How absolutely marvelous to find you on CZcams. I remember watching you on TV many years ago and always considered you one of the best chefs I have ever seen. Thank you!!!
Thank you so much! I am Italian and I could not find any videos in my language in which they explain well how to debon the quail. Your video helped me a lot.
Don't underestimate Jacques Pepin's handyworks....It looks so easy when he does it, but when i did it tonight for the first time in my life, it took me about 1/2 hour to debone ONE quail..!!! And how much did he take to do it? 5, 6 minutes? He is THE professional...Did i mention also that my deboned quail looked like a deformed, shapeless ball of carcass?
He stuffed the filets up the bird's butt, lol. Seriously though, I need to try this with chicken. I love his programs, he teaches technique, not just recipes. His voice is so relaxing, and I love his accent. :)
Typically when you butcher, you keep a separate bin of all entrails and leftover parts. It is sort of like a "throwaway" stock bin. We throw all of it into a bucket and then throw into a pot later.
He does modify the technique for Quail compared to chicken. He does not debone the drum stick on the quail. Perhaps too small a bird? I have some plump Bobwhite males ready for the chop so will see how it goes!😊👍🏻
He sure makes it look easy! Quail in my opinion is the perfect amount for a full grown human being to be satisfied and im 210 6 ft 4... ill be good with that and some starch
Or you could eat a half a cup of oatmeal and a head of broccoli That's more than your recommended daily dose of protien and calcium Don't get me wrong I'm no vegan I'm eating bacon and eggs typing this
That time i did 6 quails because the package i bought has 6. And the time i spent for it, i dont think i will do it again...you do it for me next time or i just buy it deboned!!!
MESSR. Do not debone quail. Break leg bone with back of knife, then stuff with grape or other. Every Best Wish to Most Excellent MESSR. Pepin and his family!
I have watched your cooking program for 4 decades. Thank you for your wonderful recipes and great tips.
Pepin is the most pleasant, capable, experienced, and knowledgeable food expert this age has ever produced.
Thank you very much, This not only made thanksgiving dinner seniors friendly, but elevated the stuffed quail... mercy

were you speaking in a french accent? That might be the trick
5 to 6 mins with explanation. But I think he once said it should be less than a minute to debone a bird.
Debone 100 quails and you’ll get there
Not to mention he went slow to show how to do it
He actually takes about 40 seconds in real life. I've seen him when he isn't going super slow and explaining everything.
I love him!
Humble but so incredibly talented!
👍🏻
This video helped me with my exam today. Thank u
I have ALWAYS wondered how that was done! Merci Bien!
Idk why but I read the title as "How to become a quail" 😂
You momentarily drifted into a parallel universe where people can have fowl-change operations.
Magnifique!! Un Chef d'Oeuvre !!! Je dois essayer!
Great Video Chef,,,,,,,,,,,perfectly explained - no fuss - no drama,,, merci ! et Bon Apetit !
Amazing handy work! Thanks for posting.
Always great!
Raise quail and this is exactly what I needed.
Great Video! Easy to Follow! Thanks! Going to try with a chicken shortly for supper tonight.
lol... "put back the filet which belongs to this little bird"
The triple OG put respek on the quail's good name.
@@wilseph1 lmaooo
@@venomf0 Real talk. This is a good reminder. Must rewatch the quail get deboned.
Medical students would be happy to see this joint cutting tutorial....
I love this man!!
"It looks a bit of a mess" He said..."You should see mine" I say
He had me going there for a second!
The man is a genius.

Deboning chicken is much more of a mess than quail
That's sweet! I gotta try that.
chef..... I think australian quail .... ok.... amazing display..... and I so thank you for speaking english
I loved it, so simple need some efforts
Ahh..a legend
This is art
💯
Would this technique work for a duck as well?
Jacques Pépin is a God among lowly mortals.
What do they taste like
Thanks, Mister.!
I learn a good method form you; since , I am the cooker at home.Deboning a bird is a challenge .
Many many thanks !
If you are the cooker, am I to assume your wife is the micro-wave oven?
That is the one of bad side effects of equal’s gender.
Ben Tre cooker = appliance to cook... stove, gas or electric or wood/coal fired. cook = person who cooks.
Roeland Peeters
Great thank for your grammar; I today learn a good lesson.
It is very easy to violate a very small mistake!
It is indeed ;) No trolling intended. It's just that I am an English teacher :D
The wishbone really was a pain in the neck....get it? Do ya get it?? Hahahahhahaha
Wow
Wow insane.
you put it back togeter but i dont think it will fly ( oh well back to the old drawing board...)
"This i will put in the stock" *chucks in the bin under the table*

+TheWilde but it's funner to picture him just gingerly tossing it on the floor and walking away.
I can seem to get the rib cage and back to come off clean. I need more practice

Yes, you are right. He has modified it compared to chicken deboning which is also a masterpiece like this quail.
Challenge accepted.

Don't get me wrong
I'm no vegan
I'm eating bacon and eggs typing this
*moist inhale*
Then again. that was your first time. make 12 and i can guarantee you that you bring up the speed real quick, :)
For people with healthy teeth, deboning is not required. Quail bones are delicate, crunchy and delicious.
I'm sure he can do it a lot faster if he weren't demonstrating for us newbs!
2:50 min it’s still alive!!!!
Special ranch
cameraman zooms out at the worst times
That time i did 6 quails because the package i bought has 6. And the time i spent for it, i dont think i will do it again...you do it for me next time or i just buy it deboned!!!
I want to eat some quails during one of these days!
Pan fry that thang once you do. Glorious.
Jacques is showing, which to an advanced chef is difficult to understand
Do you know wath the bulgarian chef says-i can do it better...........do you want to see......?
i hate it when he's drooling
Don't watch if you hate it.
and i hate you even when you're not.
love the sound of saliva ..slurp slurp 😆😜

Keep the close up ffs
How do we learn if the camera is far ???
😡🤬
Boneless quail ranch 😂😂😂😂
Jacques got mad jokes!
52 quails downvoted this video
good , but i fell asleep.
Love ya Jacques but too much work
the thumbnail for this video kind of reminds me of goatse
This has more views than live quail videos
Sad
Well, that's because no one wants to eat them when they are live.
Poor quail....
poor quail

Tasty woodstocks ...
