I don't believe that the 9 Egyptian Gods got their Stand while meeting DIO, they just received their names. Makes sense, since Enya probably names the other Stand Users, and then DIO decided to name his servers Stands as well, since they didn't have a name, because Vanilla Ice and Kenny G had band names, so probably they just named their Stands themselves

Atum was ahead of its time in terms of stand design. It has a robotic humanoid appearance, which really only became a thing in late part 7 and part 8. And its probably my favorite stand design in part 3.
The reason Daniel D'Arby doesn't have a soul-reading ability is because, at his core, he wouldn't want one. For him, it's all about the thrill of gambling. Yes, he cheats; that's part of the game for him, and he enjoys being challenged, so a soul-reading ability would remove the fun. Terence D'Arby gets the most thrill not from the challenge but from absolutely crushing his opponents, hence the soul-reading.

Do have to point out however, both the D’arby brothers were born with their stands as mentioned in “Over Heaven”. I know the novel is not cannon but it makes a lot of sense as to why both brothers are so experienced with their stands.

The other Darby could have just asked jotaro if he was getting help from Joseph then he would have been able to read the pitches via reading Joseph’s soul.

I’ve noticed a flaw in most of these videos. You suspect that most of Dio’s Stand Users got them from the arrow, but that couldn’t be possible for the Darby Brothers for example, because it’s been proven by both that they’ve used their Stands on other people years ago. People can be born with a Stand you know.

Out of both D'Arby brothers, Daniel has the better episode and is one of my personal favorites as a villain but I would definitely pick Terrance's Atum over Daniel's Osiris any day of the week if I were forced to choose. Osiris seems to be quite limited when compared to Atum, for example: It seems that Daniel D'Arby's stand can only manifest to collect a soul when his opponent has lost a game while Terrance D'Arby can manifest his stand freely and, there's also the soul reading ability that Osiris does not possess. The other thing is of course the designs of each stand. Osiris is big green and ugly while Atum is Athletic and futuristic looking with the more appealing white and pink color scheme. I think Atum looking more robotic is Araki trying to show Terrance's connection to technology/Video games, a newer form of games while Daniels stand just looks like a spirit because he plays games that aren't really used with technology... Basically Daniel D'Arby represents traditional games and Terrance represents the future of games.

In order to cheat a cheater, Terence deeply want to be able to read his opponent's mind and thus develop his soul-reading ability. On the other hand, I don't think Daniel will gain a similar ability because he loves the thrill of gambling more than anything and thinks he can outsmart anyone he encounters. His gambling addiction is so great, it explains his non-interest on having new powers and his high intelligence to detect cheating techniques and to create cheating techniques (Jotaro's testimony).
Kinda disagree with you saying Atum would be bad in a close ranged fight because it makes no sense to me how he was strong enough to hold star plat down and state to crush Jotaros arm. Also he was fast enough to dodge star plats punch. But i know you might say only cause he predicted it. But if i was a snail and was able to predicted a speeding car crush me it wouldn't mean I'd dodge it lmao.Stand stats in part 3 are horrible especially for yhe villians because they focused on making Dios stand stats look powerful lmao. Darby would possibly gain Soul Reading, not only because both brothers had their stands long ago, as said by other commenters already, but also because Daniel's personality doesn't reflect such attitude... Daniel is a hardcore con artist and cheater, and so having a stand that can determine absolute truth won't makes sense for Daniel... Also I prefer Atum as stand and Daniel J. Darby as my more favorite brother...
