This video is rich with culinary techniques. The explanations on how to master knife skills, seasoning, cooking assorted proteins, and plating were really enlightening. And special thanks for the emphasis on mise en place it's an underrated yet vital aspect of cooking.
Mise En Place is probably the most difficult thing, cuz a lot of us simply don't have the counter space to have all ingredients prepped. It's easy if you live in a big house with a large kitchen, but if you're like a lot of young professionals that live in apartments and want to make healthy meals at home, you maybe have 1-2 areas of cramped counter space, and otherwise have to balance ingredients on your electric stove. Combine that with the number of dishes you have to use to sort ingredients, which takes up sink and dishwashers space, also not at a premium.
i just introduced nick’s cooking videos to my mom because she said she wanted to become better cook. 5 minutes in and she’s already a fan😂

Been working in a kitchen for about 3/4 years now, got to a point where it began to get stale as I couldn’t really figure out how to move forward given that I work off a set menu and don’t really have the time to when I get home given the hours I work, your videos have been a godsend and this one specifically with how to develop more skills and how to better them hopefully making cooking fun again rather than just boring work! I genuinely want to make time to cook and eat a bit healthier now. Next step is buying a house so I don’t have to worry about waking anyone 😂😂👌🏽

Another safety note about the knife - if you have to carry it by hand from one station to another, always carry it underhand, with the spine of the blade against your forearm. Also, this is how you should hand the knife to another person if setting it down for them to pick up isn't an option. This keeps the sharp and pointy bits safely tucked away from anything you don't want to cut. I know it's extreme basics, but when it comes to safety you can't go over the basics too much.

I am a chef. In restaurants I have worked it at we take it a step further. When transporting a knife from one station to another we have to announce our presence to other coworkers who most likely have their back turned preparing food by yelling SHARP BEHIND.
Hi Nick, my mom makes a dish that is kinda like fried rice, but instead of frying it, she steams it, and she puts it in this order in the pot : cooked rice ( preferably rice from the day before that was stored in the fridge) on the bottom, sausages, peas and corn, and then cover the whole pot with a lid. After steaming, the rice on the bottom would get the same crispy texture and the rice on top would be soft. So when you did the butter and rice thing, it reminded me of what my mom makes. You make great videos and I hope you have a prosperous new year!

Im 15 amd thinking of taking culinary arts in college ( my school system allows me too) and i really appreciated his, because nick is my favorite chef on this app and it was great learning this form someone i dont mind listening to and actually wanting ti learn from
I started learning how to cook these past few months and I've made so many different but simple meals since then. YOU are the reason I really started to get into cooking and might pursue it as a career. I'm only in high school and we have great cooking electives available and a great culinary program once I'm a junior-senior. You're an inspo, man. Thank you
from personal experience i don't recommend anyone goes into the culinary career. The only way to be succesfull in the culinary industry is to own a restaurant (risky) or be a food celebrity/influencer. Most of the time chefs are stuck working t=in the back where your on ur feet for long ass shifts with no breaks. Cooking is definitly a skill you should learn but its extremley risky to pursue it as a career.

That being said, any career scales based on how much you put in. If you're passionate about food and restaurants you will own it one day. If you don't care about what you do you'll be average in anything that you do.
I guess it really depends on your personal ambitions. If you want to be the best you can be the best at anything. If you only want to be average look for something where the average has good working/living conditions.
Nick should also post his own video of how to select fresh fruits from a supermarket. I’ve been stuck on perfecting it for a year now. I had no culinary education either.

Big thanks for this video. Most of the lessons I already knew and have been using, but some of the stuff was really interesting. For me cooking is a type of meditation, because my work takes a great load on my brain and when I am cooking I can let it be free with spices, aromas, techniques etc.
I agree. When I feel a little depressed or anxious cooking takes care of it.
@@emmel4fun Same. Last year I grew my own chilies (habanero and cayenne) on windowsill and my foods now are mostly very spicy 🤣 This year I am thinking to grow some Mediterranean spices like oregano, basil and thyme. Taking care of plants also make You happier.
@@DubultaisT Sounds good. I've tried the small basil plants and they end up dying after a few months. I can kill an artificial plant.😒
@@emmel4fun it is not so hard. You just need to buy specific soil for plant You are planting (they differ in pH level and stuff) mixed with perlite or vermiculite, then depending on what moisture plant likes depends how often You water it. You can even avoid nutrients and get some result out of it. But with nutrients You will get better yield. Some plants like basil needs to be regularly pruned (basically You pinch some leaves for Your food while it grows)
I was going to suggest lard with the crisping of the rice but then you popped out the lard and i felt validated. This is a great cooking channel.

Good tips, Nick! 6:15 my worst fear is that this will happen to me one day while filming😭. You can easily get that crispy rice without using a different cooking pan or butter. After scooping out your rice from the pot, you will have left-over rice stuck at the bottom of the pot. Cook that left-over rice on very low heat for a few minutes, then splash it with a little bit of cold water to separate it from the pot, and finally scrape it with a spoon or spatula. It will come out nicely in one piece if you manage not to break it, although I do break it sometimes haha!

Whenever I'm cooking with someone my first piece of advice is always to just TASTE the food as you go. So many times a dish will taste off at the end just because it was only seasoned at the end, when it was too late to fix. season as you go and it gives you more time to fix the issue as well as making sure it's not over/under seasoned.

The seared rice at 8:30 is called 누룽지(noo-roong-ji) in Korean. (I think there are similar concepts in other Asian cultures. Let me know in the comments) One of my favorite childhood snacks is deepfrying the 누룽지 and sprinkling a bit of sugar. Brings back memories
In Iran we have something similar called "tahdig"
In english we would just call it crunchy rice, but in Colombia and other hispanic countries we call it concon or arroz de concon
We call it "Cơm cháy" here in Vietnam (literally "burnt rice").
