How to Can Bread and Butter Pickles

    INGREDIENTS⁠

    - 1 gallon sliced cucumbers⁠
    - 3 medium onions, sliced⁠
    - 1/2 cup canning salt⁠

    For the brine:⁠

    - 3 cups vinegar⁠
    - 1 cup water⁠
    - 1 cup sugar⁠
    - 1 1/2 tsp turmeric⁠
    - 1 1/2 tsp whole cloves⁠
    - 2 tsp celery seed⁠
    - 2 tsp mustard seed⁠
    - 1/2 tsp red pepper flakes⁠
    - 2 tsp canning salt⁠

    INSTRUCTIONS⁠

    - In a large bowl, combine the sliced cucumbers, onion, and 1/2 cup salt. Mix to incorporate and pour into a large colander. Set inside a large bowl for 3 hours to drain excess water.⁠

    - After 3 hours, discard the drained liquid. Rinse the cucumbers and onion well and allow to drain.⁠

    - Prepare the water bath, jars, lids, and rings.⁠

    - In a 4-quart kettle, combine the vinegar, water, sugar, turmeric, cloves, celery seed, mustard seed, red pepper flakes, and 2 tsp salt. Stir to dissolve the sugar and bring to a boil. Reduce to a simmer while preparing the cucumbers in jars.⁠

    - Pack jars with rinsed and drained cucumbers and onions, leaving 1/2-inch headspace. Pour brine over prepared cucumbers and onions, still leaving that 1/2-inch headspace. Wipe the rims of the jars with a clean cloth to remove any drips. Place on lids and rings, tightening to fingertip tightness.⁠

    - Place jars in the boiling water bath. Bring back to a boil and boil for 10 minutes. Check with the USDA canning guide and adjust the process time for altitude.⁠

    - Remove from the water bath and cool for 12-24 hours. Remove rings to ensure a good seal and store for up to one year.

    You might not know this, during the Great Depression is when this pickle became popular, it was served on bread with butter as a sandwich or in a side dish with bread and butter that was the meal and I can tell you it is delicious!

    Such wonderful memories of my Mom and Grandma. Both are gone, but the memories linger as well as the amazing taste. They both always served dinner with bead and butter.

    These are my favorite type of pickles. I've ordered a bushel of cucumber to make this next week. I love taking a couple of jars of bread and butter pickles and dehydrating them the turn out like gummies. My husband thought I was crazy when I tried it last year. They didn't last long. The are so addictive!

    I made this recipe last year for a dozen jars. Everyone raved about them but "I couldn't find your post anymore" So, to today, small pickles were on sale at the market and I bought 4 quarts to make dills. I tried one last time for B&B's. Lo and behold your face was on the second video I checked. I'm making at least 30 -40 jars this year. They will be gifts for special friends alond with jars of a few of your other pickles. I'm trusting that they will be awesome like this one. Love you and how casually show us how easy itis do.

    I have a big stock pot that I use for canning. So, I use a cooling rack for cakes and put that in the bottom to separate the jars from the bottom of the pot. Super easy, super simple and super cheap!

    From what I recall your bread & butter pickles recipe is the same as my mother's. Now that I've seen your video I do believe I can manage to can some bread & butter pickles, which are my favorite pickles...albeit I'll do the canning next year when I will purposely plant cucumbers. Thank you so much for posting this video and your other videos where you teach us to be free and secure and have fun adventures in cooking and such.

    I know I watched your video last year. I’m growing cucumbers & already made dill pickles, but want to do bread & butter pickles next. Can’t remember if I used your recipe or another, but since everything I’ve made from your recipes had been awesome, I’ll stick with this one. Lol

    I just found your page and instantly fell in love. I am just starting my canning journey so I am excited to try some of your recipes. My husband loves Bread & Butter Pickle Spears. I have searched the stores but they are almost impossible to find. Everyone wants to make chips not spears. I am definitely going to try this recipe.

    We always put onion in our bread and butter pickles. I love to add a little heat and add a tsp red pepper flakes…yumm

      Oh yes... so very good with the heat. If I have good cayenne or cowhorn growing I'll slit a fresh pepper and wiggle it into the cucumber onion mixture, too. Mmmmm homemade Wickles.

    Nice video! I’m getting ready to make some bread and butter pickles. Have you tried using pickle crisp in any of your canning? I heard it’s supposed to keep your pickles from getting soggy?

    I love all your videos...but if you want a crunchy pickle that will still be crunchy a year later can using the low temp pasteurization method...I use a sous vide for this, and wow, no more soggy pickles

      I just found the low temp pasturazation method and I'm about to try it. I ran a test run on my electric stove in an attempt to find the sweet spot to keep the 180 to 185 degree window. I'm happy to see that someone else is happy with the results. Thank You.

    Question, you put the jars right into boiling water and the pickles were raw, not hot. I just tried that an hour ago and one of the jars broke as soon as it went in there. I proceeded anyways and it took the pot about another 15 minutes to come back up to boiling… so then I processed another 15 minutes, so now I’m worried that they are way over cooked. No one on CZcams talks about this timing glitch! Can you explain?

      The brine should be hot when you pour into the jars. Could it be yours had cooled down too much?
