Ingredients -
300g (10.5oz) - Pappardelle or Fettuccine Pasta
1 Tbsp (20ml) - Olive Oil
2 Tbsp (28g) - Unsalted Butter
1 - Brown (Yellow) Onion, Diced
300g - Swiss Brown Mushrooms (Cremini), Sliced
6 - Garlic Cloves, Chopped
5g (0.2oz) - Flat Leaf Parsley, Chopped
1 tsp (10g) - Dijon Mustard
1/2 Cup (125ml) - White Wine or Vegetable or Chicken Stock
Parmesan Cheese To Taste
Seasoning To Taste
Flat Leaf Parsley To Garnish
Method -
Bring a pot of salted water to a boil. Cook the pasta for 1 minute less than the packet instructions. Drain and reserve the pasta water.
Add the oil and butter to a pan over medium-high heat and allow them to melt. Add the onion and mushrooms and saute for 10 minutes. Season to taste. If the pan gets too hot, turn it down to medium. Add garlic and cook, stirring frequently, for 1 minute.
Add dijon mustard, white wine or stock, and flat-leaf parsley. Mix to combine and allow the wine or stock to reduce by 2/3. Check seasoning. Add parmesan cheese to taste and adjust sauce consistency with pasta water.
Add the cooked pasta and mix to combine. Cook for 1 minute, using this time to finish cooking the pasta and check the seasoning and sauce consistency. Add more parmesan cheese to taste.
Serve in bowls and garnish with flat-leaf parsley and parmesan cheese. Dig in.

@ChefJackOvens I popped into the grocery store and picked up everything and made it tonight. So simple, yet such great flavors. The Dijon mustard was a really good addition. I used Gray Poupon. I was lucky enough to find large portobello caps at the local grocery. This is my first time cutting and cooking mushrooms, lol. I used too much olive oil and too much butter, but it still tasted very good. I’m excited to eat the leftovers for lunch and dinner tomorrow. Thanks again for the video 🙏

I used to love 'light' small pasta dishes, until my major surgery involving a few different organs. Now there are so many things I can't eat without making me vomit. In the past few months I've become somewhat intolerant to proteins and I have no idea why. I was never a red meat eater but I loved lamb. I loved white meats and any seafood. I find myself getting quite weak because I just don't feel like eating, and haven't got a bloody cle what to eat. Ive been living on small wrapped flat bread filled with strings of chicken breast and thinly chopped shallots, and thinly chopped 'planed' or grated other salad vegies sprinkled with a LITTLE salt, and black pepper and a quick spray of Cobram olive oil. Oh and I've been usin avocado 🥑 as a spread, not butter. I wish I could find something that I can really enjoy in these cold months that I could refrigerate to heat up the next day in the microwave. I'm a falls risk now and I can't stand for long some days.
Im on the category 1 list for surgery - a 3 in 1 multiple surgery of a bone hard thyroid growth, nodules and a bit of cancer in my throat. Category 1 means within 60 days technically but im a publicly patient so it could be a bit longer as an emergency surgery may get rushed in and push mine back. I turned 58yo in mid April, and as you can see from my profile photo, I'm looking every day of it, if not more. That was taken the morning after my last cancer surgery which was just below and parallel to my collarbone. Two days after my birthday. That one was a rapid growing malignant skin cancer. They got it all in 2 goes.
I used to be so healthy, worked out daily, ran 2-3 marathons a year and have always eaten healthy. As I always used to say, shop the periphery first, then use aisles when needed. We used to have a local market gardeners 'market' here on the sunny coast years ago, but thats gone now. Great for fresh organic produce. I'm a farm girl who grew up way out west of the New England. I can tell unnecessarily sprayed or fbattery chooks from free range in a minute. All the sauces in the world won't cover the taste difference.
I know I'm a 'difficult' case while still being a good food lover. Do you think I could challenge you for some things to at least try to eat? It has to be quick to make or slow cooker friendly. I have a bread maker, paella pan, waffle maker, pizza oven, deep fryer, 'sandwich' grill, air fryer, nutribullet, shop quality juicer for vege and fruit juices. I used to make one veg and one fruit juice a week, and it was a way to get nutrients into the kids while young. They'renow in their 30s with kids of their own and sadly crap has returned to their diet due to their partners. I always used to tell them, don'tdrink your calories because juices will creep up on you if you don'twatch out. Anyway you name it, I own it. If you could help me I'd really appreciate it.
Tbh, during surgery, after the bone hard thyroid growth is removed, cancer in all it's full on glory may show up, and I may not have long, and I sincerely apologise for wasting your time, however, if you could help with some healthy , low catb, low cal, low fat recipes, keeping in mind my current restrictions that have come out of the the blue, I'd be forever grateful and hopefully my body will switch itself back on soon. Oh, I'm on a full disability pension now, so no expensive ingredients please.

Thank you, Alex! Most dishes can be frozen. I wouldn’t freeze something like this one or any cream based sauce though. I’d say the meal prep series is best for that.
