Great to hear you guys are cooking with retired dairy cow. Where I grew up in Canada there is a lot of dairy farms, and we always used to get beef from these farmers. It's a great underutilized source of beef.
@@nick260682sadly in Portugal it’s still fashionable to go with veal…. I’d like to have easier access to retired dairy, not only it’s delicious when compared to juveniles it’s also much more ethical

As server in New Orleans, I believe working in the service industry should be mandatory for h.s. seniors or newly graduated h.s. students. The lessons are priceless to life in general.
One of our favorite butcher shops has what they call ugly streaks. They take the best bit (the tip?) that is weirdly shaped and generally used in ground beef and instead cut them in a way that is like the reverse of making a roll. You end up with really really good streaks that are not conventual attractive but so tender and delicious.
I need to start cheffing again. I've been out of the profession for a few years now, but watching little videos like this makes me realise how much I miss it.
Restaurant workers are the most under appreciated and under paid workers… even the restaurateurs who DON’T franchise or create chain restaurants don’t make enough for the effort it takes. And don’t forget the Sacramento & DC mobsters need their cut too. To this video, I love that the beef is butchered in house and the burgers are ground fresh. You don’t find that alot unless you’re willing to shell out hella money. ✌🏽 ❤ from NorCal.
I love the fresh oysters. I would get blue points sometimes you get a crunchy little crab inside. Save the little crabs when u have enough you get a dinner roll snd some butter and have a crab sandwich.

Beautiful work, im surprised to hear "braised overnight" how long do the baby backs actually cook for? You can get delicate fall off the bone baby backs in a 3-4 hour braise at 300f in a convection oven.

It’s all the rage at the moment in Europe. People go nuts for it, especially when it’s dry aged for anything up to 100 days - flavour is incredible
