The ULTIMATE Trinbagonian DOUBLES Recipe | Street Food at Home | (Detailed Recipe)

    Doubles is considered the ultimate street food in Trinidad and Tobago. With humble beginnings, Mr. Emamool "MamooDeen" sold doubles from his freight bike in Princes Town in 1936. Mostly consumed by hungry indian indentured laborers on the sugar cane estate, it was considered "poor people food". Now, it’s a successful industry and doubles is enjoyed by people all around the globe! Mr. MamooDeen and Mrs. Rasulan Deen’s innovative minds and passion for cooking, created this perfection called doubles. What was a mean of income to feed their children and siblings became the most sought out street food, not only in Trinidad and Tobago, but around the world. It started as a bara with chutney, which then evolved into a bara with channa and chutney, and customers started to ask Mr. Deen to double up on the bara, and so the name doubles was born. It consists of two fried flatbreads called baras with spicy, melt-in-your-mouth channa nestled on top. It’s then topped with condiments such as roasted pepper, cucumber chutney, sweet sauce, mango chutney (sweet sauce), kuchela, coconut chutney, and that’s just to name a few. You can choose the amount of pepper you want- slight, medium or heavy. Doubles is a cousin to the popular North Indian dish, chole bhature.
    Doubles is usually eaten for breakfast, but it’s an all-day favourite. I have a favourite doubles vendor for each time of the day (the obsession is that serious).
    Bara (Flatbread, Bhatura):
    This amount yields 35-40 baras depending on the size you make them.
    • 4 cups of All-Purpose Flour
    - 2 tsps salt
    • 4 teaspoons of Yeast
    • 2 teaspoons of Brown Sugar
    • 1 teaspoon of Baking SODA
    • 2 ½- 3 cups of Lukewarm Water (must be warm for the yeast to work)
    The amount of water needed varies based on the humidity of the environment.
    • 2 tablespoons of Oil + more for frying.
    *Always store bara dough in a warm place (oven, microwave, kitchen counter etc.)
    Channa (Chole, Garbanzo Beans, Gram, Chickpeas):
    • 3 cups of Dried Channa (Kabuli), soaked in 5 cups of water and 2 teaspoons of baking soda
    • 1 ½ teaspoons of Baking Soda (initial boil)
    • 1 teaspoon Baking Soda + ½ cup of Green Seasoning + ½ teaspoon Turmeric + 1 ½ teaspoon Roasted Ground Geera (Cumin) + Salt
    • ½ cup of boiled and pureed Dhal OR 2 medium Potatoes/Aloo, boiled and mashed OR remove some channa from the pot, puree it and add it back.
    Pressure cook soaked channa in 4 cups of water for 40 minutes or 50 minutes if it wasn’t soaked.
    After it is pressure cooked and the liquid dries out, add 3 cups more water.
    * Baking soda tenderizes the channa, melts the skin and it also gives the channa that distinct doubles flavor. That’s the reason for adding it in layers.
    Wrap baras in paper towel or tea towel and foil and store in a freezer bag or airtight container in the fridge. Reheat in a wet/damp paper towel
    Reheat baras in the oven also. Wrap tightly in foil and place in the oven at 350F for 10-12 mins.

    Hello lovelies!
    I'm writing because I've noticed lots of comments here in the past month.
    Here are some tips to ensure that your doubles-making process goes well.
    1) Use All-Purpose flour for the bara. Country Pride works well.
    2) If you like yellow bara, omit the baking soda and use yeast alone with turmeric. DON'T use baking powder (it makes the dough heavier-unless you like it that way).
    3) If it's very hot, then the dough will rise quickly. You can also knead it overnight and leave it in the fridge and fry the next day. Ensure that it comes back to room temperature.
    4) NO canned channa! You won't get the doubles taste that you want.
    5) If you don't have a pressure cooker or InstantPot, boil on the stove for about 2 hours until soft. For me, a pressure cooker gives the best texture! I put my soaked channa in the InstantPot for 15-20 minutes and the end result is creamy and nice.

      FYI…I follow your recipe and it is by far the best ever…the closest to the real thing (side of the road 😆) But I do use canned channa and it comes out fine and tastes great!

    I am an African American married to a Trinidadian almost 20 years. I’ve been to T and T many times over the years and had doubles all around the airport, Debe, Williamsville, Marabella, Princestown and Chaguanas to name a few. Unable to go to T and T due to Covid 19 we started making our own six months ago yet today we made this Recipe after trying your other two recipes...Ultimate I and Ultimate II. This one was the best...the key was 100% baking soda and I used oil that had been used once so they were golden brown rather than yellow. If I closed my eyes when eating them you would have thought I was standing in the HiLo parking lot in Marabella!

      I told my son earlier that I've been watching several people making doubles and they're all similar with the exception of you making the coconut 🥥 chutney with is different. It's a lot of work from what I've seen, but, I'm going to try to make it one day when I don't have any doctors appointments.

    I have to give credit where credit is due. This tutorial was easy to follow and the results were exceptional. I attempted doubles today for the FIRST time. The bara was soft, thin and delicious.     I used to live in the area. I moved far away but I used to buy doubles from Singh's Roti Shop on Liberty near the Van Wyck. It was a small shop at the time. I know they moved and expanded to a bigger place. An old friend who was from Trinidad turned me on to doubles and said Singh's was the best in the area. I miss them so much so I need to make my own now. Thanks for sharing.

    So I've watched a few of these videos and some people use baking powder instead of baking soda and some use neither. Some omit the tumeric while others adds it. For the channa, I saw some use curry while other omit the curry and use both Geera and amchar massala and I saw you omitted the curry and amchar massala. I'll try this recipe next time. I like the colour and consistency of your channa and also the bara.

    Congratulations on your 4th anniversary, , and I tried this doubles recipe this morning and omg it was fabulous only thing is it wasn't enough cause although it is quarantine time ,,, I live in a surrounding of family members so everyone got a taste and they all liked it..

    Thank you… I haven’t had doubles since last 10 years😱I used to visit Ft Lauderdale regularly And used to go Joy’s roti shop in Lauderdale hill. If any one know that area. I am Indian born amd my husband is Jamaican. I love West Indian food. We vegan/ vegetarian and enjoy all varieties of dishes. Mouth watering recipe. I must try make it. I make chana and bhatura regularly . Thank you

    I grew up with Dean doubles in San Juan market Saturday mornings in the early 1980’s. They were heavenly doubles to me.

    Wow, only 4 years? It seems like to me like you have been making these mouth watering videos for a longer time! Congratulations!!! And thankyou keep them delicious recipes coming for many, many more years to come! My young grandaughter and I would watch your recipes together late at night when we got hungry for Trini foods and drool over it. Your videos as well as a few others, got her interested in making videos, and now she just started a channel on YT about having outdoor fun etc at the parks especially The Disney Parks. She is young and still new at this

    Thank you for great videos! I went to Trinidad on a mission trip to Diego Martin and fell in love with the country. I loved the food so much I bought a cookbook and have tried to recreate some of my favorite dishes. I ate doubles a lot while I was there. I plan to use your recipe and try to make these soon.     Hello I have used your doubles and it has always being a success!!!
    Yesterday I made them again but the doubles came out red 😀
    I could not understand why, but just wanted to share that the dough was yellow, but changed to red. The baking soda reacted with the tumeric 😀😀😀 but it was delicious!!!

    Followed this recipe and it came out boss! Like real vendor doubles but fresher and better because homemade. I made the full batch and me and wifey eat it steady every meal till done. Delicious!
