8. For the icing, mix together the butter, cream cheese and icing sugar until smooth.
9. Ice the bottom layer then add the top and ice the top as well.
10. Garnish with some more walnuts and enjoy! - Jak na to + styl

When my daughter was married 34 or so years ago, she asked me to make her wedding cake - four layers, four different flavors. The biggest, by her request, was a carrot cake, and the only difference from yours was that hers had crushed pineapple.

it's a cream cheese frosting. it's wayy easier to make without a hand-held or just a normal large one than a normal buttercream. just the basic recipe of a cream cheese frosting is powdered sugar and cream cheese. he added a bit of butter though

Brazilian carrot cake is so different from the "world carrot cake". We use a lot of chocolat cream and, recently, Nutella too

I love carrot cake but I can't have the walnuts so I use crushed drained pineapple in mine, it's moist and yummy! (I like adding some pineapple to the cream cheese icing too😊)
Instead of walnuts, pecans are also delicious!

And that is, of course, not wrong, I just wanted to help explain what they said.
In your first comment you said you don't usually make carrot cake because all the oil makes it unhealthy. The person that replied just wanted to point out that butter is not any more or less unhealthy than oil. Butter is the normal fat ingredient that is used in baking, cakes, cookies, etc.
Your first comment made the claim that carrot cake is unhealthy because of the oil, not just because all cakes like these are unhealthy. So the person just wanted to let you know that oil is not really any different in healthiness than butter, which is true, you can think of butter as an oil that is solid at room temperature, there are some small details here and there but to focus on the main points they are basically the same.
Your response made it seem like you thought this person said "I didnt said this recipe was healthier" the person never said anything about this recipe was healthier, or anything about this recipe, just that butter is not healthier that oil, and that all cakes are unhealthy, and we don't make them for their health properties.
I hope I helped clear things up. Also your English writing is phenomenal. I can only write one language 😢

@@ChapatiMan I really suggest you to do more research on vegetable oils it's poison for your body. Aside from extra virgin olive oil and coconut ( pure and unadultrated) every other processed oil is rancid and is bad for you. Butter is much much healthier.

I LOVE carrot cake, but I like powdered ginger and allspice in the cake along with the cinnamon and nutmeg, and added orange zest in the frosting.

Toasting the walnuts on an oven tray for a couple of mins before adding to the cake makes them super yummy!

Fun fact: you can sub applesauce for the oil in your cake recipes. Equal measure. I’ve done it for years. It works beautifully.
Another fun fact: consumed in sufficient quantity, nutmeg can produce a psychotropic effect. It can also be lethal. If sufficient quantity is consumed. 🙂
