Welcome to my channel. I created this channel to share my passion for food and the culture that goes along with it. My name is Greg and I live in Fargo, North Dakota. I am a self taught cook and strive to make healthy, wholesome, plant-based foods from all over the world. In order to understand food, I like to burrow down to the roots of a recipe and learn about its origins. While I do try to make authentic international cuisine using authentic techniques, I'm also known for fusing different cuisines and making easy hacks to achieve flavor. You Can Make Refried Beans at Home (From Scratch)
Refried beans are a staple of Mexican cooking and they really are so easy to make from scratch. Learn how to make traditional homemade refried beans from start to finish. I think I've captured the traditional way to make Mexican Refried Beans. This recipe also is vegan and low in fat. You could even make them fat free by leaving out the little bit of oil used here. You can make them thick or thin depending on your taste.
First cook the beans until soft:
1 pound of dried pinto beans
1/4 of a large onion
2 cloves of garlic
1 Jalapeño
Soak beans overnight, drain and rinse. Add to a large pot with enough clean water to cover 1-2 inches. Add the vegetables and heat to boiling. Simmer for 1.5-2 hours until the beans are soft. Remove the onion, garlic and jalapeño.
Make the refried beans:
1/4 diced onion
1 clove garlic, chopped
1 jalapeño, chopped
Cooked beans with some of their liquid
1 tsp salt, more to taste
Pepper to taste
1.5 TBSP vegan chicken flavored bouillon powder
1 TBSP oregano - Mexican oregano is best, but use regular if you don't have it
2 TBSP cumin
Heat a heavy bottom wide pan and add a tbsp of oil. Sauté the vegetables with a pinch of salt and pepper until softened. Add beans and the seasonings. Mash with a potato masher until the beans are to the consistency you like. Continue cooking with stirring until they thicken up to the desired thickness.

im completetly omnivore. but using meat in moderations is the best way of consuming meat. and some people have allergies to some meats. these help us in matching that point of health we thrive for. i would shred this and fry it with pepper and tumeric. when crispy, put water and washed rice on it in a pot with 2.5 cm or 1 inch of water (usualy the water that you baked your meat with) and enought salt to make the water taste salty. then low hit with closed lid until water goes away. meat sub will stay dry and make a fantastic textural mix with soft rice.

@@jatwangismyname900 I think the flavors are mostly how you season and cook it in the final dish. Developing the texture so it has like meat fibers is important for it to be chicken like. Obviously not exactly the same. You can use this base and season it like a brisket, or pork, or other types of meat and it comes out pretty good.

Where I’m from flour is so much cheaper than meat and cheaper than buying the vital wheat gluten flour. You can use any spices you want. What part is cost prohibitive?

My yogurt had a weird taste to it. Almost like it was spoiled. Has this happened to anyone else and if so what did you do the next time you made it?
If it tastes off, I would not eat it.
Skip a few steps by using blanched almonds and leaving the yogurt ferment in the pot with the lid on. I just tried it and it turned out great! I left it boil while stirring constantly for over 30 minutes and a have a nice Greek yogurt. Next time I’ll simply use less water as you suggested. Love it! Thank you for this recipe! I saw others with the same technique using a combination of oats and cashews that I’m trying too.

Can it be made with whole wheat flour?
Yes it’s possible, but I redo,mend string white bread flour. The more protein the better. Whole wheat may leave some bran behind that changes the texture of the seitan. If you want to use whole wheat, use one that is very finely ground.

It looks like meat, but the body knows it's not. It's full of plant poisons. All plants are loaded with anti-nutriants. They say, you eat me, I will kill you with my chemicals.

That sauce look too thick would have taken all the water back in, Jar need to stay in boil water until water cool prior remove them
Thanks. I like a thick sauce but you can make it as thick or thin as you like.
Add some water to the pot stop from burning at the bottom
That can help. But if you are careful, it is not necessary. The tomatoes start releasing water quickly and you need to stir it frequently when it starts to cook.
