    For those that posted negative comments, I followed the video, made these last night and they came out wonderful, not even a leftover after my daughter started eating! So apparently, she is def doing something right if she can teach an Irish/English American woman who has never attempted to make these and they came out perfect!!

      What happens if I put too much baking soda in the channa? How can dilute it?

      If you realize it at the beginning, you can strain off the water and add fresh but if you're at the end, it's probably going to add an off flavor to the channa. Not much you can do at that point except start over.

    Hello Taste of Trini!
    I just made doubles using the recipe you shared. I must say the bara was soft and simply delicious, it was too tasty and just not enough (albeit tripping the recipe ha!).
    I also did the channa, unlike other recipes, yours did not have onions, garlic and oil. This was kool.
    I do not live in Trinidad, so it was refreshing to find this recipe provided by you - a humble soft-spoken and generous lady.
    I urge you to utterly ignore any and all negative comments, for your assistance is much more helpful to those with sense.

    Both of my parents are Jamaican so I've never ate doubles before but I've heard of them. I've tried a roti before. I'm giving Jamaican food a break so tired of it and I need to try something new. I'm so glad I came across your channel because I want to try cooking foods from other caribbean islands, thank u so much this looks so good!

    Ever since my childhood I have loved Indian food we make in Trinidad. Love Indian weddings and enjoyed Divali more than I did Christmas. Doubles was one of those foods I did not understand And took a while before I tried it out. If you grew up in Trinidad in the 80's and 90's where there was a lot more racial, cultural and political tension in T&T you would know what I mean. A kid no more and not susceptible to mo-vay-lang I started eating Doubles and lets say the rest is history. I tell all my international friends,Trinidad and Tobago is where food goes to get its flavour and this recipe is right up there with the best. I love how thorough you are with explaining what you do and why as well as what results to expect. Thanks for sharing!

    OMG... I am so excited about your channel... I am originially from Fiji Islands and our food and traditions are 99.9 % same as that of yours.. including the recipies, prayer traditions and family customs. Ancestors are from different parts of India but we were taken to Fiji during the same time your ancestors were taken to Trinidad... Fiji is my home... and I love to eat and travel... Keep the good work of all the vids, just love it.

      this is just puri and chole we have in India like 1ce a week. The only diff we don't use yeast in any indian flat bread unless its naan, which is Persian in origin. i think this is a trini version of indian chole bhature,

      Ashani Chand we were all taken from Bihar, Uttar Pradesh & Madras. Trinidad 🇹🇹 Guyana 🇬🇾 Suriname 🇸🇷 Jamaica🇯🇲 Mauritius 🇲🇺 & Fiji 🇫🇯 are all Bhojpuri people.

    Greetings!....this is deconstructed version of traditional chhole bhature dish which originates from northern part of India.

      Hi! Yes, it does have Indian roots. My ancestors were from India. The Deen family in Trinidad started selling their own version of chole bhature and used the local spices and fruits to make condiments. They called it a "single" at first with 1 bara or flatbread with channa and condiments. Then, someone asked go double it up and that's how the name doubles started 🙂

    I have been wanting to make doubles FOREVER & I finally made them tonight. Of course I used your FANTASTIC recipe & even my son whom it is very difficult to get him to eat ANYTHING vegetarian loved them!!! Thank you X's 1.000.000.     You are a fantastic Trini chef/cook. I love watching your Trini cuisine dishes. You are so young to be so accomplished , so I imagine you learnt your skills from helping your Mum in the kitchen from a very young age.
    Just a little advice. In the U.K. it is very hard to get fresh Chandon Beni leaves or even dried culantro seasoning. Some wise Trini should work on making this available to Trini’s in the U.K.
    Thanks so much for your terrific channel. I am grateful for your delicious Trini cuisine dishes.
    I was born in Trinidad but our family came here since 1956 as children. I am now 75 years and was blessed with a great granddaughter in January and a great grandson in February 2022.
    I intend to teach my great grand kids Trini cuisine and I hope they will carry on the legacy and teach their kids. Viva sweet T&T. Please don’t stop your channel.

    Thank you Trini, your recipe was on point...I live in New Mexico and i have no ethnic Caribbean foods here besides mango. I made doubles the other day and followed your recipe and they came out BOSS okay...I had fresh seasonings made for this and it came out PERFECT!!!     my favorite ting... ty I like your version I like the different toppings so you can try different things... girl I'm scared about the Barra because once I tried to make Roti for me and a friend. well talk about laugh till yuh almost pee yuhself? the thing was hard like Frisbee she flung across the room and it took off and crash against the wall.. well look here we fell on the ground laughing.... anytime someone bring up making Roti we start laughing...btw I'm one of your new subs. 😂😂😂

    Recipe is excellent I make these all the time I can’t wait to try your other recipes.😋For the Channa I used can chickpeas which is not the traditional way but it tasted exactly the same. I just added my green seasoning and a little bit of water and spices.

    I have viewed several of your recipe and i have enjoyed looking at all! You made them appear so simple. I am still to try a few of them. One thing though, I love doubles with that "burnt" taste, you know the dark brown areas on some doubles, yet it is soft and delicious..........

      +Taste of Trini There's similarities for example peas and rice. But there's major differences because The Bahamas doesn't have an Indian population.
