    FOR THE CLASSIC
    - 2 pounds dark red beets
    - 1 large yellow onion, sliced
    - 1 1/2 cups white vinegar
    - 1 1/4 cups strained water from cooked beets (or fresh water)
    - 1 cup sugar
    - 3/4 teaspoon canning salt
    FOR THE FENNEL ANISE
    - 2 pounds mixture of white chioggia and yellow beets
    - 2 fennel bulbs, cleaned and sliced thinly
    - 1 small yellow onion
    - 1 1/2 cups champagne vinegar
    - 1 cup white vinegar
    - 2 cups water
    - 1 cup sugar
    - 3/4 teaspoon canning salt
    - 4 star anise
    - 1 tablespoon black peppercorns
    FOR THE SPICED ROSEMARY
    - 2 pounds dark red beets
    - 1 large yellow onion, thinly sliced
    - 2 cups red wine vinegar
    - 1 cup cider vinegar
    - 2 cups water
    - 1 cup sugar
    - 3/4 teaspoon salt
    - 4 small sprigs rosemary
    - 4 bay leaves
    ------------------------------
    INSTRUCTIONS
    For each recipe, leave the beet roots and two inches of stem attached. Cook in boiling water until tender or a knife inserted into the beets meets little resistance. Place larger beets at the bottom of the kettle and smaller at the top. As the beets become cooked, remove and cool. Under cool running water, trim the beet roots, stems and remove the skins.
    Slice the beets to preferred size for eating and what fits into jars.
    Prepare the brine by bringing vinegar (or vinegars), water, sugar and salt to a boil on the stove. Keep at a simmer while filling the prepared jars.
    Adding onion (and fennel for one recipe) can be to desired taste. Personally, I love onion and fennel and am liberal with both.
    For the fennel recipe, add one star anise and a few peppercorns to the top of the filled jar. For the spiced rosemary recipe, add one sprig rosemary and one bay leaf to each jar before filling.
    Once jars are filled, pour in simmering brine, leaving 1/4-inch of head space.
    Wipe jar rims with simmering water.
    Top with prepared lid and ring.
    Place in readied water bath for 10 minutes.
    After 10 minutes, remove from water bath and place on cooling rack for 24 hours.

    Hi. Although I grew up every other year on my grandparents farm (father was army and away a lot), I left the self sufficiency behind. My wife died 5 years ago, ALS, and I started to try to lose myself in cooking and then canning...going back to the basics. I love your site . Don't stop. Joe

    Last year I tried something very different and it was addicting! I have diabetes, so I wanted to do a beet pickle that wasn't sweet. You convinced me that adding onion to my beet pickles would be a great idea, so I did! My recipe was a dill garlic beet pickle with onion and the brine I used was half sour, 50 % white vinegar and then 50 % beet water (your idea - thank you!) with the 1 tsp salt/quart jar along with the 2 cloves garlic and 2 dill heads. THESE WERE AMAZING! The earthy taste of the beets with the tang of the brine and the flavor of the onion, dill and garlic married into a real treat. I cubed a jar so I could add them to an arugula/goat cheese salad I can't wait to make these again because we've been out for months now! My hubby planted a whole row of beets just for these beet pickles!

    I love love love pickled beets. A friend gave me a jar and her recipe. It is amazing.
    In the brine it has 1tbs mustard seed. 1tsp allspice. 1tsp cloves as 3 sticks of cinnamon.
    It has onion also.
    So good give it a try.

I love beets but I don't like fennel, so will not use it in my beets, I did can some beets not to long ago, and they turned out great, will try your recipes with the onion, love the look of those lighter coloured beets they are so pretty in the jars! I absolutely love the classic recipe. I use Splenda in place of the sugar because I have someone in the house who is a diabetic. Splenda works great with your recipe. Great job!     I love beets! However, always got it from a jar! I tried cooking it years ago but for whatever reason didn’t turn out great!
    With this shitty Covid, I’ve gotten into trying to grow and cooking it fresh! Thanks! Gonna try these! I also love onions!!! Lots of onions ... and garlic !

    Well finally! Someone smartened up enough to use the beet water! The water is also wonderful when cooled, added to carbonated water, with a bit of sugar, and is the perfect soda pop!

      shashakeeleh do a google search for Faux Red Raspberry jelly. You use the red beet juice and raspberry jello....tastes like raspberry jelly. It's an Amish recipe and uses sure jell just like any jelly recipe. I've had to make several batches, it's so good. I freeze excess beet juice for this purpose.

    I love the beet water in fact I always save some and drink it as a beverage. Providing you have cleaned them beforehand why not take advantage of all those healthy vitamins! I love your delivery, your vids are very clear and easy to follow. Love the fennel and star anise version, yum!

    I did your classic recipe last year but used ACV instead of regular and it was awesome! My beets are ready to harvest and I am going to do this again. What do you think of cooking the beets in the sous vide instead of boiling them?? There still will be some beet water in the bag after I think.....

    Beets are so delicious, I hated them when I was a kid because they tasted like dirt to me. I love to boil them fresh and dice em with some butter and salt and I figured out a way to make sure that they don't have that dirt flavor at all, first I scrub them really well and then after they start boiling and I see the water turn dark I dump it out fill it with fresh water boil again and I repeat this at least 3 times but if I am cooking more than just a few I do it a minimum of 5 times that way what ever dirt that I couldn't scrub off and comes out into the water doesn't cook into the flesh of the beet and then you are left with this soft super naturally sweet beet that doesn't taste funky at ALL!!!

    Kaleb, I tried the beets with fennel. How long do I have to wait to try them? I know they need to soak up the flavors but it is hard to wait.

    I did 28 quarts canned beets yesterday. I blanched the tops for 2 mins than squished them into balls and froze the balls. The balls can be thawed and used in stir fries.

    Just want to let you know... the little comment about the jars sealing fast was helpful because i just canned some and yeah...almost immediate seals. it almost made me worry because i'm new to canning and normally it's taken longer! so again, thanks for those extra little comments. helpful.

    I noticed you cut the greens off in the garden. I recently started trying foods I despised as a kid, and beets were one of them. Do you do anything with the greens? I have seen other people use them, and a gardener I also follow on youtube compared them to Swiss Chard

      I like to wash the beet greens , store them in the fridge. When I get ready to make a salad, I mix the beet greens with my lettuce. Makes for an amazing salad. I use the smaller leaves though. Give it a try, I'll bet you'll love it as I do😃!

    The Ball Guide to Preserving says to use a pressure canning method for canning beets. Why is you water bath method ok to use? I’m still new to canning. Thanks

      If you are canning beets with just water you have to pressure can them ( beets are a low acid vegetable) If you are pickling beets you are adding acid (vinegar) to the brine therefore now you have put these beets into a high acid category and can be watered bath. Just make sure you time the processing accordingly. I hope this information helps. P.S. all low acid vegetables, meats, fish, etc must be pressure canned. You can check this out in the ball canning book or any other canning books. Have fun and enjoy the fruits of you labor.

    You cut off the most nutritious part of the beet and left it in the garden! Keep and cook the beet greens! More nutritious than Kale and the stems cans be cooked with butter, garlic, salt in a skillet until done as you’d like, or cut into 2 inch pieces with garlic sprinkle with lemon pepper, salt and put in toaster oven at 450 degrees and cook until toasty! Also can freeze those greens after cooking!

    Please help Im new and first timer doing this. I pickled my beets and put them in the jars. I fell asleep. so they were left out over night. I did a water bath today and put them on a towel to cool now. Are they gonnna be ok? should I put in the fried or leave out or just throw them out :( I was so tired that I fell asleep.

      +Sara M. I don't sorry! Vinegar is needed to create a pickled effect and to preserve it. You could ferment beets instead with salt naturally, that would be different but delicious.

    I noticed you use your hands a lot to put the beets and unions in het mason jars. Also, you don't use a pressure canner. I have my doubts if this is prepared 'sterile' enough. Also, botulism is still quite possible too. I know chances are low, but this methods certainly doesn't rule it out right?

      The vinegar is sort of an antibiotic agent. I made them for about 30 years and never had spoilage and they are delicious. Great addition to many meals.

    Just wanted to add that the cooking liquid and the greens have so many mineral nutrients that its such a waste to dump them.

    Ok, I'm just learning about canning and everything I've read says you shouldn't can on a glass stove top. Yours looks to be glass. That's what I have so is it ok? I was going to get a electric pressure canner because of this.

      +Charlie Rose well I have heard that but have also heard other things. I do have a glass too and have been told as long as the cooker had a smooth and completely flat bottom it is ok to use. And they make pressure canners specifically for glass top ovens also!

    Reusing the boiling water could be introducing bacteria. I would advise against returned that water into the process.
