My one suggestion,is that mostly vegetables r grown on high amount of chemical spray, before using in salad cleaned properly with salt n water.

Thanks for such explicit explanations on all the use of all these vegetables. My question is how much of each of this is essential and effective for each person eg. Bindi - how much can I take?
There is no simple thumb rule on the quantity of food to consume and may vary from person to person. You need to first arrive at how many calories you want to consume per day. For example, 2000 calories for Women. Then you need to split these 2000 into 3 main macronutrients - Protein, Fat & Carbs. Generally, it is 40% carbs, 30% protein and 30% fat (This ratio may vary from person to person depending on weight loss/weight gain regime, etc.,)
Then you can decide the food plate of breakfast, mid-morning snack, lunch, evening snack and dinner accordingly so that you get the right amount of protein, fat and carbs for the day not exceeding 2000 calories (or whatever your daily calorie aim depending on weight gain/weight loss, etc.,). You can find the nutrition value of Indian vegetables and grains, meat, dairy products here: www.fitjog.com/nutrition-charts/indian-food-nutrition-charts.php
Please note that the nutritional values mentioned in this website may not be 100% accurate because the vegetables and grains available in your place may be of slightly different quality compared to the ideal sample. So, some plus or minus aspects have to be considered.
We need not break our head too much, it is good to have 50% vegetables, 25% carbs and 25% protein for lunch and 50% vegetables and 50% protein for dinner and almost the same proportion for breakfast. This will also take care of fiber requirements which is very important.
Finally, coming to your question, you can check for RDA (recommended daily allowance) for all the micronutrients, minerals and vitamins and choose the right food accordingly by referring to the above-mentioned website link. I hope it is clear. All values in the above-mentioned website is for uncooked measurement. For example, Chana has 17 grams of protein per 100 grams of Chana and this value is for 100 grams uncooked chana and not 100 grams of boiled or fried chana.
Try to maintain the balance as far as you can. Initially, it may be a little hard, but as you progress, you get a fair idea of how to balance your food plate. There are a lot of resources available on the internet.
Over and above, You can get your blood test done for vitamin deficiency once in 3 months and if there is a dip in some vitamins, your doctor will be able to help you with some food supplements or vitamin capsules for few days.
