Leo this is amazing, thank you for sharing! I have a question - when I work with nerikiri dough, I have trouble with it getting too soft and floppy. Is it because my nerikiri still has too much moisture? And sometimes it gets too sticky and difficult to work with. Do you know why this happens to my dough? I would really like to get the right consistency so I can make beautiful wagashi too :)
