  • Mastering a classic Spanish dish just got easier. Traditional Spanish omelette with just three ingredients in this dish but each one is used to create an omelette that has bags of flavor. My favorite recipe for Tortilla de Patatas or Spanish omelette that I will share with you my friends today! This is so easy to prepare and incredibly delicious and tasty taste that you and your loved ones will enjoy!
    Caramelized onion provides a delicious natural sweetness while the softened potato gives texture and depth. Mix through eggs and cook until golden and firm to the touch. The perfect omelette! Makes you want one now doesn't it ?!

    4-5 potatoes
    6 eggs
    1 onion

    I’m Spanish and I have never seen anyone cook tortilla de patatas like they do in the video.
    Few tips:
    - Cook the potatoes before the onion. Potatoes take longer and you will end up with burned onions if you do like in the video.
    - Don’t bother removing the potato-onion mix from the pan. Just remove some oil from the frying stage and add the eggs directly.
    - In the video they skip the flipping part. Make sure you use a plate bigger than the pan so it doesn’t fall through the edges when flipping.

      Muchias gracias (My great grandma was Spanish). I looooove tortilla, and have a penguin book of Spanish cookery at home but never mastered the tortilla. I will now! All the recipes has a lot of olive oil, but it is full of antioxidants and now I have got so used to it I could almost drink it ! If you have fresh olive oil that is. 🐨

      potatoes don t take generally longer than onions, if you want to caramelize onions (without sugar), it may take more than 30-40 mins -- i tried tortilla with caramelized onions, adds sweetness and tastes great, spaniards may want to try this

    As a Spaniard:
    . Fry those potatoes until they are brown, use more olive oil until the potatoes are completely covered.
    . Fry the onion separately from the potatoes, otherwise you will burn it (or the potatoes will be raw, thats what happened to you).
    . Once the potatoes are properly fried, dry the oil out, strokes are not a funny thing. After that you can add salt, it will get impregnate with the correct amount that you need.
    . First stir the eggs, and after you can add the mixture of potatoes and onions. You need the amount of eggs just to cover the mixture.
    . And the most important step: use a small pan, a flat tortilla is no bueno, it needs to be thick or it will dry out like a brick.
    . The heat NEVER goes high, always medium or low heat (remember that you want a creamy tortilla, not a brick). Time depends of how big the tortilla is, you can flip it as many times as needed until you reach your desired consistency.

      ​@@MjoePtaPues Mi abuela Española que en paz descanse se las hacía a mi papá y mi tío y montaba las cebollas con las papas y nunca les quedó crudas, de hecho ella incluso ponia las cebollas antes que las papas, las dejaba poner Cristalina, y luego de inmediato tiraba las papas, cada quien tiene su forma, diferente procedimiento no hay un camino o paso en específico, pero el resultado es el mismo, si sabes lo que estás haciendo no importa los pasos, el resultado será el mismo,. Excelente

      🤔 Wouldn't cooking the potatoes 10-15 mins, then adding onion to the same pan after the potatoes are nearly fully cooked be the most practical method? Legitimately asking.

    I remembered my first time ate this when my late mom in law was in the hospital in Edinburgh (I’m Asian) the lady next to Mom was so nice and lovely, she said to me my daughter in law is Spanish, she’s really a good cook, here try her omelette. I was actually shocked how good it was, without hesitation I was asking for some more 🙈🤣🤣 I hope that lovely lady still alive and well. It was around 9 years ago. I still remember the taste, best omelette I ever had in my life.

    Me, as a Spaniard, have to say I expected a messy tortilla but in fact this is an almost perfect recipe!!!
    Just take into account a few things:
    -After frying the onion and the potatoes (together or in different pans), take care of remove the excess of olive oil (you can use it later to oil the pan before pouring the mixture in there)
    -If you want a solid inside of the tortilla you should cook it low heat and turn several times, so the exterior doesn't burn. If you want a Semi-Liquid interior, you should do it Medium-High heat less time.
    -I highly recommend to use smaller and taller pans (but always round). Spanish tortilla taste better if it's a little thick, specially if you like a medium rare inside 🤤
    -The scary part: the turning of the tortilla. If you are a beginner, I recommend using a plate slightly smaller than the pan, so you can press it against the bottom of the pan. It's safer, believe me.
    -Take into account that not everyone who likes Spanish tortilla loves onion (as the original recipe doesn't have it), but I think is delicious (in fact there is a true war about this in Spanish trivia conversations 😂😂😂)

    Soy de España y nunca he visto a nadie hacer la tortilla de patata así... Yo me incluyo. Lo primero que hay que hacer es freir la patata, es importante cortarla en cuadraditos para que no quede apelmazada. La cebolla es algo opcional ya que hay gente que le gusta sin ella, pero se fríe unos 5 o 10 minutos después de la patata, todo junto. En un cuenco a parte se baten 4 o 5 huevos ( sale una tortilla de 4 trozos más o menos) hay que batirlos muy bien. Sin que se llegue a freir la cebolla del todo junto con la patata, volcamos el contenido de la sartén en el bol grande de los huevos ya batidos. Removemos rápidamente todo y lo volvemos a echar a la sarten de nuevo todo. Si la sartén no tiene mucho aceite se le echa un poco. Dejamos hacerse un lado lo suficientemente capaz de hacer la forma redonda con una pala de cocina. Ahora viene lo más importante, darle la vuelta a la tortilla. Con mucho cuidado volteamos en un plato grande rápidamente la tortilla y la volvemos a echar a la sarten para que se haga de nuevo y listo! Eso sí es hacer una tortilla de patata

    This looks great. My mom is Colombian, the Spanish omelette she makes has tomatoes, onions and peppers.
    I just pour some of my favorite salsa in when the eggs are halfway cooked and I add shredded cheese & some Hot Sauce ❤

    For those of you who think there’s too much olive oil, know that it wouldn’t be a Spanish omelette if it weren’t cooked in copious amounts of olive oil. Yes it will make you fat, but if you’re concerned about the calories just make yourself a thin egg white omelette and use an olive-oil based butter substitute to keep the cholesterol down. It will keep you skinnier but it will never be as delicious as this!

      My Spanish husband used half a liter of olive oil making Tortilla Patata! 😅 but ofcourse he drains the oil and we re-use the oil for other things and darn! That oil smells and tastes so good with the flavor of the onion and potatoes on it

    Riquisima, yo también la hacía así siempre,,bueno con algunas diferencias, la cebolla la pongo en la sarten después de las patatas, los huevos los bato primero y luego lo mezclo, no le hecho tanto aceite y tampoco la tuesto tanto ,me gusta más jugosa por dentro, pero un día probé a añadirle un poco de ajo cortado en laminas y ahora ya no puedo comer la tortilla, sin ajo y cebolla.
    La verdad es que evidentemente te tiene que gustar el ajo ,pero si te gusta le da un punto muy rico, jeje 😅

    The word "tortilla" means two different things, ie. two types of food depending on which side of the Atlantic Ocean which you reside. If you ask for a tortilla in Mexico, you'll be getting a corn chip, and they are usually a snack food. It would make better economic sense to buy a bag of tortilla chips. However, if you ask for a tortilla in Spain, you're up for something more substantial. It's an omelette, and it's eaten most often for either lunch or dinner. It's what we in North America refer to as a Spanish omelette.

      Olive oil makes the omelette 10 times better (trust me), but consider that the potatoes are somewhat drained after being fried and most of it stays in the pan.

    Add salt to final mix and taste prior to cooking to yield perfect seasoning in final dish. It is better than sprinkling salt prior to eating on the frittata. Great video and simplicity !! Bravo 👏🏼

    А рецепт... наши мамы, бабушки, пробабушки и т.д. всю жизнь так делали. И к Испании отношения не имели!

    La tortilla de patata española lleva
    PATATA
    CEBOLLA ( opcional )
    HUEVOS
    ACEITE de OLIVA y SAL
    No hay que freir la patata y la cebolla sino pochar al mismo tiempo a fuego lento.
    Así me lo enseñó mi madre.
    Todo lo que se agregue a la tortilla de más esta muy bien pero entonces no es una tortilla de patata española.
    Tengo 81 años os podeis figurar que he hecho muchas.

      @@Rieras on that note, I saw a different video where the guy specifically said use 400ml of oil. I'm glad this one uses far less. Most of the oil, he put back in a pot to use another time.

    When cooking an omlette I have never thought of adding the ingredients to the egg in the bowl, I always add the egg to the frying pan. I must try doing it your way..

    For those being so scared about the amount of olive oil used here. Friendly reminder: extra virgin olive oil is one of the most heat resistant oils in the world, what allow us to cook with it avoiding its transformation in unsaturated fats. Here in Spain we use it for almost everything, both for cooking and eating it raw with salads or whatever. Do not be afraid of using good ingredientes. Ultraprocessed food, sugar, white flours and low quality fats are the enemy, not AOVE (aceite de oliva virgen extra).
    By the way, first time I see on the internet a proper recipe of a Spanish omelette made by a non Spanish!! A little bit more thick would be nice hehe.

      You are absolutely incorrect- olive oil, although very healthy, has a low smoking point and does not tolerate high heat. If you insist on higher heat, use high smoking point oils, such as avocado oil or grape seed oil, as they have a tolerance for higher temperatures- aka a higher smoking point.
      Also, please not the wise knows, for eggs, ‘go slow and low, otherwise you ruin the texture, flavor, and remove all of the nutritional value from your food.

      @@MrWphilips you do realise that you are cooking the eggs when you add the hot potato/onion/oil mixture and let it sit for 15 mins, right? That's why you go high heat and then low for such a short period of time.

    Spot on! When I am outside Spain and I want to impress someone with my cooking this is the way to go: you can find the ingredients everywhere in the world and it is soo much better than the sum of their ingredients. Sometimes I like it a bit runny on the inside, but no one can say this is not a traditional spanish omelette. The problem is that you just ignored the most important conflict withing spaniards: "concebollistas VS sincebollistas"

    I’m Spanish, I use to cook a lot and in a very good way Spanish food. I must to admit that this Spanish omelette is the best version that I have ever seen in CZcams form a not spanier. The only “but” that I have to say is the pan size. You should use a smaller one in order to get a thicker and juicier omelette. Despite of that, this omelette would be made by a spanier. Proud of you!

      Nope. You DON’T actually eat all the oil used to cook the potatoes. You just take the potatoes and onion out of the pan draining all the olive oil, (you may keep that oil for any other cooking, olive oil can be used several times without loosing its properties), you don’t want oil into the tortilla. Then, you don’t need to put as much olive oil to cook the mixture of eggs and potatoes as shown in the video, but just a few drops are enough. In fact, if you put as much olive oil in the pan as the video shows, you may get burned when turning around the tortilla due to drops of boiling oil falling on your wrist, that’s the most difficult step not shown in the video. And don’t cook the tortilla as much, tortilla de patatas is better if eggs aren’t fully cooked. Don’t eat it right away, leave it cool off for a few minutes.

      That's silly. You don't eat all the olive oil where you fried onion and potatoes. When it's done, you take it out and put it in a basket like you do with French fries. Oh, BTW, olive oil is far healthier than other greases you use, like butter for instance.

    Como consejo sería bueno batir el huevo antes de echarle la patata, así no se aplasta la patata. Luego (esto ya es para gustos), queda mucho más jugosa la tortilla si no se fríe tanto tiempo, así no queda tan seca 🤗

      At my village in India we have freshly made "makhan" (butter) we eat with roti (bread) and the butter doesn't sit atop of the bread but rather the bread floats in the sea of butter on your plate :D

    As a spaniard I totally approve this.
    We just cut the potatoes a bit bigger and slimmer, and remove all the oil from the onion and potatoes with a colander as others have said.
    Never left all rest for 15 mins but that seems like a very good idea.
    Also, like a french omelette, the godly point of the tortilla española is almost raw egg inside.

      @@veronicahuerta1850 As far as tortillas go we have this and the french omelette. Maybe you had Huevos rotos/ Huevos estrellados? That's when you lightly fry some potato slices then add some iberian ham/fried chorizo/fried morcilla (only one of those) and finish it off with a couple of fried eggs on top. As with all spanish cuisine, eggs must be fried in oil. Then you break it all (cut it) just before you eat it, hence the "rotos" (broken)

    A few changes. Use a Spanish onion, and add it to the pan after the potatoes are nearly done. Beat the eggs in the bowl before folding in the onions and potatoes. Optionally, add some diced prosciutto to the mix. Then season the omelet with salt, pepper, and parsley before adding it to the pan. Serve with chilled fino sherry.

    Just made this tonight. I used 7 eggs as the mixture seems a bit thick at first, and it came out great.
    Absolutely delicious. Always wanted to make this over the years, glad I did.
    Make sure you have at least a 12" pan... or 14". And salt it well unless you are on a sodium restricted diet.
    Last tip is the pan I have (induction 14" Ninja non-stick pan) is heavy on its own and with the mixture even heavier. Instead of flipping the entire thing over I slid it out onto a big plate and then carefully tilted the plate and pan to flip it over with no problem. Make sure it is somewhat set on top before doing this or it could be messy.

      Spanish omelettes are best done on thick pans or skillets anyway so using the dish and flip trick was totally the way to go.

      Olive oil containes omega 3-6. It is the most healthy oil you can put in your body and is good for your heart.
      But I'm sure you already knew that 😉...

    Hi Sophie from Spain. That looked delicious. Personally, I would have added some herbs, especially sage which complements onion so well.
