I’m using my 8QT Ninja Foodi
Keto ~ Low Carb Cheesecake
2 cups ground almonds/ mixed nuts (1 cup would’ve been perfect)
5 tablespoons melted butter (adjust if using less nuts)
16 oz cream cheese softened
1 cup sour cream
2/3 cups Swerve
2 eggs
2 pinches of salt (the nuts I used were salted, I didn’t add any salt)
1 tablespoon vanilla
Grind the nuts and add melted butter. I placed parchment paper on the bottom of the pan and lightly sprayed the pan with coconut oil. Place the nut mixture in the pan. Press the bottom and sides. Let it sit in the freezer while preparing the cheesecake.
Blend all other ingredients until smooth.
1 cup of water in the pressure cooker
Pressure cook 28 minutes
Natural release 10 minutes
Since I was using the Foodi and it has the air fryer function. I broiled the top of the cheesecake for 4 minutes. I could’ve went longer but this was my first pressure cooker cheesecake and I wanted to see how it would taste without browning it too much. We were shocked how delicious this turned out. Since we’re low carb I did add whipped topping. I’m definitely making this again soon.

Hi! I followed the recipe as you did. After I opened the lid I saw that some of the cheesecake bubbled off. Any idea why? Just covered it with sour cream topping to look better. We’ll see tomorrow if all else worked out. Thanks!
Pam Kaplan, Hey, I’ve made 5 of these, a few were regular cheesecakes not low carb. None of them bubbled off. Maybe too much batter?? Not sure if you’re using the same size pan. Hopefully it will taste delicious. Thanks for watching 😃
Christy's Cooking Channel might be the reason. I used a7 inch pan. Probably lost about 1/4 cup worth. But it looks great now.
