I followed your receipt for baigan choka, since my mom is out of the country and since my dad can't cook, I had to make meals for him. it was the first time making this dish and it turned out so well, that the following week my dad asked if I could make it for him again. Thanks so much.
@@manish2662 We call it begun bharta in Bengal and we use cold pressed raw mustard oil and mix tomatoes and coriander leaves. Indian food especially Bihari is the best.
Thanks very much for this recipe. As a matter of fact I subscribe to your channel and really enjoy all of your recipes. Keep up the good work and I wish you lots of success. You have been blessed with a passion for cooking trini food !! Thanks for sharing this passion with the world..
jean ambrose good morning ! so I tried it and it came out awesome. I think I needed a little more salt didn't have any chillies but I had the hot pepper. I'm going to do it again tom. thanks for making the video enjoyable and easy to follow. well done. looking forward to other dishes.
Really nice recipe. I also make mine like this except I never put chilly pepper in the baigan to roast as well; but usually roast the hot pepper. I will definitely try roasting it with the chilly peppers in it next time since I love pepper. I also like this with hot sada roti :)
Thank you! I love a lot of pepper so that's why I like to stuff it with peppers as well. Try it, trust me you'll love it once you can handle the heat :)
Our ancestors came from uttar pradesh and bihar and other parts of India 🇮🇳 in 1838 by the British as a system known as indured servitude to guyana 🇬🇾, Trinidad 🇹🇹, Jamaica 🇯🇲, and other parts of the Caribbean as well as Fiji 🇫🇯 and mariturus. This is the dish that was brought by our ancestors and kept the tradition for 145 yrs
Will try this. My eyes started to water when I saw you crush the WHOLE roast pepper in addition to the bird pepper. Looks delicious but oh soooo HOT. I not able, I will leave out the roast pepper but put in the chillies. Thanks.

my favorite side dish with roti
I usually wrap mine with foil when I do it on my stove so I don't make a mess all over the place. Same results. Nice videos.
+emtdyal1 I used to do it, but I find when it gets the direct heat, it has a different flavour. Thanks for watching :)
Cover the stove around the burner with the foil and toss it when you're done to avoid the clean up AND get the flavour!

Really nice recipe. I also make mine like this except I never put chilly pepper in the baigan to roast as well; but usually roast the hot pepper. I will definitely try roasting it with the chilly peppers in it next time since I love pepper. I also like this with hot sada roti :)

uttar Pradesh and Bihar. In India mustard oil is also added in this.
Bengal also. Only we call it begun bharta.

How are you today? I like how you infused it with garlic, I bet it would be good with rice or roti.

Baigan Choka is also a popular Guyanese breakfast dish. 🇬🇾🇬🇾🇬🇾🇬🇾
If u don't have a gas stove what do u do
Shallots / Whole Roasted Tomato - sliced / Drizzle w/olive oil / melt in 1 teaspoon butter (margarine) / fresh ground black-pepper / Garnish w/parsley.
Hi you don't heat oil with garlic and throw over eggplant it's nice like that too
Will try this. My eyes started to water when I saw you crush the WHOLE roast pepper in addition to the bird pepper. Looks delicious but oh soooo HOT. I not able, I will leave out the roast pepper but put in the chillies. Thanks.
