    I love how he pointed out what they did wrong precooking, but not in a rude way. Rather he used it as a teaching moment for all of us. Chef Pepin is amazing.

    A legend. If you watch his older cooking shows, you can see he was years ahead of his time on many subjects, from cooking technique to nutrition and health. He just knows cooking in and out. It's no wonder Julia chose him to work with over other chefs on a cooking series as well.

    I love watching Jacques. Turkey won't pass my lips, i drove past a turkey farm long ago on a hot summer day, windows down. The stench was so thick in the air I could taste it. That experience is in every bite of turkey even 40 years on! My contribution to the High and Holy Feast of the Great and Dreadful Fowl is smoked ham and a glaze I make from scratch. There is always left over turkey, but never any of my ham to take home. But eat more turkey! More ham for me!

    THE Master!! Others may be trained, and others may be damned good. But the true technician, teacher, mentor and friend to all of us is Jacques Pepin. No other chef can possibly compare in skill and/or experience.

    Still the man i met him in the kitchen i was working at in 1977 he was watching us cook genoise with a sterno can under a kitchen aid bowl he said to me one day you will be chef i never forgot that 42 years ago

    My wife and I actually shed tears watching the last episode of his last series ever on PBS. We have both learned and love this great man. Having his daughter and granddaughter with him on TV is pure gold.

    My father and I always pulled the wishbone. He would save it for me and it was out "thing" to do. It wasn't until I was all grown up that I caught on that I was always the winner. He would change the rules each time so I would get my wish.

    Great video. Your turkey also looked amazing.
    Pepin reminds me so much of my family. Especially my grandmother. She passed away nearly 2 years ago. Nearly 98. French Canadian and just had a natural way with food. Mother of 11 children and still could make a batch of 12 loaves of the best bread ever at 93 years old.
    Pepin is so normal to me. I wish I'd had more time with my grandmother.

    I didn't know about taking the wishbone out of the turkey first, but will remember it when I cook the Thanksgiving Turkey. I have only cut up part of one turkey and have to get ready for the turkey I am going to bake in my counter top roaster. I like the way Jacques Pepin carved up the turkey and the knife he used have to be very sharp also.

    Jacques is the best , bar none. Awesome video. I've seen him remove the thigh bone out raw, then fill the cavity with stuffing, then wrap the thigh with foil. Then bake it. The sinew trick is awesome on the legs.

    Master class. There is a video in which Chef Pepin demonstrate the techniques in a chicken. Great video! Plus he also went over chicken trussing technique. His videos are a must for any cook.

    My family fights for the skin while the bird is being carved!! Fine times as all watch the "show". Chef Jacques is a true cultural icon and master at his craft. We should cherish his talents and that he loves to show us all how its done.
