    I felt that when you shared your cherished childhood memories and reason for cooking because of your mom. My mom passed a month ago too and her food and cooking was one way she showed her love. She always wanted to set up shop selling egg rolls. I’m glad to have watched this especially so close to Mother’s Day. Your mom would be so proud of you.
    Side note: for those that don’t eat tuna, protein substitutes can be stir fried ground pork cooked on the side and added to the curry base or shredded boiled chicken (you can buy rotisserie for quick easy option)

      My mom tells me the same thing too I just read your comment and it reminded me of my mom telling me the same exact thing selling egg rolls out of a restaurant she even told me to invest in a food truck that is in the works but not for awhile.🚚😊.

    My father cooks this with chicken. He'd make a huge pot with a whole chicken in it. He'd boil and boil the chicken long enough that itd basically be the consistency of tuna like. Truly the best chicken noodle ever.

    As an Indonesian it was interesting how us fellow Southeast Asians use the same aromatics and base flavours, like galanga, lemongrass, and shallots 😄 Definitely gonna try this out!!

      Yeah I always associated shallots with French cooking because I guess I spent so long in commercial kitchens and the influence of Escoffier and the French brigade is so prevalent. But it’s almost more popular in southeast Asian cooking.

      I also believe that the lao dish is much more intense than the indonesian one. Despite the use of herbs and spices, most of indonesians hate intensely flavored dishes.

      @@khrisnaprasadya8200 Not really, we in east kalimantan love those type of intense flavored "sayur", we usually add actual fish and fish broth instead of just fish sauce or oyster sauce tho

    Wow! Thank you so much for this. I never would've thought to use canned tuna and it's definitely a quick and easy hack from mom's way of cooking actual fish and using meat from that. I've had the khao poon from Khao Noodle Soup too, so I can say it's good!

    One of my favorite noodles soup to make, second that is Kasoy pho. I used chicken and I’ve try it with pork belly which is okay but chicken is best.

    Munchies, it's your job to ensure when some says "Red curry paste" what that means...either let us know how to make it, or if it can be bought at a store. All respect to the chef, the dish looks delicious, Munchies you need to remember that you're teaching people how to cook.

    Not sure what Laotian formal function are like overseas but in the Mainland I have yet to try a Khao Poon with bamboo or quilled eggs, often there is always some sort of meat.

    Finally..Lao food..we are put in the back comparison to thai and Vietnamese..but we have our own cultural. It sad to know historical we always been a neutral country and had many countries take over due to our Is hosting way of treating people and families and friends..growing up i had to say i was thai cause NO ONE knew what or who where lao people..we got the bad end of history..but little do they know pa deck is the fountain of youths. 😂😂😂❤
