It appears this was a demonstration put on by the local firemen. Thank you fire department for demonstrating what happens when amateur cooks do not investigate the turkey frying process.
If people weren’t idiots and understood how water/ ice reacts with boiling oil then they wouldn’t need a demonstration on why not to fry a frozen turkey…
The pot has to be big enough. After the oil is heated, the propane tank should be turned off when the turkey is put in. Once stable, turn the propane back on.
As others have said, this is likely a public demonstration of how badly it can go wrong for those inexperienced. You can tell they were expecting it to go bad since they had a firefighter with an extinguisher ready too.
They had the foresight to get decked out in fire gear, rig up a contraption to safely lower the bird in, have extinguishers on standby, and even keep the area clear, but not enough to check how much oil the bird would displace and act accordingly
Yea no… that just results in uneven cooking 😂. Lower the bird in slowly then once the oil comes back up you drop the burner down to the desired cooking temp. A 40 degree 20 pound bird sucks tons of energy out of the frying oil. With the burner off you run the risk of the bird sitting in oil not quite hot enough to kickstart the Maillard reaction. Which leads to an overly greasy and mushy tasting turkey. Even oil temperature is the key ingredient to a perfectly fried food. Fast food chains sometimes have intermittent stops for the fryer burner because its 50-80 gallons of oil for a tiny portion of food ( 95% oil to 5% food ) so you don’t need to waste energy evenly heating up that oil when the amount of food will only change the temperature by a tiny amount. Home fryer for turkey is generally 60% oil to 40% food so the displacement of energy lost from the oil from said food is dramatic and instantaneous.
If you dont want stuff to flash of in your fryer dry it first then rub cooking oil on it and put it in no spatter, also dont overflow the oil on the gas or stove.
If they'd have had a house to train on, they could have done the old, "two birds with one stone" thing. Did you notice how I avoided the use of the word, "kill"?
Been deep frying turkeys for over 25 years... this never happens if you TURN THE FLAME OFF before dropping the turkey. Even if it overflows gallons of oil it won't catch when relighting the flame.

Also turning the burner off as you lower the turkey in the fryer only disrupts the oil temperature and can result in uneven cooking. Fryer should be at a constant 400 before you fry, putting a 20 pound fridge chilled turkey will initially drop the oil down to 350 for the first 20 or so minutes. After which you drop temp to of the fryer to 350 for even cooking the entire way.
Well, technically had the turkey been lowered using a cable instead of a nylon strap, then the oil that spilled over would’ve just burned out. The frame looks like it is made out of metal so that should be OK. But I get the point of the demonstration in that people need to be aware of the potential dangers.
Yesterday I got that old feeling where I make my flesh do that nasty dance from the past. What a blast! I sure hope next season it doesn’t stop! Give me your secrets! It’s the only way I stay fed! And plus the faster it enters the more I get in return!
obviously a demo... but, why demo it with a full pot of grease? no one would really fill it up to fry a big ole turkey? why not show what will really happen?
Too much oil to where it is overflowing. Here’s a trick. Fill the pot with water first (with turkey inside) to make sure it doesn’t overflow over the sides. Then you know how much oil to put in. Also… TURN OFF THE FUCKING FLAME when lowering the turkey and this won’t happen if oil spills over
