  • Paddlefish or spoonbills have been on mine and my dads bucket list of fish to catch forever. We head to Missouri for a short trip to pick up a jet motor and thought we ought to try our hand at snagging paddlefish. With rain in the forecast and basically having pure luck my dad ended up snagging a good fish just before we had to head back to the ramp. This fish is one of the weirdest fish I have ever seen. They do not have any bones and the spinal cord is actually removed while cleaning. We took our catch back home to see what these fish tasted like. We cooked it a few different ways to really get the flavor of the fish. I hope you all enjoyed this video. I still have to check one of these guys off my bucket list.

    I live in East TN and we used to go to down to Rogersville dam and snag them. We call them (shovel bill). They run up next to the power plant to the warm water. The power plant is shut down now. So you have to go down river to fish for them. Some buddys and me used to go atleast 2or 3 times a week in spring till they started up the river. We caught a bunch. I have never ate one. But one my fishing buddies ate them and he said to soak it in (butter milk) or (beer) over night before cooking. But we caught some up to about 75 to 90 lbs. They sure are fun to catch. When they start to run up the river they look like sharks with there top fin out of the water. Its wild to see, they will swim on top the river and they will jump out the water to.     You have to have a mullet for a long time to compare Swordfish with Alligator Gar.

    I’ve had it 3 or 4 times...all fried. Back in the late 90s up until about 6-8 years ago, certain commercial fisherman here in NW MS were targeting these...just for their eggs. They were selling it to the Russians for caviar. We had several fisherman coming by my work giving away boatloads of these. The only thing they were keeping out of the fish would be the eggs. Pretty sure the restrictions have gotten tougher because the Asian carp are wiping these spoonbills out. The Asian carp are eating all of their food...both are filter feeders like you said. Just wanted to share my knowledge with y’all. Oh yea, you have got to eat them hot! If you re-heat them, tastes like mud! Great vid as always. Stay safe and GOD Bless!

    Soaking it in Italian dressing and smoking it like salmon is the best way that I have found. My little town is crazy when the spoonbill are running!

    We smoke the spoonbills on a cedar plank low and slow for about 5 hours. After 5 hours take cedar and fish out of the smoker. Season with salt, pepper, and rosemary. Then throw away the fish and eat the plank!!! It taste much better!!!!

    I HAVE SEEN A PADDLE FISH ONCE WHEN I WAS A PUP,(OVER 50 YRS AGO) .I WAS TOLD THAT IT TASTED LIKE DIRTY SOCKS AS A CHILD YOU REMEMBER THINGS THAT TASTE LIKE SOCKS..

    I caught 26 spoonbill in about 8 hours didn’t keep any all catch and release but was some of the best fishing I’ve ever done was a blast And I heard you need to soak them in salt water for a good time before you cook

    The eggs from the paddle bill is an expensive Caviar. I live in Arkansas and people use to set nets out on the Arkansas River to catch them just for the eggs.

    We snag lots of Spoonbills in Oklahoma. I’ve been told they stick their bill in the mud bottom , flip it up and filter mud through gills to sort out plankton, thus the muddy taste.

    Soak with lime and water for a few minutes and then rinse with water. Marinade over night in teriyaki sauce and season with Everglades fish and chicken when you grill it. Delish!

    We either smoke it or take lemon pepper a little bit of pepper lemon powder and some lemon slices then whatever else you want then bake it

    Mullet man I wish I knew you was coming up to my neck of the woods, I would have taken you and your dad. I’ve been 3 times this year and have put 31 “bills” on the boat. And yes you have to clean them very good, or they are just nasty, get rid of all the dark red meat, and soak them in salty salty vinegar water for a day, rinse and enjoy! Very good eating if they are cleaned right! Maybe next season we’ll work something out. My biggest so far this year was 73 lbs

    I love the videos and see what you think about spoonbill! I go every year and its a blast. We put it on the smoker it and its one of the best ways you can eat it. I definitly recomind it, you should make a video about it.

    In the ozarks area of Missouri we call them spoonbill. Popular spring time deal when they run up rivers. Still haven’t done it.

    First spoonbill I ever snagged here in Oklahoma was actually banded as well! It was missing the majority of its bill, and banded. Pretty cool!

      Grits and Glamour Lock #5 is where we go on the Red. Caught a few that weighed over 75lbs.

    Spoonbill here in western ky, we catch alot at Barkley dam and ky dam we soakem in ice water a few hours after we clean them and then over night soak in butter milk or apple juice and then fry them up hella good snack

    An old man where I live makes jerky with paddlefish and it was actually pretty good. As for what they are called I’ve called them both but depending on who you talk to a spoonbill is a duck not a fish lol. So I mostly call them paddlefish.

    When I’ve eaten the paddle fish, I didn’t care for it. It was battered and cooked in a deep fryer. Just didn’t care for it at all. Far, in my opinion, was 10 times better.

    I snag spoonbill every year in Warsaw Missouri.. grill it with lemon pepper its amazing.. another way is in foil with lemon pepper butter and onions.. its taste 2 gamey to fry.

    Smoked paddlefish is really good. I grew up in South Dakota on the Missouri River. I beleive that fishery has become very restricted for them since then. What did you find out about the tag?

    They are called spoonbills where I'm from in KY. Only legal to keep one one week of the year. The best fish ever to eat!

    I get your Pop's description, lol. Sometime I get the same taste from certain catfish. They breed them for Caviar now, and the roe is high dollar.

    I live here in Oklahoma we see spoonbill here all the time especially here at Eufaula dam I cought them on accident several times there catfishing but when I do go fishing for them we smoke them or grill on a charcoal grill them fried they taste fishy fried and after you pull them off the grill a little salt and pepper and butter

    we use foil and make a shallow pan and grill it in butter and garlic on the BBQ. Tastes good and helps it not to dry out.

    I catch them in the Red River below Texoma. We boil them in crawfish boil eats just like crab meat. We also make crab cakes from it. Best way I had it so far.

    Got rain!? Those 2 all bundled up n hunkered down on the boat ride back. Never seen that kind of fish before, crazy looking n interesting little guy with its bill n spinalcord n stuff. I looked it up n it has like 4 different names n the caviar is equal to sturgeon caviar in quality n luxury.
    Need an update on how the chickens, garden, Angel n Mini Mullet are all doing. Ole Mullet Sr is looking good, are those natural guns or he throwing some iron around?

    Alrighty.lol so me and an friend recently did the same thing, at the time, we have never seen or tasted a spoonbill. While shooting Asian carp in KY we caught a spoon and decided to take it back and cook it. We did it with Italian style bread crumbs, accent seasoning salt and slap yo mama seasoning and fried it. It left 2 picky eating kids and a pregnant woman wanting more.lol it was amazing

    Come up to MO during season and I’ll put you guys on some 50+lb spoonbill. You’re supposed to cut all the yellow meat off cuz that’s all fat, cut all the red meat off and then soak overnight in salt water. If it’s dry you cooked it too long. It’s supposed to taste like catfish but have the texture like chicken nuggets.

    I used to go to OK frequently to snag paddlefish all though highschool and college. I have eaten them. They are not my favorite. One night I was fishing there and two of my buddies showed up in a Luv pickup (remember them?). We caught our 5 fish each in a couple of hours and filled up the back of the pickup.
