Baked potato 🥔

- Ingredients
- 4 large washed potatoes
- 2 tbsp olive oil
- Salt to taste
- 1 brown onion, diced
- 4 cloves of garlic, minced
- 1 tsp chilli flakes
- 1 tbsp smoked paprika
- Small bunch of thyme
- 1 can of diced tomatoes
- 1 tbsp fish sauce
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1 can of cannellini beans
- 100g Swiss cheese
- 4 tbsp sour cream
Method
1. Start by pricking the potatoes 6 times each, all over with a fork, and rub with olive oil and salt
2. Bake in a 200ºc oven for 45-60 minutes or until fork tender
3. For the beans, add 1 tablespoon of olive oil to a saucepan over a med-high heat and add the onions, garlic and a pinch of salt. Sauté for 5 minutes or until translucent
4. Next add the chilli, paprika, thyme and tomatoes and mix well
5. Now add the maple, fish sauce and vinegar and stir well. Cook for 10 minutes, then add the beans and cook for 10 more minutes
6. Once the potato is cooked, cut a cross in it and pull it apart. Then add some cheese, some beans and then more cheese
7. Top with some sour cream and serve! - Jak na to + styl
I love the Basic Mitch series. Babe gets all the fancy recipes we then copy, while Mitch is where Andy can show us all how to elevate our cooking skills. Fantastic!

My favorite tip for baked potato is to roll it around and massage it after the bake but before you cut it open. It makes the flesh inside crazy fluffy and light.

BACK IN THE 90'S there used to be mobile ovens at weekend markets in Queensland, that sold baked jacket potatoes. They'd split them open piping hot, and slather on butter, sour cream, diced beetroot, shredded cheese, and savory mince if you wanted that extra. So... damn... good!

I have a similar story: I'm Hungarian and live in the US. When I visited a Hungarian family in Sydney and attempted to speak English with them, I couldn't understand what they were saying, so we had to continue in Hungarian.
Then, my second story is when I came back. I called a magazine in Australia because I wanted to place an order. (This was before the days of internet. ) I couldn't understand anything out of the conversation, so I wrote them a letter requesting a yearly subscription.
I’ve never seen baked beans like this but I’m definitely trying them! This is a favorite of mine since I live alone and I’m in a wheelchair so lots of sautéing and heavy pots are no longer used

But they’re so good that way! We used to call them “Kitchen Sink Baked Potatoes”, since we tossed everything but the kitchen sink onto them. The only thing Andy didn’t put on them was the chopped cooked bacon which was my kids’ favorite addition!
