Considering what a foodie I consider myself and a fan of "My Dinner with Andre'," I still do not know why I have never tried quail. Looks delicious.

I'm preparing this recipe following your video but without using the bread/milk part and the cheese as I believe it will get dry and salty. I substituted the 'scallions' with fresh locally harvested spring onions and placed also fresh leek into the stuffing.
The sausage is a Maltese one which we call 'Zalzett Malti'. It is basically a pork sausage seasoned with salt, garlic, parsley, crushed black peppercorns, and crushed coriander seeds. Even though it is a pork sausage, it is consumed raw by Maltese people. I never knew that the Italians also managed to copy this sausage.

Dove, like Squab, is a bit too gamey for me. The Quail is much like Cornish Hen.

I wonder would this same recipe work with Cornish game hens. Just asking.
I'm sure it would. You might have to change the time it's in the oven, but if you cook it 'till it's done it'll be fine!
