Thanks for the advice, I'm hoping to do this with hornbeam or lime and I'm just not sure on whether a normal bare root tree (2m approx we were thinking) will naturally have the straight clear stem needed?

Close enough: the stem will be straight, and then you simply prune off unwanted branches to make it clear to the height you desire - just a few seconds work with a nice pair of snips www.ashridgetrees.co.uk/ultralight-bypass-pruners
