      So, Jamie, first: brining is never necessary to preparing poultry; brining is a lazy man's shortcut to keeping poultry moist, as when someone who cooks a turkey once a year relies on a salt bath. If you know how to cook poultry, you don't need a brine. Second, if you want to infuse the bird with spices and herbs, the time to do that is when you are marinating it in the buttermilk, although makers of fried chicken in America don't do that, they just use plain buttermilk; herbs and spices are added to the flour, which is where the extra flavor should come from - you got that part right. Finally, what is with all the bizarre sides to your fried chicken? I don't know where you have eaten fried chicken, but in America the dish goes with sides like mashed potatoes or potato salad, cole slaw, baked beans, macaroni & cheese and buttermilk biscuits. I know you fancy yourself a chef, but please don't screw around with American classics which you have clearly never experienced firsthand in an American restaurant or an American family home. I hate to say it, but one trip to Kentucky Fried Chicken would teach you more about fried chicken culture than you apparently know at this point.

    I have tried this recipe, really worth putting the time in processing the meat. Jamie is a conscientious chef who does give you all the secret tricks to delicious meals.

    This man and food are Gods gift to us. Been watching him since his naked chef days in that little apartment. Weekly episodes was my thing!!! One trick he taught that I have never forgotten and still use and people are amazed is the knocking a jar lid on a wall to open it. People think I'm amazing. Fan since 14yrs old, now 36

      You read my thoughts! Been so frustrated about all the fried chicken recipes having buttermilk in them! Can't get a hold of that here in Sweden, but yogurt I can do. Should it be diluted some how? It's much more thick than buttermilk seems to be!

    I followed it . Used rosemary instead of thyme . And I made my own buttermilk from scratch . But it was the best fried chicken I have ever tasted so good I didn’t even need a side . I ate two drum sticks and I was full. The whole family loved it . Even my mom my wife my kids my brothers kids my sisters kids . The neighbor my dog . . . . Loved it ❤

    I planning to have this tomorrow! Brine done yesterday, buttermilk tonight, ready to fry tomorrow! Looking forward to trying it :) EDIT: so the verdict. It was too salty, FAR too salty. The meat was almost inedible, which was a huge disappointment after 3 days of anticipation. Jamie must sure do love his salt, because the brine just ruined the meat. It looked pretty good, but after the first bite it just wasn’t too good. I’ll be trying Chef Johns Nashville hot chicken next time.

      GamersComputer not fermented, just fully matured before harvest and then the outer husk removed. And yes it has a different flavor. KFC's unique flavor profile is attributed much to their use of white pepper.

    I followed this (almost) to the letter and have a few issues with the recipe. Don't just take the chicken out of the brine after 12 hours and give it a quick shake, like he says. It turns out too salty otherwise (and I'm not a salt Nazi either) Rinse it with water, pat it dry with some paper towel before you add it to the buttermilk. I've brined Turkey's in the past and had great results but I don't think the buttermilk made that much of a difference to the flavour in this case. You might have better results with yogurt like the Indians do with Tandoori chicken (it's also cheaper). The flour seasoning is also a bit iffy in my opinion (and I like spicy food) with the amounts of Cayenne pepper and paprika, you want this to taste like fried chicken not some spicy Hungarian eastern fried chicken. Add some white pepper and maybe some dried sage and oregano.

      PukkaFactor I agree with what you said, I just made it tonight and found it overly salty. I’m not the biggest salt eater, but I found this almost inedible. It’s a shame because it looked so good! I’ll probably have to try a different recipe in future. Feels like a waste of 3 days of anticipation! So disappointed!

      PukkaFactor I had the same issue.. Also, idk if it was because I used dried thyme, that brine was just too much, all I could taste was the marinade and not the chicken, like at all. And too salty, we almost couldn't eat it. :(

    The brine was too salty, even when adding more sugar than required. The result: over-salted chicken :(

      April Zarychta cook it through in the oven. Just fry it to crisp up the coating rather than cooking it completely.

      Because it’s illegal to cook fried chicken indoors, Friday & Saturday, in southern half of USA

    It is too salty! i recommend only adding 50g of salt into the brine. Also, try adding more spices into the flour mix such as cayenne
