I put a tea towel over all my bread after I bake it. I take a basket, throw a t towel in it, put my bread in the t towel in the basket and then toss the ends of the t towel over it to cover. I never was sure why. That's just how my great grandma, grandma and mother did, so I do. 😊

I was born in Belfast and raised in USA. But my Irish family and it's large always made Irish soda bread. Just the plain simple one like you have made. Mom showed me how when I was very young. Takes a very light and fast simple shaping. I make half the recipe you use and put it in a pie pan to bake. I'm 78 this month.

Brown soda bread is the most common. Depending on how coarse the brown flour is, you can mix in white flour to taste to lighten it. Soda, salt, buttermilk and get it in the oven quick, no kneading, so the gas from the soda isn’t wasted. Cool in a tea towel to make a nice chewy crust that doesn’t break your teeth.

I left word in a comment in your last video that I’m sending you and your family an advanced copy of a book I’ve just finished and I didn’t know if you saw the comment.... it’s being released in May. You have done so much for me with you guidance and recipes and encouragement... and for so many other viewers too. I wanted to share this book as a small way to give a little bit back to you. It’s a book about a ten-year-old girl who’s left behind on the trail going west in 1863; she has a strong and sweet spirit, a determined purpose and a strong sense of doing what’s right. I think she must be a lot like what you were like when you were ten. And the verse you shared today fits the message of the book so perfectly. So keep your eyes open for “Prairie” ... Good video clip. Thank you.
For those who are asking, the bread with soda needs an acid. One of the best tasting is buttermilk, BUT, for those who ask about milk and lemon juice ... it works fine.
A trick with buttermilk: Use it until it nears about 1/4 full and top up with whole or 2% milk, leave on the counter 8-12 hours or overnight to let thicken ... and put in the refrigerator. You're ready to go again.
