    My Channa recipe for doubles
    2 tins of chick peas
    3 to 4 cups of boiling water
    1 tbsp baking soda
    1/2 cup of dhal / split peas
    about 2 cups of water
    2 garlic cloves
    3 tbsp of vegetable oil
    1/4 small onion
    3 coves of mined/ grated garlic
    1 tbsp of curry powder
    3/4 tbsp roasted geera powder
    1 and 1/2 cup of water to cover chick peas
    1/4 cup of cilantro or 1/8 cup of chopped up culantro

    My first time making this and it came out so good and tasty. It cooked so fast too. I used a half cup of dried chick peas and I was surprised how quick they broke down with that baking soda trick. Nice lil pot of rice and my lil baby and me had a nice dinner. Thanks for sharing!

    Thanks for this recipe!! I've always wanted to taste doubles...I have friends that lived in Trinidad and they always spoke about how it was the best "street food". I'm from the Bahamas, so I'm not new to these flavours and spices. Thanks for this recipe...I made it today and the pot was empty in mins. It was awesome. I didn't have just cilantro, so I added a tbsp of homemade green seasoning I had in the fridge.

      Yes exactly my grand father used to add dhal to his channa as well. He used to sell doubles in Trinidad when I was growing up. The younger generation don't know about this.

    That looks amazing, I'm from Michigan, Detroit and the only place to get doubles are in Windsor, Canada which take 30 min to go to and then you have to find a Doubles shop 😐😯😕 thank you I will try it.     Whats the purpose of the baking soda? And if i dont have can i use baking powder?

      The baking soda does a few things. With baking soda, the chick peas become nice and soft with less cooking time. It also releases a froth from the chick peas giving them a cleaner taste. Lastly the baking soda does give it a slightly different flavor.
      With that being said, if you dont have any baking soda its ok. You may have to boil it a little longer to get the right softness but will still taste good.

    Just found your recipe, is the 1/2 cup of daal in the ingredients dried? I saw that you boiled a lot of it but only added a spoonful to the Chana. Is it a half cup of mushed daal to add or do you add all? Thanks!

      Onike Cauldero really I have been watching TV video n scared to make it but it looks so good I was tried everything besides the dhal cause other videos didn't use dhal but didn't like it should of tried your way I feel these vendors in Trini tried this method cause no way my method look like this her method looks like them real doubles people in Trinidad am gonna try this dhal

      @@shaniajones4923 i tried it using dhal jus as thus recipe said. I had no idea that was used. Im thinking its the secret ingredient that the vendors use as it is the right consistency. I made it previously without dhal..( it wasnt as good..lol)

      Judith Legendre to me the dhal is necessary, it really gives the channa that distinct doubles channa flavor. I know that traditionally they did add it to the doubles

      Kayy it adds flavor to the channa, like the channa you get from doubles is different from channa and aloo, also it helps tenderize it

    When sodium bicarbonate is added to water, it transforms into carbonic acid, and the carbonic acid then breaks down immediately into carbon dioxide and water. All you're left with is sodium ions, which doesn't change the pH at all. I'm struggling to figure out how the addition of baking soda does anything at all. (I can see that it does, but I'm wondering what the actual mechanism is...)

      Believe it or not you need it for the flavor. Without it there is a huge difference. Atleast to me

      If you can find ground cumin..they're pretty much the same except this is roasted
      .cumin is much easier to find
