    Cowboy Casserole is a Hamburger Casserole that combines basic foods to create an irresistible meal. Beef, beans, potatoes, and tomatoes are the foods that build America. This combination is well over a 100 year old recipe.
    Cowboy Casserole is an easy to whip up, simple, one pot dish that is perfect for any weeknight dinner, lazy weekend, camping even potlucks. It can be cooked in a skillet on the stove top fast, in an instant pot, in a crockpot or in the oven. The variations are virtually endless.
    Cowboy casserole is easy a, affordable and delicious. You can make it with the ingredients that you already have on hand. No need for a shopping trip in a specialty food store. This is the kind of meal that I grew up on, and I raised my 4 kids on.
    Deuteronomy 31:6 - Be strong and of a good courage, fear not, nor be afraid of them: for the LORD thy God, He it is that doth go with thee; He will not fail thee, nor forsake thee.

    Ingredients:
    1 lb. Ground Beef
    1 cup Chopped Onions
    4 to 6 cups Chunked Potatoes
    1 to 2 cans Kidney Beans (or Pinto, Northern, …)
    1 can Diced Tomatoes or Fresh Tomatoes
    Salt & pepper to taste
    Minced Garlic to taste
    4 ounces Cheddar Cheese (or any cheese that you prefer)
    **Optional - 1 cup of chopped green bell peppers
    - Hot Peppers
    - Hot Sause
    - Chili Powder
    - Taco Seasoning

    I was a Volunteer Firefighter for 25 years and he NEVER failed me or made me fear my job for it was my community and fellow man I was serving and it was the right thing to do. He always took care of me and I never feared my job!!!!!!!!!!!!

    My Mom and I made your salmon patties when I went to visit her recently. I had to leave your cookbook with her she loved it so much! The food reminds us of what her mother and my grandmother's used to cook for us. SO GOOD!

      I grew up among an assortment of cookbooks but we seemed to always drift back to an American cooking, cook book first published in the 1940's. Among other things, it used less salt, less sugar, and less fat than many cook books did. I remember the recipies to be reasonably basic without a lot of ingredients for which many had suggested additions or variations; these were enough to let you know you could add even more ingredients. Oddly enough, it had more spices and herbs than many of the 1950's and 1960's recioies did which often relied in salt and pepper. - That cooking including many of the dishes, were right in line with what I see on Hillbilly Kitchen although it wasn't quite as southern oriented; still had fritters and a humbernif other items though.

    I really like that you always add tips for making adjustments to your recipes for calories, fat, flavor, etc. A lot of times, when I read a recipe, and I don't have all the ingredients, I just go to another recipe. It's good to know some common sense ways to make a recipe work. Hope you're doing well. Your husband would be proud of you. Take care.

      Me too. I use good old-fashioned recipe cards. I have a “substitutes & conversions(for cooking & canning)” section in my box & add things as I learn them. It’s very handy.

    When I need dinner to be ready in a hurry, I cook my potatoes, carrots, etc. in the microwave for five or six minutes, then add them to my dish. I love your videos, Becky. They're full of suggestions that I use frequently. I'd love to know how to grow my own potatoes! That would be a very useful video.

      Growing potatoes is easy. Depending on the climate. Plant around the end of March. Just take your potatoes and cut them into a couple of slices and drop them into your rows about 8 inches apart. After you have done your rows with a tiller of course. Also put a little fertilizer in with the potatoes. Not very much it will burn them up. If you have access to horse or cow manure or hog manure that is actually better than fertilizer. But that is pretty much it. When they come up keep them weeded. Before you know it you will have beautiful potatoes.

      That is the quickest, simplest, cheapest method to use kind of at the last minute.
      Of course there are many vids showing the standard methods as well.

      Self sufficient me, here on you tube just grew spuds in a cardboard box! It was a fun video, if you want to start before Becky's video. I live in Wyoming, we are freezing again tonight... I plant everything in buckets so I can bring it in and keep it growing.

      @@stacyschaffer783 my ground is lousy for growing anything. Creek gravel 2 inches down. So this year I’m growing potatoes in buckets. Take a 5 gallon bucket, drill about six 3/4 inch holes in the bottom (I put 1 in the middle then spaced the rest halfway to the edge), put about 3 inches of potting soil in the bottom, place two or three whole or cut potatoes on the dirt then fill the bucket to about 4 inches from the top. Water until the water is standing on top. The excess will drain from the bottom. Be sure to water on days it doesn’t rain. Then sit back and watch them grow. They are ready to harvest when the vines begin to die.

    That looks really tasty! I made Korean ground beef last night over rice, my husband said it was too sweet. I’ve got about a pound of ground beef left from that package, this won’t be too sweet for him! Thank you so much for sharing the recipe! I’m interested in your ideas on growing potatoes, and I really enjoyed your scripture from Deuteronomy. We need to keep that lesson in our hearts and minds in these times!

    A couple of years ago a 98 year old lady from Pennsylvania was so excited to teach me one of the depression meals they ate. She called it "Shipwreck"...the recipe was very similar to this one, minus the diced tomatoes, she used tomato soup and no cheese. She baked in oven, covered with tin foil. She and her husband had been teachers. I absolutely loved the the months I was privileged to spend with her. This video reminded me of her 💫🕊️🌹

    Hey sweet lady… So much of my cooking is exactly like yours. I want to thank you for sharing some of the recipes that I would love to have shared with the world …you’re taking care of it for me lol …I love the way you know how to stretch a dollar ….I’ve done it for years even when I have plenty of money …I still find yourself doing it. Not only because the food is delicious but also I always praise myself for feeding such a large group at such a low cost. Our future is so uncertain in these times more so than ever… We all need to be frugal no matter what I grew garden one time at the beginning of the pandemic and it was so wonderful. So much work but my grandchildren learned where vegetables and fruits come from. I can’t wait to take them to a dairy so they can see where milk comes from. Again thank you carry-on I love your set up and all that you do. The hard work is unbelievable.❤️❤️

      Stacy, reading your comment made me smile. It is almost verbatim, what I’m doing to you. That’s kinda unsettling, huh?
      I had the luxury of spending a lot of time with my grandparents, when I was a kid. I was the youngest, of course. My grandmother had a garden that was beyond huge and she canned everything.
      They also had a few milk cows, which she milked every morning before daylight. I say I got my “get up early gene” from her. She had a large chicken house, for eggs. I got to help “grade” them by holding over a light checking the yolks(doubles?). She made three meals a day, kolaches, butter(I got to help churn), noodles for soup(rolled out by hand and dried on the spare room bed) and for hobbies she crocheted and knitted, among many other things.
      Pawpaw farmed, grew cotton, maize and corn. Had cattle to tend to.
      Good grief! So much work. I miss them! Indefinitely got my work ethic from them and my parents. Making me tired just typing this. I could go on for a good while, but won’t and may I add, they did all this without AC, in south Texas!
      I really appreciate your comments about your garden. People don’t realize how much work it is, but it is the most satisfying work anyone can do. To be able to feed your loved ones freshly grown produce. Not to mention everything you learn and it tastes so much better.
      I didn’t mean to hijack the comments.
      I think everyone is old enough to understand. Have a good one😉

    omg my mom said the same thing about sugar and tomatos. canned. she said it took out the canned taste. btw i love you so much. i love your faith and i love your recipe's. the food you taught me to cook keeps my family pretty dang thrilled. 2am and my guys are awake....i asked them "how does a cowboy casserole sound for today's dinner. they smiled and eagerly shook their heads, 'yes!!!" btw, my guys all believe in God. all my guys are homeless, they come here to sleep when weather conditions are too severe for outside sleeping.

    I love your recipes and the use what you have substitutes. Basically, just the calm, practical way you approach cooking good food. I will share what has become my favorite way of cooking potatoes in recent years.
    Use whatever kind of potatoes you like the flavor and texture of. I prefer the red potatoes. Use however many your family will eat. If you want, peel them, or just cut out the eye spots and scrub them clean. Cut into bite size pieces. Rinse thoroughly, place in a microwave safe baking dish (I use my oval Pyrex roasters with lids) sprinkle with extra virgin olive oil, then garlic powder, onion powder, a bit of paprika, parsley flakes, and salt to taste ( sometimes I use regular salt, sometimes seasoned salt) toss to coat evenly, microwave(covered) on high for 9 minutes, stir, microwave (uncovered) another 9 minutes (this time is for a full 2 qt dish, for more or less you have to adjust the cooking time). I find these to be quite tasty and my family loves them. This is another of those things if you don’t like (or have) olive oil, use avacado oil, grape seed oil, or, bacon grease, lard , or butter. Now, honestly, I love them made with bacon grease or butter, but, my doctor would have a fit, so I use olive oil.

    I made this casserole, I added dehydrated mushrooms and squash instead of beans and microwaved the potatoes before adding, it came out so good! I know this will be a regular dish at our house. Leftovers for today"s supper were wonderful on tortillas with a dollop of sour cream

    Oh, Btw, I needed a few burger rolls one night for supper, used my cast iron skillet & made your skillet rolls(w/ self rising flour) Then I sliced them, buttered them & toasted them(my guys like toasted burger buns) in the skillet. They loved them! My husband makes big burger Patties too, I made large rolls & they held up perfectly. They’re used to me making yeast bread & rolls, this is much faster. Thank you!

    I've made this, or similar quite a bit. It's a good, basic hearty meal that can be changed up or fancied up easily, depending on the occasion. I like to do this as more of a fried skillet dish and fry the potatoes. It doesn't take very long but you have to stay at the stove more. Tip on frying the potatoes: dice them up, rinse them off to get rid of some of the starch, place them on a towel or paper towels to dry off(they get crispier when they're drier), cook the meat, beans, tomatoes and seasonings and take them out and set aside, add a couple, three tablespoons of oil, put heat on medium high, throw potatoes in when it's hot. Stir every few minutes till their browned evenly and soft inside. Then you just add in the other stuff till it's heated through and add the cheese on top. Make sure you cook out the excess fluids when you do the meat and other ingredients first. And another good idea is doing the potatoes and adding sliced smoked sausage and onions. It's really good and easy. Do the onions and sausage separately from potatoes and then add once they're cooked to blend a bit otherwise you get mushy potatoes. Still tastes good just not as pretty

    Hi Ms Becky.
    The tip about the potatoes in the microwave...
    Absolutely right. I make jacket potatoes in the microwave.
    You need to use a thick-skinned variety, microwave on full power 5mins, allow to cool about 10 mins, turn over and microwave again for 5 mins.
    Remember to stab the tater several times with a sharp knife before microwaving.

      If you like a nice tasting potato....cook it 4 or 5 minutes in the microwave...then finish in the oven....make sure to poke the potato before doing any of this....you will eat every bit of that potato....so good!!

    I think I will make this in the crock pot today. I need to get back to home cooking. The weather is supposed to get bad today, so I will have food cooked in case the power goes out. I always enjoy your videos. It is now 4:05 central time and it is in the oven! I used Rotel tomatoes and added a can of corn to the recipe. I will top with Pepper Jack cheese when it is done Yum!     Made this and it was yummy and very satisfying. Prepped it in a Dutch oven then put in oven uncovered 350 for 1 1/2 hours. Cheese on top at 500 till browned. Husband loved it❣️

    I love the recipes you share for a one pot meal. I'm 77 years old and I'm at that point in life I don't feel like standing and cooking for a long time. ❤
    One suggestion I learned years ago about draining the grease off the meat...brown the meat first, drain it, then put it back in the pan and add the seasoning and onions. That way, you don't lose the flavors from them. When you drain the grease after you've put the seasoning in, the flavors go down the drain along with the grease.
    Your suggestion of cooking the ground beef ahead of time and freezing it is a great idea. I do this and it is a time saver.
