Hi Gina! I love that you are representing for the Haitian Culture . Maybe next time let the chicken marinate in the epis and dry seasoning for at least an hour or days before actually cooking it. The point of scoring the chicken is so that the spices get deep down in there. Next you can add the chicken to cook in a covered pot and it will create its own water. You can gradually add a little water if necessary. Just a little tip!
She’s also forgetting to remove that yellow part at the bottom of the meat. It helps prevent your meat from having a heavy smell
@@cathygalore2031 I agree, this is what I was saying also remove that yellow stuff and them pieces of fat and excess skin. Other than that 👍
Li Ayisyen?
@@african-gene-dominance1841 No, Gina is American
Ummm what about the boiled water, vinegar and salt? I've never seen a Haitian clean meat like this.
What you know about that Haitian cuisine, Miss Gina? My neighbor is Haitian and she is one of the nicest most gracious people that I know. Girl, she really cooked plenty of her country's best dishes for Christmas! Her potato salad made with beets is soooo good. It is now my favorite potato salad. That Epis takes food to another level. I am a lover of Haitian cuisine now. It is so good!
A friend of mine hails from Trinidad he makes his potatoe salad with beets and carrots they're all from West Africa same food with little changes!😋
I can't wait to taste mine 😊🤗♥️
Im a single guy that couldn't cook, I can't thank you enough, I actually made this and it was delicious... you're the best
My parents are Haitian. I was born in the US. I’m Haitian American 🇺🇸 🇭🇹 . You made the dish your way. Thank you for making a Haitian dish 🤤😋 I appreciate you. Good job 👏🏾 sister Gina Young. I follow you and tried a lot of your dish. I always get a standing ovation from my family ❤️ Thank you for sharing. God bless you

What did you serve on the side? I was thinking just rice, pinto bean , and fufu for my husband he’s Haitian as well.

Hi Gina! Thanks for another great recipe!! I can't even keep up, so many delicious recipes to choose from 💖💖
My gwo granmè is smiling down on this one girl! I’m making this next week. 🇭🇹
Mrs. Gina you have turned a non cooking Irish girl into a queen tonight. My family wants to know what restaurant I got the food from. Many many thanks and hugs... Your the best!!
It’s nice seeing another culture trying out Haitian food😙 just one tip...marinate the chicken with the epis and the seasoning overnight before adding it to water to it because it will lose taste quicker and we don’t use cilantro we use parsley 🤣
I CAN DO MY VERSION OF EPIS WITH PARSLEY & CILANTRO, RIGHT
Gina. Thanks for teaching and sharing. God bless all of your efforts.
I asked a Haitian family at church for their recipes and they sent me home with epis today. The flavor is incredible , beware scotch bonnet peppers in it . I love it. I used this recipe as a base to make as close as I can it’s smelling great.
It was awesome. I froze the epis in ice tray, ever time I open the freezer it smells awesome !
I never heard of pigeon peas ! ...The flavors in this dish is amazing ! I can't wait to try it ! ....I was remembering saying to my husband that I was so bored with the same old food.... .then you came along ! .... You know what? I believe God heard me and sent you my way. Your personality is an extra bonus. So I thank God for you and pray Jesus will continue to bless you and your family..... And keep those recipes coming ! 💖

Jackie Land believe me you will love it. I absolutely love Haitian food.
You made a believer out of me GAIL THOMAS ...Thank you l
Jackie Land They are so good where I am from their called gandules. They are like beans and so amazing, especially in rice. If you have never tried it you definitely have to get yourself some arroz con gandules. It’s an amazing Puerto Rican recipe, it goes perfect with a nice pork butt roast
Another delicious dish gina I always love your videos...
Haitian chicken, sauce and black rice, Oooh Weee, I got to make me some!🤗❤
When she said taste this and held that spoon up to the camera my mouth started salivating
I so miss my years of working with Life Line Missions. I spent 10 years in Haiti. I love their food. I wish I wrote down all the recipes I used to help with in the kitchen with the ladies from Haiti. I so would love to see more of your Haitian dishes and get the recipes for them. God bless and thank you.

I am Haitian myself you did the sauce and the chicken very well good job. You should try do pumpkin soup soup joumou for the New Year's😀👍♥️
Yesterday was January 1, which is a meaniingful holiday to the Haitians! My gracious Haitian "in law" made a huge pot of soup Joumou, I am not sure of the spelling for the soup. But I had just finished eating dinnet, but I plan on having my soup for dinner tomorrow. Our family gatherings during holidays are filled with delicious foods from multi-cultures: Soul-food, Jamaican and Haitian. Damn, it just doesn't get any better! LOL

Ok Gina Young... who turned you onto “Manje Ayïsyen (Haïtian Food)”? I was dying when I saw you do it!! The style is correct. The only thing I’m going to tell you is is Haïtians normally don’t use cilantro in Haïtian epis; actually we use is Parsley. You can use cilantro but cilantro to most Haïtians is an acquired taste. Our neighbors next door, the Dominican Republic uses cilantro in their cooking.
When are you actually going to make a full Haïtian Meal; the Jasmine Rice, SOS Pwa (Bean Sauce) and the Haitian Chicken in sauce? Go to Lamise O to give you pointers or better yet, invite her over to cook with you...
Yesssss love her!
Thank you for your comment! I was disappointed when I saw cilantro...I don’t like the taste and never really tasted it in Haitian dishes that I like. It’s definitely an acquired taste for me...parsley it is! 😆
So true I was surprised with Cilantro. I’m not Haitian but I know parsley is used. Do u use ginger?
@@misspeaches99 No, no ginger.
AHealthy StateOfMind you’re mad late. Lol. It turned out real nice.

I do remember one recipe from Haiti I think you might like. It is a Fried Rice Cheese Balls. You need to make a sticky rice and cut cheddar cheese into 1inch cubes. make a Palm sized ball of rice. Then put a dent in it that will hold your Square cheese and form the rice around the cheese to make a ball make sure no cheese is showing and the rice sticks to the cheese. Then once you get them all rolled you add them to your hot oil and Friday outside of the rice ball. Then take them out drain them well and serve them with your Haitian Sauces. like a fish sauce or maybe even the sauce you made with this dish might be good. I never had it before I don't think. Give them a try I think your kids and you will love them.
What do you mean Friday outside the rice ball?Perhaps this Haitian. I do not understand what it means at all!
Gina that dish is to die for, those onions and peppers are so colorful.also that dish is not so heavy on you. so you wont have to be so full.bless you gina.have a great night. teacher.;)

Mrs Gina you were making haitien chicken well but the haitien folks normally boiled water n blanched the chicken before seasoning it and their sauté it instead boiled it, I don't judge you I just gave you the best way we're making it, but you did a great job I love you so much Mrs Gigi 😘💞🙏
