      Erma Archer Hi Emma. You certainly can. Add the rinsed and drained, shredded salt-fish (squeeze out water) to the hot oil, cook until brown, then proceed with the recipe. Thanks for your question and support. 💕

    Blessings Ria you and your family ,love it I did recipe for lunch Sunday for me and my husy my children don't eat it ,so it was double cooking for me ,it is so good to eat something veg instead of all that me my children are meat mouths😁 ,I love the way you keep our dishes alivein a foreign land thank you , keep doing what you are doing .

    I love your channel, and also your garden! I too, planted a bigger garden this spring, and we have been cooking everything we planted, all summer, thus far! I have made jams, pickles, and frozen a large freezer of fruits and veggies!
    I planted baigan, okra, tomatoes, squashes, peas, green beans, onions, potatoes, shallots, bok choy, hot peppers, beets... I think I got carried away actually 😂
    I especially love your"sada" roti episode. Thank you for the very clear, and easy to follow recipes. I have made so many rotis in my younger years, that I had stopped when I got older...You have given me back my mojo lol. To roti and beyond!!!

    That's some hardcore cooking! Growing your own stuff! If your diet allows, use ghee instead of oil, and chadon beni (culantro) rather than chives. Great job👍

    Awesome Ria. As an Indian and having a huge respect for my fellow Trinidadians, allow me add few basic spices. So once we have washed and cut the baigan/aloo, I will add a spoon of HALDI/TURMERIC to the baigan/aloo and mix it well in a bowl. Then when the oil is hot, I will put half-spoon of SUGAR which will change the color of the oil to golden brownish type, then will put few JEERA seeds and add the baigan/aloo and fry it for few minutes till the aloo starts to get a golden yellow color.
    But thank you so the simple and awesome baigan/aloo.

    Ria I made this recipe today and it was delicious. My family enjoyed every bite. I did not make the roti , I substituted roti with flat bread. Yum.

      carolyn cruckshank Organic soil from Home Depot mixed with with regular soil. No sprays whatsoever. Despite being upset that ‘something’ cut the stems from all my green beans, I was quite satisfied with whatever they left for me. Sharing is caring(until next year). 😂💕 We did install the fence to keep out the deer. 👍

      carolyn cruckshank Hi Carolyn. Thanks! Other than setting up the raised beds and filling the soil, it was very easy after that! Took 3-4 months to start enjoying the fruits of our labor! It was very rewarding and I am already looking forward to doing it again next Spring!
