Lemon Babalua is simple and delicious to make. It does not require an oven. It is a very refreshing summer dessert. Friends who have not tried it must try it.
Babalua is the transliteration of French bavarois and is a representative dessert in Bavaria. It is characterized by being based on English egg custard, adding gelatine and whipped cream. The most classic one is vanilla Bavaro.
What I made today is Lemon Babalua. It has the fragrance of lemon and tastes sweet and sour. However, the taste of Babalua is not very refreshing. If you want a more refreshing taste, you can add 125 grams of light balm in the formula. Replace the cream with 60 grams of yogurt and 60 grams of whipped cream.
recipe:
Biscuit base: 60 grams of biscuits, 28 grams of butter
Lemon Babalua: 2 egg yolks, 30g sugar, 200g milk, lemon zest, 2 lemon zests, 5g gelatin sheets, 125g whipping cream, 8g lemon juice
The most difficult step is to cook the custard sauce. It must be on a very small fire. If you don’t know your own fire, you can heat it up to 80 degrees by insulating water. Otherwise, if the fire is too high, it will turn into egg drop soup. If you make egg drop soup, you will fail and have to start over.
