    This is why I like this channel. It tries to cover the depth and variety of Spanish gastronomy beyond what people would normally associate with "Spanish" cuisine: more than just tapas and paella.

      @ODSD77 You're missing the point. Recipes are inspired by location, culture, available produce etc. This dish was created by a Spaniard. It may not be a "classic" Spanish dish like paella but paella is not the only thing that's eaten in Spain like poutine isn't the only thing eaten in French Canada. Ingredients, like curd cheese might be found in other French Canadian dishes cooked at home, and that's the point - classic recipes most often start at home. Trust me, poutine was certainly started as someone's pre-hangover, late night food fest! I am ashamed to say that it is, now forever, associated with French Canadian cuisine.

      @@kimmyklo7848 If there is any turkish shop in the area where you live, you will most probably find a similar type of noodle as showen in the video. You can use normal spaghetti or linguini noodles, just brake them before adding them to the pan.

      Fun Fact: He was also a left winger in the Athletico Madrid youth system for 3 years. Known for his speed, graceful touches on the ball, ability to find other players on crosses, proclivity to chase down the ball and win it back on turnovers. Alas, he had to leave football when his grandmother became ill and he called upon himself to look after her which is the family way in Spain.

    As an Italian/American, these Spanish recipes fit right in. It's sort of like, an extension of incredible dishes that my Nonna forgot to teach me. His garlic zucchini is something that I now make on a regular basis, and these garlic noodles, look as though these will also become a staple.

    This is very similar to the Mexican Dry Soup, Sopa, that I grew up eating. We eat it with a flour tortilla. Yum. Yours looks great.

      In our family, well, kind of. Only we (my Mom) used CORN oil, both garlic AND onion, tomatoes or tomato
      sauce, and maybe topped it off with cilantro and not parsley. Also, NO SAFFRON, as it was too expensive.
      Other than that, JUST the same. *!!~

      My wife's family aren't too far from there - Puerto De Sagunto. I think we were wandering around Segorbe the last time we visited (sadly a while ago due to Covid). It's lovely around that area! Sorry about your Mum - dementia is horrible, takes them away whilst still leaving them there. I must get my mother-in-law's recipes from her as she is also getting very old and she is a fantastic cook. Food is so often evocative of people we remember

    Perfect! I lived in Valencia for half a year and traveled all over Spain and I really miss Spanish cuisine. And this is such an easy dish to veganize! I'll just swap cheese for nutritional yeast or some cashew based aged vegan cheese. Amazing recipe!
    edit: I also sometimes make tortilla/frittata type dish but instead of eggs I make it with chickpea flour and water mixture. It's not the same of course but with right ingriedients (black salt is a key to eggy flavour) and preparation it satisfies my tortilla cravings :)

    Happened to have some proper smoked paprika from a holiday in Andalucia, so I gave this a go. Fideos I had to improvise by breaking up spaghettini, and instead of saffron I did a few slices of red peppers. For cheese I did parmesan, and on the plate I added a few drops of lemon. The spaghettini turned out different from your end result (looked more like, well, broken spaghetti), but the flavor - GOOD LORD!!! - this stuff is out of this world! Thank you, this dish has firmly secured itself on our menu from now on. I'll try to at least get fideos to get a different texture but this will be a fixture in our lives

    It's very similar to a traditional Valencian dish, fideua, which is made with seafood and seafood stock. This looks delicious also and a lot simpler to make.

    OK the Goya noodles are a little bit thinner and shorter than the ones you have. The dish came out fantastic I wish I could send a picture, it is packed full of flavor. The only addition I made was a little bit of chili flakes for some heat. If anyone is from America and remembers Rice a Roni, this is an extremely kicked up version of that style. Garlic itself isn’t as garlicky as this dish is. No vampires in my entire neighborhood, I love it! Great recipe. “Update”, we love these noodles this is my fifth time cooking them now.

    Guess what I had for lunch today?
    I didn't have the right pasta so I broke spaghetti - I only had duck broth that I had just made so I used that instead - I didn't have the right cheese so I used parmesan - as I picked the parsley from the garden, I picked a little bit chives too.
    It wasn't exactly your recipe but it was good and your cooking inspired it! Merci!!

    We watched a documentary about Spanish food once, and they made this and my husband (an Italian) said “They are abusing the pasta!” So I asked him the difference between risotto and this and how billions of Chinese would feel about risotto 😅
    He didn’t say much after that 😂

The Marco Polo is probably part myth, I’ll give you that, but still references to Greek mythology or some odd transcript does not mean that pasta existed before that.

      @@mb7529 China was where noodles were originally invented, but several pasta traditions developed independently, and then influenced one another. In terms of the middle eastern influence, you're thinking of dried pasta, similar to spaghetti, but wet pasta and sheet pasta, similar to lasagna, was eaten with lentils in Rome. And we know this because of Roman authors like Cicero, not from mythology.

    I want to make this but I doubt I'd be able to find the noodles. Can I use cut up spaghettis with the same cooking time (11-13 minutes) instead?

      Use broken Vermicelli noodle's. Same thing. If you have any Greek or Turkish grocery store's near you they will have these type noodle/pasta.

      @@tilerman Aren't vermicelli a lot thinner? Afaik they're almost as thin as glass noodles, while the ones in the video look like spaghetti.
