I made a variation of your shipwreck casserole using a box of dirty rice mix instead of the Mac and cheese. Kind of similar to this. I’m steadily getting back into cooking since my wife passed last year. I always did the majority of the cooking since she worked full time and I worked rotating shifts. She loved coming home to some of my simple creations ready to eat when she came in the door. Thank you for looking out for all those on a low income budget and sharing your faith. @@janette2422 You’re welcome. I would suggest using beef broth or a bullion cube instead of or with the water required for the rice to cook. I didn’t use milk as I didn’t use Mac and cheese so it was water and it would have been a little more tasty with the extra flavor.
@@bettyf5682 I used to work with guys that would get home by 3:00PM and wait for their wives to get home between 5:30-6:00 PM and ask them what they were going to cook for supper. Never understood that. Now my Rhonda had her specialties that no one else could match! I guess all in all it evened out for us. I used to joke with her about messing up "my kitchen". Sure do miss her.
You never hear people actually talking about draining grease from a skillet and accidentally dumping the food but it does happen, I love how real she is!
I drain my beef and rinse it. I have had blocked arteries and stents. I always stuffed my peppers but this is easier. I add hot sauce. Thanks for this! And your motivational message!

I like to make meals that are bigger than the 3 of us can eat. I have the leftovers for lunch the next day. If there is a lot left, I like to freeze the leftovers for quick meals. This looks delicious.

My #1 Kitchen trick is freezing tomatoes. I never realized this until my Aunt showed me. Since I've never met anyone who didn't prefer (strongly) home grown tomatoes, it's a great trick. Just wash and toss the tomato in the freezer. Once frozen store them in a baggie in the freezer. Then after the season just use them in soups and stews along with dishes like this. They'll have that fresh home grown flavor. Now if I can just figure out a way to keep them where I can slice them.
Oh that's awesome. I had some grape tomatoes that were about to go bad. I put them in a little freezer bag and threw them in the freezer. I didn't know how they were going to turn out. It's the first time I ever did this. But thanks to your "little trick" notice...now I'm resting at ease for I know they will be just fine. I was just thinking about what to do with my peppers that are ready in the greenhouse. I love stuffed peppers but being single and doing everything else around the cabin i just run out of steam to come in and make an elaborate dinner. This works ! Thanks 👍

You're absolutely awesome Becky and yes people should try to get together with a church group I am an older woman who lives alone and all my family past and my best friend to so I have no way to get around. I would love to go to church but I can't drive I had an accident that took me out of driving. I sort of have my own little group me Myself and I and it's okay it doesn't bother me at all this is the life the good Lord plans for me and I accept it and thank him that I'm still still here. Locating a church family has not been easy I've tried this and will continue to try and locate somebody or some people. It's a good thing you could drive I wish I could at least it would get me out of this home and I'll get to do that I am looking for new friends so I can do that. You know it's a shame there isn't some kind of place that a senior citizens could get together and and mingle play games dance get to know each other for one day a month. I think I might have to work on this I think it would be awesome. Place to mingle with the seniors. Not having to go into a nursing home not having to go into a retirement facility which is way expensive yes way way. This is one of my favorite casseroles. I make it frequently but I have to mention that the ground beef is not only more than I've ever paid before but for some reason doesn't taste quite the same as it used to. I'm not sure if it's me or the meat, which is always fresh. Thank you for this recipe. I hope a lot of people try it. It is certainly one of those comfort foods that really stick to the ribs.
No, it definitely tastes different. I really think the quality of beef is completely going downhill. Grocery store beef is already insanely expensive, and it's most likely low quality factory farm, hormone, steroid, mass produced beef. Now, grocery stores have all this "fancy" grass fed happy cow meat which is like 3x more expensive, and definitely tastes better. Its almost a little bit of a conspiracy. Honestly, I think "regular" beef used to be more closely related to the "fancy" varieties that are so much more expensive. The meat industry don't want us to know this because they're making so much money and "it's not like they're lying to anyone if people don't really know."... Pff. Stuff will either get better or worse. Idk man, idk.
It is ridiculous, the prices... but occasionally it's worth paying a bit more for that old-fashioned flavor. My local grocery had a sale on organic 100% grass-fed beef, so I bought some. THAT'S what meat is supposed to taste like! I can't do it often, but it was SO worth it! I bought a single pound (I live alone ), so I made one hamburger patty, six tacos, and a small casserole... and so much more like mom used to make... feed lots are horrible!

My peppers from the garden are both imperfect and getting long in the tooth lol. I had a great pepper year because the bugs ignored them until after I pulled the tomato plants. I got a ton that came in all at once. Because the bugs have found them, I started pulling the peppers green rather than earlier on when I could let them go without much bug damage. They LOVED my tomatoes & summer squash

My mother in law is now 93. She was very active in church before covid hit. They shut everything down. At 90, just before they shut us down, she was a very active lady especially with her church friends. In the past two years we have seen her decline and not be the woman she once was even two years ago. As things have started to open back up, she is getting back out to her church group again and is rebounding nicely especially considering her age. She is herself again thanks to her church group. God bless everyone who has stayed strong through all of this.
Looks yummy Becky. I wanted to say that sometimes it's more economical to buy larger packages of ground meat which I do. I then brown them up or form burgers and portion it into freezer bags and it's easy to grab what you need. I also do this with chicken breasts that I plan to use for casseroles. It's such a time saver and you can save a few dollars in the end. Thanks for sharing your recipes Becky. 🙂❤️

Becky, This was such a perfect meal for me to prepare today. I’m moving from my apartment in December. I’m downsizing to move in with my sister and husband. We are all over 70 yrs of age. So, I’m trying to use the food I have in my little freezer. I knew I had some microwave rice. I dug out two packages. One was long grain rice and the other was a southwestern style rice with beans. Oh yeah, the long grain rice had a few mixed vegetables too. It was so simple preparing the rice while the hamburger meat was cooking. Added a mix of three peppers and onion, frozen, but thawed slightly. After the hb meat, peppers and onion were heated, I added the can of tomato soup and rice to the mix. I added salt, pepper, oregano, garlic powder and Badia complete seasoning. Then, I allowed everything to heat well. Lastly I added some cheese and allowed it to melt. This meal with heated tortillas or with some crackers. What a meal!!! Thank you for being the sharing, caring person you are. May God Bless you and your family.

I moved 2 years ago clear across country to TN. I’m an older lady who lives alone, but I quickly made some friends and joined their church. It is quite well attended, and some of us get together in Grow Group every other Monday. We have become quite close. As I have no family in the area, these Christians are very important to me. I love stuffed peppers! Thanks for this recipe. When i drain grease i like to stick a colander on top of one of those plastic chinese takeout soup containers or a regular bowl if i don't have the soup containers. Just toss the meat in there and either let it sit and drain from the gravity or take a spatula and push down on it if i'm really wanting the grease gone. After the grease cools off you can transfer it to the trash or put it in an empty spaghetti sauce jar if you save grease. Paper towels are getting ridiculously expensive so hopefully that tip helps somebody.

@@Strait_fan yes this is what makes me really sad is there is a lot of us older people living alone has nobody and we learn to survive. It's a good thing you could drive I wish I could at least it would get me out of this home and I'll get to do that I am looking for new friends so I can do that. You know it's a shame there isn't some kind of place that a senior citizens could get together and and mingle play games dance get to know each other for one day a month. I think I might have to work on this I think it would be awesome. Place to mingle with the seniors. Not having to go into a nursing home not having to go into a retirement facility which is way expensive yes way way. It's a thought and thanks for sharing I know there's others but I'm sure we live in different states. And I'm going to tell you something kind of like me myself and I we get along fine LOL

We are so fortunate. Our church never closed. We work at the church and our pastor told us we were essential. Never missed a day at work. Missed two Sunday Masses. We have our old friends and lots of new ones who had to find an open church. Life is good. God bless.

This is one of my favorite casseroles. I make it frequently but I have to mention that the ground beef is not only more than I've ever paid before but for some reason doesn't taste quite the same as it used to. I'm not sure if it's me or the meat, which is always fresh. Thank you for this recipe. I hope a lot of people try it. It is certainly one of those comfort foods that really stick to the ribs.
No, it definitely tastes different. I really think the quality of beef is completely going downhill. Grocery store beef is already insanely expensive, and it's most likely low quality factory farm, hormone, steroid, mass produced beef. Now, grocery stores have all this "fancy" grass fed happy cow meat which is like 3x more expensive, and definitely tastes better. Its almost a little bit of a conspiracy. Honestly, I think "regular" beef used to be more closely related to the "fancy" varieties that are so much more expensive. The meat industry don't want us to know this because they're making so much money and "it's not like they're lying to anyone if people don't really know."... Pff. Stuff will either get better or worse. Idk man, idk.

It is ridiculous, the prices... but occasionally it's worth paying a bit more for that old-fashioned flavor. My local grocery had a sale on organic 100% grass-fed beef, so I bought some. THAT'S what meat is supposed to taste like! I can't do it often, but it was SO worth it! I bought a single pound (I live alone ), so I made one hamburger patty, six tacos, and a small casserole... and so much more like mom used to make... feed lots are horrible!

My peppers from the garden are both imperfect and getting long in the tooth lol. I had a great pepper year because the bugs ignored them until after I pulled the tomato plants. I got a ton that came in all at once. Because the bugs have found them, I started pulling the peppers green rather than earlier on when I could let them go without much bug damage. They LOVED my tomatoes & summer squash
I used black beans, 'veggie meat' and 'riced' cauliflower and serve on top of bread. Thanks so much for this idea

My mother in law is now 93. She was very active in church before covid hit. They shut everything down. At 90, just before they shut us down, she was a very active lady especially with her church friends. In the past two years we have seen her decline and not be the woman she once was even two years ago. As things have started to open back up, she is getting back out to her church group again and is rebounding nicely especially considering her age. She is herself again thanks to her church group. God bless everyone who has stayed strong through all of this.
Looks yummy Becky. I wanted to say that sometimes it's more economical to buy larger packages of ground meat which I do. I then brown them up or form burgers and portion it into freezer bags and it's easy to grab what you need. I also do this with chicken breasts that I plan to use for casseroles. It's such a time saver and you can save a few dollars in the end. Thanks for sharing your recipes Becky. 🙂❤️

Becky, This was such a perfect meal for me to prepare today. I’m moving from my apartment in December. I’m downsizing to move in with my sister and husband. We are all over 70 yrs of age. So, I’m trying to use the food I have in my little freezer. I knew I had some microwave rice. I dug out two packages. One was long grain rice and the other was a southwestern style rice with beans. Oh yeah, the long grain rice had a few mixed vegetables too. It was so simple preparing the rice while the hamburger meat was cooking. Added a mix of three peppers and onion, frozen, but thawed slightly. After the hb meat, peppers and onion were heated, I added the can of tomato soup and rice to the mix. I added salt, pepper, oregano, garlic powder and Badia complete seasoning. Then, I allowed everything to heat well. Lastly I added some cheese and allowed it to melt. This meal with heated tortillas or with some crackers. What a meal!!! Thank you for being the sharing, caring person you are. May God Bless you and your family.

I would like to share that God answered my prayers recently after I had a bit of a health concern. Over a three week period I had a concern that I prayed over and sure enough He heard me and blessed me with the answer I was praying for. Prayer is powerful and God hears us when we pray and ask for His favors. He also hears us as we thank Him in prayer for all the gifts He has bestowed upon us. I moved 2 years ago clear across country to TN. I’m an older lady who lives alone, but I quickly made some friends and joined their church. It is quite well attended, and some of us get together in Grow Group every other Monday. We have become quite close. As I have no family in the area, these Christians are very important to me. I love stuffed peppers! Thanks for this recipe. When i drain grease i like to stick a colander on top of one of those plastic chinese takeout soup containers or a regular bowl if i don't have the soup containers. Just toss the meat in there and either let it sit and drain from the gravity or take a spatula and push down on it if i'm really wanting the grease gone. After the grease cools off you can transfer it to the trash or put it in an empty spaghetti sauce jar if you save grease. Paper towels are getting ridiculously expensive so hopefully that tip helps somebody.
