Sua Gai How to make Boiled Chicken Recipe Lao Hmong Chinese Thai Khmer Filipino Viet Lu Mien Food

The Hangover Cure 🤕. Chicken Soup.
Boiled Free Range Chicken Hen. In Lao we call this Sua Gai.
Recipe:
1. First start off by bringing 7 Liters of Water to a Boil.
2. Next add these these ingredients and herbs into the boiling pot 👇🏻
- 20 Pieces of Kaffir Lime Leaves
- 2 Lemon Grass Stalk (cut into 8 pieces).
- 5 thinly sliced Ginger
- 2 thinly sliced Galangal (optional)
- 1/3 of a Cup of Chicken Powder Mix.
- 1 Tsp of Monosodium Glutamate
- 1/4 of a Cup of Fish Sauce
- 1 Whole Hen (Free Range Chicken). This is the traditional way, if not use a Whole Chicken.
3. Boil on High for 1-2 Hours (up to you). Some prefers the chewy texture, so boil less if you prefer that. I boil mines for 2 Hours.
- Skim out any extra residue for a clearer broth.
4. Remove Chicken Hen from pot, let it rest, then shredded them to your desired bite size stripes pieces.
5. In a Large Serving Soup Bowl add 4 Liters (17 Cups) of the Soup Broth from the Pot in to the Bowl.
-Let it cool down so the broth won’t over wilt the Garnishes that would be adding in.
6. Next add these following ingredients into the bowl
- 3 Tbs of Lime
- 1/3 of a Cup of Tamarind Powder
- 1/2 Cup of Chopped Green Onions
- 1 Cup of Chopped Cilantro
- 2 Tbs of Fish Sauce
- 1 Tsp of Monosodium Glutamate
- 2 Tbs of Roasted Rice Powder
- 1/4 of a Cup of Padaek Fermented Fish Sauce.
- Desired amount of Chili Powder
(If your able to find Vietnamese Coriander then chop it up, then add in, I did not have any, so I up my tamarind powder in this recipe to compensate).
Gently Stir, and mix in well, then Enjoy over Jasmine Rice.
In your own bowl, you can adjust to taste!
*Add lime, chili powder, tamarind powder, fish sauce, and garnishes to taste.
