    I personally would salt and pepper the chicken and leave it in the fridge overnight after cutting it up. I'd mix the pickle juice and the buttermilk together and add pickling spice and hot sauce. This kicks up the juiciness and flavor levels by 100 levels. The flour would get augmented with Everglades Breader and Everglades Fish and Chicken (awesome seasoning mixes made by Everglades Seasoning out of Sebring, Florida). Your version is a nice recipe for people who are just learning how to cook, I'll be sure to share this. For your version and 3 pieces, I'd probably pay $5, roughly 4 British pounds. I'd pay more if you gave me half the chicken though (I really love fried chicken!)

    I'd pay 3 pound a piece for it. KFC in Australia at the moment are doing 9 pieces for 9.95 on Tuesday at the moment. Your chicken looks way better than any chain store fried chicken.

    Love the series. The spice blend looks great. My only concern is the state of the chicken before brining. I clean my chicken so it's free of that yellow/orange nasty. But will definitely try this one. All the best!

    I was born in England and live in Maryland. Grew up in both countries. Traditional American fried chicken is usually considered ‘Southern’. Traditionally soaked in buttermilk for eight hours. The pickle juice brine is southern as well. Copycat Chic-Fil-A recipes use pickle brine.
    IMO the best oil to fry chicken in is peanut oil. Never nasty canola. I hate that aftertaste. Some people here use vegetable shortening (Crisco). A lot of people use Perdue $11 a chicken in MD. It’s not the fancy free range chicken. Most people can’t afford $25 a chicken for that.
    I haven’t had the free range chicken yet, I have had the beef. It’s very good! We also get our eggs from a farmer. They are everywhere here in MD. Chickens, goats, eggs, beef and lamb all sold from small farms here. Pennsylvania dairy products are absolutely delicious. I get whole milk buttermilk that comes from there. I use it for my biscuits and fried chicken if I can make it before my husband drinks it all.

    Great Vid John. I've never tried pickle juice for my brine, I typically use plain salt water. I will try your recipe next time. It looks delicious.
    I would love to know of some scrummy street food vendors in London next time I pass through on my way to Berlin/Amsterdam/Dubai.

    Just wondering cus we have two type of pickle cucumbers in Poland one of them are with vinegar and other one with salty water the question is wich one you are using?

      bulant24 Sorry it took so long for someone to respond, but in English, "pickling" refers to using vinegar to prevent spoiling. The salty water you're referring to is called a simple brine, not a pickling brine.

    i saw matty matheson do a video on this style of fried chicken. pretty much the same if im not mistaken. must be a really good recipe i guess. ddnt know they used pickle brine for fried chicken but if both of them used it in their recipes then it must be good.

    Olive oil will absolutely work for deep frying, but there really isn't any point in using it over something neutral like peanut oil.
