Back in 2002 ..the egg white bread was called cloud bread.. there were revolution rolls and made with fresh egg whites.. now with access to egg white powder ..it’s much more convenient. Emerich’s recipe is another version of the original. There was an angel food cake recipe at the time as well.. and it was made with fresh egg whites. Even my non-keto family members loved the ‘Vanilla Cake’ as it was called back then.. I used a recipe by a young 16 year old chef.. Peter Pneuman.. had a delicious recipe for lemon curd.. my family couldn’t believe it was healthy for you. The old Low Carb Friends board was a plethora of recipes!
Learning about nutrition is almost addictive… I 100% agree! My husband doesn’t understand my unquenchable interest but reaps the benefits.

My husband watched me drop 65lbs on keto and decided to try it himself. Nili's bread recipes and her cookie mix went a long way towards bringing him over to Keto. I bake him sandwich bread every week and cookies every day or so. He has now lost 60lbs. Without Steve, Nili and a few others, we would still be very overweight, but more importantly, very unhealthy
I appreciated Nili's personal evolution story as more validation for "pragmatic keto" - we need to follow our own body's guidance and adapt as needed.

Nili is the best!! Been a subscriber for many years, since 2016??? Maybe early 2017?? Since I started researching Instant Pot. I learned how to use my IP from Nili. From there I have made many of her recipes. I have her book and she is a subscriber of mine (RIsa’s Kluttered Kitchen). I have a tiny channel compared to both of you. Hoping to hit 1000 subs by the end of the year. Anyway, nothing better than an interview with Nili!
I’ve made several versions of Nili’s bread. I agree the Butter Buns are awesome as are the olive-rosemary rolls. Amy’s Hawaiian buns are very good. I love how much ppl are playing with the recipes. A whole world of pastry and breads.

This was a surprise interview. Two of my worlds collide! Nili taught me how to make cheesecake in the instant pot and Steve came into my world as the chaffle guy but became so much more! I loved this. Looking forward to trying the hot dog bun when it arrives!!!

Thank you both for an outstanding interview. I loved the mention of Dr. Eric Westman. I found his Adapt Your Life Academy in January and took his Keto Made Simple class. It was life changing. Steve, maybe you could interview Dr. Westman, or Amy Berger, who coauthored a book with him, End Your Carb Confusion.
I’d like that a lot. I think very highly of him and his pragmatic approach to keto.
I really enjoy these interviews. I wasn't familiar with Nili, but I'm definitely going to check out her channel. I also discovered BlackTieKitchen, Highfalutinlowcarb and Modernist Pantry through this channel.

Great interview Steve Thanks. Nice technical touch allowing the guest to finish their sentences, paragraphs or thoughts. Makes for a much better interview. Kind of a lost art these days.

Thank you to both of you. I have to compliment you, Steve, on how professional you are in interviewing a person. Or maybe I should say you are just the opposite. As a viewer I watch interviews where the one asking the questions keeps interrupting the other person and overtalking them. So many times I want to just shout, "Shut up and listen!" I was pleasantly surprised at how well you listened. So thank you. It was really refreshing.
300 carbs! They told me that when I was first told I had type 2 diabetes 15 years ago. Cannot wrap my head around that now.

Nili is FABULOUS, so many great videos and her scientific tweaking of recipes...overall great content. You feel as if you’re still down having coffee with a really good friend. Just amazing! Her family is adorable, beautiful countryside,chickens, dog, farm life.
Love this. I caught on to Nili after I got my first Instant Pot years ago and was delighted when she ventured into Keto at about the same time I did. I'd love to see you guys do this as a regular collab, perhaps as a live stream? Very informative.
In the interview, she mentioned focusing on Instant Pot (IP) recipes for her cookbook and thus not really doing keto at the time. Since you've been a follower of hers, could you please tell me if she's done any Keto IP recipes?

This was a terrific interview. I too have spent many years on different diets, including the Stillman (really a long time ago when I was in high school), vegan, pescatarian, weight watchers, etc. I was doing well on keto but adding intermittent fasting gave me my sweet spot for weight loss and maintenance. I am very happy to have found Nili's channel here and will definitely be watching from now on. Thank you both for an enjoyable time.

My two favorite CZcamsrs in one video! Fantastic interview and I look forward to your collaboration.
Yep use Nili's Hawaiian roll recipe. I divide them into 8 buns in the deep bun pan. I use the fresh egg white version. My tweaks: 1 Tbsp cassava flour because that is what I have, 1 Tbsp allulose for browning and add 1/2 tsp pure monk fruit for the sugar, I do not use the flavoring. These are so great for hamburger buns. Thank you both for all that you do!!

Two of my favorite YT content providers in one video is amazing. Thanks for leaving in the mispronunciation of Indigo Nili's name, because now I don't feel so bad. I was going with "Indigo = blue, so Nili must be like the Nile" thought process. I appreciate this series of interviews, for sure. And what a great dichotomy that a couple of introverts would find happiness producing public appearances on video. We do live in fascinating times...

I've watched Nilli years ago when I got an instant pot. I still make soup and then add the noodles/pasta for my son....one may fall into my mouth every once in a while. She said regardless of soup just add noodles/pasta I think she referenced broccoli potato soup and how much her family loved it. I've done this with chicken and rice, beef vegatable, ham and beans....and anything else. For lunches, I do this for my non keto son. It's delicious wish it was keto.
Could not agree more Steve, it truly IS amazing what people feel comfortable spouting off with- it can be atrocious, & I, for one, am grateful that most of those asshats do get deleted/blocked ~or however folks choose to handle that on their channels. Not honoring them w/a response is, by far, the best response, imho.
This negative component is a strong deterrent for a lot of people I think. There are many who have great things to share w/the world, which is a potential loss~ especially when I think about how much we can & have learned from social media platforms. I appreciate you two touching on this subject, as I think it really helps to put it in perspective~ in particular coming from two fellow "introverts"🐱🏍Well done!
