How to make Khao Piak Sen - Laos chicken noodle soup

    This recipe is perfect for gloomy/rainy weather. Something about chicken noodle soup is always comforting, especially in this form.
    HAPPY EATING!
    *Broth ingredients:
    1 onion
    1 ginger, cut in half,
    12 cups of water
    2 tbsp salt
    2 tbsp chicken soup base
    *Knife-cut noodle ingredients:
    1 pack of tapioca starch
    extra tapioca starch to prevent sticking
    1 pack of rice flour
    1 tsp salt
    4.5-5 cups of boiling water
    *Toppings:
    Green onion
    Cilantro
    Fried Onions
    Chili oil
    black pepper
    Beansprouts

    Stina, you got great cooking instructions. To make the khao piak noodles from scratch is difficult, you make it look manageable. The roll pin is also professional grade. Lol As for the noodles most people remember the color labels, tapioca, rice flour and also glutinous sticky rice available at asian market. To help the cutting board from shifting, try place a wet paper towel or just roll the noodles directly on the table. I like the way you cut the noodles, i can tell that, you got cooking experience.

    Sheeeeesssshhhh, made it with my our family and it was amazing. My cousin eat it with shrimp paste and Thai chili I was like wtf. Now we all hooked lol thanks for sharing ❤️🤍💯🌶️🥰🙏

    Thank u! Super simple and great recipe. I used less salt for the broth, so there would be room to add fish sauce & soy sauce into your bowl.. just because I’m super Asian hehe.

    How do you save the leftover noodle and soup? How long you can keep it ? Thank you for your recipe 🥰

      I honestly never store them because my households ends up eating it all that day LOL. But you can store the noodles in the freezer (laying flat) for easy use next time and can freeze broth. As for leftovers for the next day, you can put the soup in the fridge. Hope this helps!

      I used Totole granulated chicken flavor soup base mix. You can get it as most asian grocery stores :)
