Ingredients:
8lbs oxtails
10 -20 dried chile pods, seeded and de-stemmed (I used guajillo, ancho, and arbol)
6 C water
1 cinnamon stick or ground cinnamon
5 bay leaves
1tbs cumin
1tbs dried oregano
1tbs dried thyme
2tbs paprika
1/2tsp ground clove
1 tsp black pepper
1 large yellow onion, chopped roughly
3 Roma tomatoes
10 large cloves of garlic
1 1/2 tsp kosher salt, to taste
4 cups of beef broth
Cilantro paste
Corn tortillas
Quesadilla cheese
Mozzarella cheese

Hehe and you can say: “beer-ree-uh” to pronounce it. Lol I can’t roll my R’s so I know I don’t pronounce it the full way either but you can skip that and just say ^.
