Mett is actually raw but also the most fresh meat you can get. It is pork and if you make it out of beef it is called Tatar. Mostly it is eaten with some additional salt, pepper and onions
Fun fact with a french : We have a very similar dish called "tartare" witch is basicly raw meat (beef) with any sesoning but it is usualy salt peper olive oil ognion and an egg yolk (yellow part il not so sure its the rigth word )
But thats far more classy, I think! And you always eat à fine fresh salad with it, let alone the choice of wine. OK, I might not be very objective here, as I am a German living in France...😇

I had to look up eating raw pork & found this- 'In Germany, the meat used for mett is strictly regulated. It's illegal to sell raw mett the day after it was ground - if butchers want to use the leftovers, they must be cooked. The risk of food poisoning is minimized by making sure that the mett stays cold right up to the point it's served'

I'm living in germany and currently pregnant, and my doctor told me not to eat any raw meat during my pregnancy, and I was so confused like who even eats raw meat? I think they are two completely different things even lf both are raw meat. Tartar is beef and mett is pork. But tartar is often mixed with eggyolk and other sauces while mett is not. Just some salt pepper and thinly scliced onions and it's eaten on bread. I also think beef is safer raw or not fully cooked than pork in most countries. In Germany the guidelines for mett are just really strict.
Every pork that’s going to end up as Mett has to be checked by vet and the ground meat that’s being sold does not to be allowed to be older than 2h by time it was grinded. Fresh Mett with bread, onion and pepper is the best thing you will ever taste.

Oh no! :( If you ever feel courageous enough to try again: Always buy the meat fresh from the butcher, consume it the same day you bought it (you can still cook it to eat it the day after). Avoid the supermarket raw pork (the ones in these plastic containers) if you want to eat it raw. Plus for the professional butchers: They often offer varieties you can't get in the supermarket. Like Thüringer Mett - which I highly recommend to use for Mettbrötchen or Mettigel. No additional seasoning needed (at least in my opinion).
@m.r.3887 In Italy we eat raw beef (minced or super thinly sliced-carpaccio) and fish, but you gotta let it marinade for at least 1hr before serving. Basic seasoning is with salt, peper, lemon juice and olive oil and sprinkle some flakes of parmigiano (no cheese on fish). I love it, but lately I don't digest well raw meat if I have it in the evening and even if I have too much of it at lunch time I get an indigestion...

If you ever feel courageous enough to try again: Always buy the meat fresh from the butcher, consume it the same day you bought it (you can still cook it to eat it the day after). Avoid the supermarket raw pork (the ones in these plastic containers) if you want to eat it raw.
Plus for the professional butchers: They often offer varieties you can't get in the supermarket. Like Thüringer Mett - which I highly recommend to use for Mettbrötchen or Mettigel. No additional seasoning needed (at least in my opinion).
@m.r.3887 In Italy we eat raw beef (minced or super thinly sliced-carpaccio) and fish, but you gotta let it marinade for at least 1hr before serving. Basic seasoning is with salt, peper, lemon juice and olive oil and sprinkle some flakes of parmigiano (no cheese on fish). I love it, but lately I don't digest well raw meat if I have it in the evening and even if I have too much of it at lunch time I get an indigestion...

We are just trying to replicate dishes that are deeply rootet in our culture, our traditions and our upbringing, but in a way that is compatible with our ethics, as well as the protection of the climate and environmental integrity. If something is delicious and can relatively easily be made without the need to forcibly breed and slaughter animals or an increased risk of food borne illness, why shouldn't I do it?
