How to make vegan EMPANADAS (Korean Style)

  • In this video I will show you how to make vegan empanadas from start to finish. If you are looking for an easy and tasty appetizer that will wow your guests, this is it. This empanada was inspired by Korean flavors and is stuffed with a spicy meaty vegan filling made from soy curls with Asian flavors. Well-fermented kimchi is the key to making these empanadas absolutely delicious. I also show you how to make a light and tasty empanada dough. Empanadas are one of my favorite finger foods for parties and they can be served hot or room temperature.
    The Dough
    2 cups All Purpose Flour
    1/2 tsp salt
    8 T cold plant-based butter
    2/3 cups ice water
    The Filling
    1 cup soy curl crumbs (amzn.to/2RlTI2w)
    1 cup water
    1 T soy sauce
    1 T Maggi seasoning
    4 cloves garlic
    2 T chopped ginger
    1/2 yellow onion
    1 med potato
    1 cup well-fermented kimchi
    1/4 cup kimchi juice

    Among the food culture of Korea, special things that distinguish it from the food culture of other countries. //
    1. Perfect vegan food represented by Korean Buddhist temple food
    2. An endless variety of soup dishes
    3. Kimchi: Vegetables fermented with animal protein represented by cabbage kimchi. In the past, only Koreans made and ate it. There are over 800 types of kimchi.
    4. Jeotgal: A fermented animal-based sauce made from seafood. In Korea, there are more than 140 different types of salted fish.
    5. Ssam: It means wrapping all the ingredients you want to eat in various leafy vegetables represented by lettuce. However, unlike burritos, you have to swallow them in one bite, so you need to adjust the amount of ingredients to be wrapped appropriately.
    // Etc... Korea shows a distinctly different food culture from neighboring countries in Far East Asia (China, Mongolia, Vietnam, Japan).

    Usually here in Argentina we can buy a Empanada Criolla with Seitan. Try it, it's really good!

    I love your take on empanadas. I grew up eating pumpkin empanadas. It wasn’t until I was older that had savory ones. These look delicious and I love that they are vegan. I need to try them sometime.

    Sounds wonderful! I'm going to try making them with the dough that I make for my sourdough tortillas. I'm gluten sensitive and the fermenting breaks down a lot of the gluten in the flour.

      No, I haven't done much with GF flour. I would be worried about the texture. But, I would wonder how this would be wrapped in rice papers?
