How to make sauce Kalalou (Haitian Okra Sauce)

  • In this video I'm showing how to make Sauce Kalalu (Haitian Gumbo)
    The ingredients that you will need are: 1lbs of okra, meat of choice. (I chose oxtails) tomato paste, lots of water, minced garlic, habanero pepper, fresh thyme, salt, magi cube (dried chicken stock) adobo seasoning, and creole seasoning.
    cooking steps: first you prep your meat, then you cook your oxtails for about 2 to 2 1/2 hours. once your meat is cooked, let it get some color. then you prep your okra by cutting of the head and end, wash thoroughly. next take 2 tablespoons of tomato paste and mix it in a cup of water. once that is done add your okra and tomato paste pure. Put Saran Wrap or a shopping bag on top to steam the okra. cover, and let it cook for about 5-10 minute on low medium heat. uncover add two cups of water, the spices, habanero pepper, and thyme. stir and let it simmer for another 5 minutes. uncover, and enjoy. • How to marinate oxtail...

      @@fernandodiniz6029, ??? Are you serious? Gumbo is from the US. In this very video she used Creole Seasoning, lol. Have you ever heard of Jambalaya, Carolina Red Rice, Hoppin John, Hush Puppies, or Cornbread Dressing. All of those dishes have African roots.

      Chichi Okorie Well it's not a soup. Haitians make it as a stew. The African version taste completely different. I'm half Haitian and half Ghanaian, so I've been able to "taste" the similarities and differences between African food and caribbean food in general 😛

    Nice recipe. It is not safe to use Saran Wrap or any plastic to cover your food to cook. It is better to use either aluminum foil, wax paper or parchment paper.

    Thank you so much for sharing your skills and talent. I love the video. Please, allow le to comment on two things: 1. The Plastic: I would beg you to never use plastic bags to cover hot food. The heat release chemical Not good for your health.
    2. Maggi Cube are not good for health as well.

    Supermarket bags when heated to a certain temp breaks down into cancer causing carcinogens. Dont I use it. The food looks Great

    Looks good but I’ve never seen anyone use plastic bag. My mom used parchment paper if needed. Plastic can make you sick.

    It's not gumbo its kalalou. We're Haitians not from New Orleans. They put a different spin on it from the haitian influence. They make it very differently but kalalou is the original.
