Jaco Pistorius was renown for doing this kind of things in his improvised solos. You can also do it off other scale degrees such as the 5th and 2nd degrees of both major and minor chords. It is a very interesting topic!

Your question is basically "what other notes can I play?" and the answer is "all of the other notes out there". Just end back on that E minor chord and people will think you're some sort of boogie genius. Throw atonal notes in there like minor fives and minor sixes. Half step minor seconds and people's ears will really hear those. But they will want to hear you resolve back on that E, so just do that and you're golden. Then thump somewhere else and rumps will be shaking in no time.
