Udon noodles at home (chili peanut sauce recipe)

  • Today we are making udon noodles at home with a spicy and flavorful chili peanut sauce. You can use store bought noodles to make this a quick easy weeknight meal that can be thrown together in minutes. But making your own udon is worth all the effort and then some. I will show you my techniques for rolling and cutting the noodles. This peanut sauce recipe is super quick and easy. It uses any peanut butter you like and combines it with asian flavors of korean red chili flakes (gochukaru), soy, sesame oil and vinegar. Enjoy!
    Noodle ingredients:
    400 g flour (bread flour or all purpose flour)
    200 mL water
    8 g salt
    Sauce ingredients:
    3 tbsp peanut butter
    1 tbsp gochukaru - Korean red chili flakes
    1 tbsp brown sugar
    1 tbsp soy sauce
    1 tsp toasted sesame oil
    3 tbsp water plus more noodle cooking water to finish the noodle dish

    We're having this tonight. Didn't find the courage to do my own Udon noodles. Went to my asian grocery store and bought frozen ones from Japan. I'm pretty sure it'll be delicious... and I do have green onions LOL. Thanks for this recipe.

      That would work. As would any other chili oil or chili crisp you have. They would all have slightly different flavors, of course. But all good.

    looks great! my gf is japanese a when she makes udon she steps on the ziplock back in addition to manually kneading it - it seems to work well and is a bit less exhausting :)

      Yes. Great technique. I do that too if make it with a drier dough that is hard to roll out. But I didn’t think people on YT would be comfortable walking in their noodles. Thanks for watching.

    I always use store bought udon noodles that I really love and the instructions say to drain and then rinse with cool water before adding them to the sauce & veggies. I saw that you took the noodles straight from the pot of water here. When they're homemade do you not need to drain & rinse or is that just an unnecessary step in general?

      That's a great question! Thanks. It depends. If I am going to use my noodles in a clear broth or soup, like a Japanese udon in broth, I would definitely rinse them. You want to remove the starch water otherwise it will make your broth more cloudy. Also, if you need to keep your noodles after cooking for any time before adding them to your final dish, you want to stop the cooking with cold water and rinse. In this case, my noodles were done just in time and I already have a thick creamy peanut sauce, so any starch water on the noodles would be no problem and actually help the sauce.
