This jig is amazing. Worth every penny I spent on it. Makes even an intermediate woodworker look good. Your setup instructions in this video are slightly different than those that came with my jig. To attach the grippers, you use a t-bolt held in place with a rubber washer, then the flat plastic washer and finally the nut. Your video neither shows nor makes any mention of the rubber washers needed to keep the bolts from falling out when attaching the gripper/s. You might consider modifying your video to show this step to be consistent with the instructions included in the box.
